I work in an environment where I don't often get a lunch break, and while soups are an easy go to lunch...sometimes I need something I don't have to heat at all! With these I have something I can take and eat in between customers or phone calls, which is perfect since I don't have time to sit down to eat! I used turkey and ham, and totally cheated by purchasing the type that come with reusable containers which I then stored the pinwheels in. They were 10 oz packages. Feel free to use any combination of lunch meat that makes you happy! You could also use different flavors of cheese sticks too!

10 ounces sliced deli peppered turkey breast
10 ounces sliced deli honey-roasted ham
16 mozzarella string cheese

Steps:

  • Unwrap your cheese sticks. Roll your mozzarella stick in the first lunch meat.
  • 2. Roll into the second type of lunch meat. If you don't like the idea of mixing your meats, opt for a second piece of your first choice.
  • I almost always get thin sliced meat, but if you didn't then you might only need the first layer.
  • Cut into pieces. the end pieces can be hard to make sit flat in the container and sometimes didn't get both layers of meat. We eat these as we're cutting, but you could totally have a few more portions if you didn't do that.
  • Serve. (or refrigerate for later!).

1 cup celery chopped
3/4 cup onion chopped
2 tablespoons butter or margarine
1 cup turkey each chopped cooked and ham
1/4 cup water
2 tablespoons parsley chopped
1/4 teaspoon salt
1/4 teaspoon nutmeg ground
1 egg beaten
12 frozen phyllo pastry leaves (about 16 x 12 inches each), thawed
3/4 cup butter melted
Mushroom Cheese Sauce

Steps:

  • Two to 3 hours before serving:In a covered 10-inch skillet over medium heat, cook celery and onion in butter or margarine for 5 to 7 minutes or until tender but not browned set aside.In a medium bowl, combine turkey, ham, water, parsley, salt and nutmeg stir into celery-onion mixture. Stirring constantly, cook until no liquid remains. Remove from heat. Stir in egg set aside.Preheat oven to 350°. Grease a 15 1/2 x 10 1/2 x 1-inch jelly roll pan. Cover pastry leaves with a damp towel to prevent drying out. Place 2 leaves on a second damp towel brush with butter. Place another leaf on top brush with butter. Repeat until 6 leaves have been stacked. Top with half of the turkey-ham mixture,spreading to within 1 inch of all edges. Fold long edges over filling. Carefully roll as for a jelly roll, starting from short side. Place seam-side down on jelly roll pan. Repeat to make a second roll. Brush rolls with remaining butter. With a sharp knife, score each roll to mark eight slices. Bake for 40 minutes or until rolls are browned and crisp.About 15 minutes before serving:If necessary, reheat rolls in a preheated 300° oven and reheat sauce over low heat. Slice rolls where scored. Pour sauce into a large, shallow serving dish and arrange rolls on top.

2 slices honey wheat bread
1 tablespoons mayonnaise
2 units lettuce leaves
2 slices ham
2 slices turkey
2 slices kraft american singles

Steps:

  • Roll out the 2 slices of bread with a rolling pin or drinking glass. Spread 1/2 tablespoon of dressing on each slice of bread. Layer each slice with lettuce, one slice of each meat, and cheese.
  • Roll each slice tightly. Secure with toothpicks. Slice the roll into pinwheels.
  • Remove the toothpicks and wrap the pinwheels in plastic or foil. Refrigerate until ready to serve.
