These cunning little ham and cheese cups make for an easy breakfast or a fun brunch treat-you can even prep this recipe, easy as they are, the night before.

6 thin slices of ham
6 tablespoons cheddar cheese (grated)
2 green onions
6 eggs
1 tablespoon milk
Cooking oil spray

Steps:

  • Gather the ingredients.
  • Preheat an oven to 350 F.
  • Spray a muffin pan (6 tins) with cooking oil or grease with butter. Ideally, use a nonstick muffin pan. Line each tin with a piece of ham. Let the center of each piece of ham drop into the bottom of the tin, then press it down and along the edges, letting the ham fold to fit the tin. Put 1 tablespoon of cheese in the bottom of each ham-lined tin. Set aside.
  • Trim the green onions and finely chop the white and light green parts. Discard the dark green tops or reserve for another use. Divide the chopped green onion evenly between the 6 tins.
  • Crack the eggs into a medium bowl. Whisk the eggs until smooth, with no puddles of yolks or strings of whites. Add the milk and whisk to combine.
  • Divide the egg mixture evenly between the 6 tins. Pour the mixture gently into the tins. As you pour, some of the egg mixture may flow in between the tin and the ham-don't worry, that's why you've sprayed the tin with oil!
  • Bake until the egg mixture puffs slightly and is set, about 20 minutes.
  • Let the ham and egg cups sit a few minutes before removing them from the tins. Use a spoon or small spatula to gently remove the ham and egg cups from the tins.
  • Serve immediately (although they aren't bad just warm or even at room temperature). Enjoy!

2 (1/4 inch thick) slices ham
2 large eggs

Steps:

  • Heat olive oil in a skillet over medium-high heat. Toss in ham and cook for 1 to 2 minutes.
  • Flip ham and carefully crack an egg on top of each slice. Reduce heat to medium-low, cover, and cook until ham is caramelized, egg whites are just set, and yolks are soft, 2 1/2 to 3 minutes.

The addition takes just a few extra minutes and adds an incredible layer to a dish that's already deeply lovable. Make sure to skip preground Parmesan here: You'll want to shred the cheese yourself on the largest holes of your grater. And use a nonstick skillet or well-seasoned cast-iron pan to fry the eggs. They may never come off a regular pan. Eat them alone, lay them over asparagus, or use them to top a sharp, lemony salad. When something's this perfect, it's hard to go wrong however you serve it.

1 teaspoon extra-virgin olive oil
1/2 cup coarsely grated (not ground) Parmesan
4 eggs
Kosher salt and black pepper

Steps:

  • Brush 1 teaspoon olive oil into a thin layer on the bottom of a 10-inch nonstick or well-seasoned cast-iron skillet and place over medium heat. Sprinkle 1/2 cup Parmesan in an even layer covering the bottom of the pan. Cook for 2 minutes until cheese begins to melt.
  • Crack eggs onto cheese, then cover pan and cook until eggs are starting to set but are not cooked through, 2 to 3 minutes. Uncover and turn heat to medium-high to finish cooking eggs for another 1 to 2 minutes, until edges are crisp and golden brown. Make sure the cheese doesn't get too brown; if it goes past light golden, turn down heat. To serve, season eggs with salt and pepper to taste.

1 cup fully cooked ham, cut into small pieces
2 cups shredded cheese {whatever you like best}
¼ cup Parmesan Cheese
1 tablespoon flour
¼ teaspoon Greek Seasoning
¼ teaspoon pepper, divided in half
¼ cup butter, melted
12 eggs
1 cup milk, half-and-half or whipping cream
½ tablespoon Dijon mustard

Steps:

  • Preheat oven to 350 degrees and lightly spray a 13x9 baking dish with cooking spray
  • Cut ham and add to large bowl
  • Add shredded cheese, Parmesan cheese, flour, Greek seasoning and ⅛ teaspoon pepper, combine and pour into baking dish evenly
  • Melt butter and pour over ham mixture
  • In a large measuring cup, add 1 cup milk or cream, break eggs into measuring cup, add Dijon mustard and ⅛ teaspoon pepper, whisk well
  • Pour over ham mixture
  • Bake uncovered at 350 degrees for 30-35 minutes or until a knife inserted in the middle comes out clean.
  • Optional: sprinkle casserole with more cheese and return to oven for a couple minutes until cheese is melted and bubbly

1/2 cup shredded Parmesan (about 1.5 ounces; see Cook's Note)
2 large eggs
Kosher salt and freshly ground black pepper

Steps:

  • Set aside 2 tablespoons of the Parmesan. Sprinkle the remaining Parmesan in an 8-inch ring around the edge of a large nonstick skillet, leaving a 7-inch empty circle in the center. Sprinkle the reserved Parmesan in a line down the center of the circle, dividing it into 2 half-circles. Heat the skillet over medium-low heat.
  • Gently crack an egg into each half-circle and sprinkle with salt and pepper. Cover the skillet and cook, undisturbed, until the whites are almost set and the cheese has melted, 3 to 4 minutes.
