- Heat the butter in a skillet over medium heat. Stir in the garlic and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the cabbage; cook and stir until the cabbage has softened, about 20 minutes.
- While the cabbage is cooking, fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the gnocchi and return to a boil. Cook until the gnocchi float to the top, about 3 minutes; drain.
- Stir the cooked gnocchi and ham into the cabbage and heat through. Season with salt and black pepper to taste.

- combine flour and butter. Make a smooth sauce over medium heat. Take off heat and cool slightly. Meanwhile, beat the egg whites until stiff peaks form.

GREEN NOODLES AND HAM

- Bring a large pot of water to a boil then add salt, a generous grab from your salt dish, to season up the pasta as it cooks. Carefully add pasta to water and stir then cook to al dente or until pasta is tender but it still has a bite to it in the center - in other words, do not cook it until it is mushy.
- Cut ham into thin, short ribbon-like pieces and separate them into a loose pile. Kids not so good with knives can use kitchen scissors to cut the ham up.
- Preheat a large skillet over medium heat. Add butter to the pan and melt it. Add 1 cup cream and warm it up a minute. Add about a cup of cheese, 4 big handfuls or so, and stir constantly for another minute then season the sauce with nutmeg (your SECRET ingredient) and pepper. Taste and add a little salt, if necessary.
- Turn off heat under sauce and add the peas to it. They will warm through in no time. Next, drain the pasta. Kids should have Grown Helpers drain pasta for them. Toss pasta with sauce in the skillet and use tongs to help you pull pasta through sauce until it is coated evenly. Sprinkle in the ham and toss the pasta again to combine it. You can even add a little more cheese, if you say so.
- Wow! Green noodles are even yummier than white ones when you add in the ham and cheese and peas! Yum-o!
CROCK POT HAM AND NOODLES
My family is not big on ham but I love it. This is a good recipe to make and freeze the left overs into single serve portions. I also added a small amount of chopped onions and some black pepper and extra cheese because I love cheese =)

HAM SOUP WITH BLACK-EYED PEAS AND RAMEN NOODLES
I clipped this recipe out of the Atlanta Journal/Constitution. This inventive soup is truly an East meets South combination. If desired, shred the meat from the ham hocks (if there is any after cooking) and add to the soup. The noodles expand and take on a lot of the broth, so if not serving the soup right away, wait before adding the noodles. If you want a more brothy soup, just add 1 packet of noodles. The spice packets with the ramen are not used.

- In a stockpot, cover ham hocks with water (about 7 cups). Bring to a boil, reduce heat and simmer for 1 1/2 to 2 hours. Cool and refrigerate until fat hardens on top, 2 to 3 hours (you can leave the hocks in the liquid). Skim fat and return broth to a stockpot and bring to a boil. Season to taste with salt and pepper and remove from heat.
- In a separate stockpot over medium-high heat, add oil. When heated, add collard greens, 2/3 of the green onions and all the garlic. Stir-fry for 2 minutes. Don't overcook; the collards should still be bright green.
- Pour hot ham broth (about 6 cups) over collards, add ramen noodles and beans and bring to a boil. Cook until the noodles are soft, 2 to 3 minutes. Garnish with reserved green onion and cilantro.

- Cook egg noodles according to package directions. Drain and set aside.
- While noodles are cooking roughly chop ham and drain green beans.
- Then combine soup, sour cream, Old Bay hot sauce, black pepper and seasoning salt in a medium mixing bowl, set aside.
- In pot used to cook noodles, melt butter over medium heat. Add ham and heat through while stirring. Add green beans and dried garlic and heat through while stirring. Return noodles to pot and stir well to combine.
- Add cream soup mixture and stir well to combine and heat through. Remove from heat and serve.
- Optional, top each serving with french fried onions.

This is a spin on another recipe i found that used ramen noodles. I substituted bullion for the ramen seasoning and spaghetti for the noodles and I think it is even better.
