3/4 cup chicken broth
1 cup uncooked couscous
1 can (20 ounces) pineapple tidbits, drained
1 can (4 ounces) chopped green chilies, drained
1/4 cup chopped pecans, toasted
3 green onions, chopped
2 tablespoons olive oil
1 tablespoon minced fresh mint
1 garlic clove, minced
4-1/2 cups baby spinach

Steps:

  • In a small saucepan, bring broth to a boil. Stir in couscous. Cover and remove from the heat; let stand for 5 minutes. Fluff with a fork. In a large bowl, combine the couscous, pineapple, chilies, pecans, onions, oil, mint and garlic; toss to coat. Refrigerate until chilled. Serve over spinach.

1 cup mayonnaise
3 tablespoons lime juice

1 ½ teaspoons dried thyme

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain, rinse under cool water, and drain again.
  • Meanwhile, combine mayonnaise, lime juice, soy sauce, vegetable oil, brown sugar, parsley, vinegar, allspice, thyme, marjoram, ginger, garlic powder, salt, nutmeg, pepper, and cinnamon for jerk sauce in a saucepan over medium heat. Bring to a boil. Remove from the heat and set aside to cool.

1/4 lb swiss cheese, shredded (divided into four portions)
2 slices cooked ham
1/2 cup crushed pineapple, well drained (divided into 2 portions)

  • Prepare a large skillet or cast-iron skillet.
  • Place two slices of bread on a work surface.

1 fresh pineapple, leave outer skin on
2 cups cooked ham, cut into chunks
6 cherry tomatoes, halved
1 cup celery, sliced
1/4 cup green onion, sliced
1/2 cup sour cream
1/2 teaspoon dill weed

1/4 teaspoon salt
