BAKED HAM, EGG AND CHEESE BREAKFAST SANDWICHES FOR A CROWD

Baked Ham, Egg and Cheese Breakfast Sandwiches for a Crowd image

The genius move behind these easy sandwiches is cooking enough scrambled eggs for twelve on a baking sheet; no stovetop required. Top with sliced cheese and sandwich between pillowy pull-apart rolls, then let the oven do the rest of the work for you!

Provided by Food Network Kitchen

Time 25m

Yield 12 sandwiches

Number Of Ingredients 8

10 large eggs
4 scallions, finely chopped (about 3/4 cup)
Kosher salt
One 12-pack pull-apart dinner rolls
2 tablespoons unsalted butter, at room temperature
6 slices American cheese (4 ounces)
4 slices deli ham, finely chopped (4 ounces)
Hot sauce, such as Tabasco, for serving

Steps:

  • Position a rack in the lower third of the oven. Preheat the oven to 350 degrees.
  • Place two 2-foot-long pieces of nonstick aluminum foil next to each other so the long sides are just touching. Pinch the edges together and then fold them over several times to seal and form one large piece of foil. Line a rimmed baking sheet with the foil and set aside.
  • Crack the eggs into a large bowl and whisk well. Add the scallions, 1 teaspoon salt and 2 tablespoons water and whisk to combine.
  • Split the whole pack of attached dinner rolls in half horizontally using a serrated knife. Set aside.
  • Add 1 tablespoon of butter to the prepared baking sheet and place in the oven to melt, about 3 minutes. Spread the butter all over the foil with a pastry brush and then pour in the egg mixture. Place the attached roll halves cut-side down and side by side on top of the eggs and return to the oven. Bake until the eggs are completely set, about 10 minutes.
  • Meanwhile, butter another baking sheet with the remaining 1 tablespoon butter. Using heatproof mitts, top the rolls with this baking sheet and invert the whole thing. Remove the top baking sheet and peel back the foil. Top half the eggs with the cheese and the other half with the ham. Bake until the cheese is melted, about 5 minutes.
  • Using a large metal hamburger spatula, flip the bottom half of the rolls onto the other half, so the rolls are top-side up. Cut or pull the rolls apart. Serve with hot sauce.

Time 1h

Yield 6

Number Of Ingredients 7

½ cup milk
4 ounces cream cheese, softened
8 eggs
salt and pepper to taste
2 (8 ounce) packages refrigerated crescent roll dough
4 ounces cooked ham, thinly sliced
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat milk and cream cheese together until smooth. Mix in eggs, and season with salt and pepper. Heat a lightly oiled skillet over medium high heat and cook egg mixture until eggs are almost set.
  • Arrange the crescent rolls from one package into a rectangle shape on top of a lightly greased cookie sheet. Place rolls from remaining package along the edges of the two long sides of the rectangle, with the broad half of the rolls on top of the first layer of rolls, and the pointed ends extending over the sides of the pan.
  • Arrange the ham in a layer down the center of the dough. Spoon the cooked egg mixture on top of the ham and then sprinkle the cheddar cheese on top of the eggs. Bring the corners of the rolls together over the cheese to form a 'braid' shape.
  • Bake in preheated oven for 25 to 30 minutes, until cheese is melted and rolls are golden brown.

SHEET-PAN HAM AND EGG HASH

Sheet-Pan Ham and Egg Hash image

Soft eggs nestled into a bed of crispy hash browns and surrounded by succulent chunks of ham: If this sounds like a breakfast you could get behind-meet your weekend plan! This recipe is all about the perfectly cooked hash browns-crispy on the outside (but not overdone) and creamy on the inside (but not underdone)-which form the base of this all-in-one meal. To pull it off, you'll need your sheet pan-spreading out your hash browns is the key to cooking them perfectly-and a couple of no-nonsense strategies. Tossing hash browns with oil and aromatics ups their flavor and ensures they brown nicely. Stirring halfway through the bake time helps them to bake evenly and gives you the opportunity to add the ham. Because adding ingredients gradually is the key to successful sheet-pan cooking, you'll add the quick-cooking eggs at the last minute. When everything is cooked up just right and you only have one pan to wash, you'll see why we created this sheet-pan hash recipe.

BAKED HAM IN A BLANKET

Baked Ham in a Blanket image

My Mom prepared ham using this recipe for holidays or special occasions, and it always made the house smell wonderful. I remember watching her 'crack' the blanket off the ham, which both flavored it and kept it extremely moist. I've eaten it many times, but haven't made it myself yet.

Provided by TigerJo

Categories     Ham

Time 3h25m

Yield 8 serving(s)

Number Of Ingredients 8

2 cups flour
1/2 cup brown sugar
1 -3 teaspoon ground cloves (to taste)
1 tablespoon cinnamon
1 tablespoon ground mustard
1/2 teaspoon fresh ground black pepper
cider or apple juice
5 -6 lbs boneless ham

Steps:

  • Preheat oven to 350F; Make a spice dough, combining the flour, sugar, and spices in a large mixing bowl; add enough water or cider to make a stiff dough; roll until it is 1/4" thick and forms a 10x12" rectangle.
  • Place the ham, fat side up, in a foil-lined open roasting pan; cover top and sides of ham with "blanket" of dough; bake at 350F for 3 hours (tent with foil if crust becomes too brown).
  • Remove ham; discard "blanket" crust; let rest for 15 minutes. Slice ham; serve warm or cold.
