HAM AND CHEESE IN PUFF PASTRY

1 package (2 sheets) frozen puff pastry, defrosted (recommended: Pepperidge Farm)
2 tablespoons Dijon mustard
1/4 pound black forest ham, sliced
1/2 pound Swiss Gruyere cheese, sliced
1 egg, beaten with 1 tablespoon water, for egg wash

Steps:

  • Preheat the oven to 450 degrees F. Place a piece of parchment paper on a sheet pan.
  • Lay 1 sheet of puff pastry on a floured board and carefully roll it out to 10 by 12 inches. Place it on a sheet pan and brush the center with the mustard, leaving a 1-inch border around the edge. Place a layer first of ham and then cheese, also leaving a 1-inch border. Brush the border with the egg wash.
  • Place the second sheet of puff pastry on the floured board and roll it out to 10 by 12inches. Place the second sheet on top of the filled pastry, lining up the edges. Cut the edges straight with a small, sharp knife and press together lightly. Brush the top with egg wash and cut a few slits in the top to allow steam to escape.
  • Bake for 20 to 25 minutes, until puffed and golden brown. Allow to cool for a few minutes and serve hot or warm.

3- - (8ozs pkg cream chese
1 medium onion chopped
2- - l lb. large pkgs. sliced cooked ham
2 Tbsp accent
2 Tbsp worcestershire sauce

Steps:

  • 1. Chop the ham, save enough to roll the cheese ball in, put the rest in a bowl, with the other ingredients.
  • 2. Blend all ingredients together.CHILL , Then form into 2 balls.
  • 3. Roll the balls in the rest of the ham. Wrap in saran wrap and refrigerate. When ready to serve put on a pretty platter and place crackers around it. Put a spreader knife beside of it.
  • 4. Will keep in refrigerator, if there is any left over. Which that don't happen in my household! It is great because you can make it the day before you need.

¾ cup melted butter
1 ½ tablespoons Dijon mustard
1 ½ teaspoons Worcestershire sauce
1 ½ tablespoons poppy seeds
1 tablespoon dried minced onion
24 mini sandwich rolls
1 pound thinly sliced cooked deli ham
1 pound thinly sliced Swiss cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • In a bowl, mix together butter, Dijon mustard, Worcestershire sauce, poppy seeds, and dried onion. Separate the tops from bottoms of the rolls, and place the bottom pieces into the prepared baking dish. Layer about half the ham onto the rolls. Arrange the Swiss cheese over the ham, and top with remaining ham slices in a layer. Place the tops of the rolls onto the sandwiches. Pour the mustard mixture evenly over the rolls.
  • Bake in the preheated oven until the rolls are lightly browned and the cheese has melted, about 20 minutes. Slice into individual rolls through the ham and cheese layers to serve.

These little "bites" are my "snack" version of a ham and cheese sandwich. The arugula and honey mustard gives these snacks a refreshing flavor twist. They make a great snack as well as an appetizer served at a party.

12 - snack crackers (or pretzel shaped crackers as shown in picture)
1/4 cup(s) prepared ham salad
1 - slice swiss cheese( the long slices) cut into small squares to fit crackers
3 - 4 - cherry tomatoes, cut into thin slices
1 small handfull baby arugula
2 tablespoon(s) prepared honey mustard dressing

Steps:

  • Place crackers on an oven proof baking pan.
  • Divide ham salad evenly among crackers, spreading to the outer edges. (You can use more or less ham salad depending on your personal taste.)
  • Place a slice of tomato on top of ham salad and top each with a piece of cheese. Place under broiler until cheese is melted, about 2-3 minutes, being careful not to burn.
  • Remove from oven and top each with 2 or 3 sprigs of arugula. Drizzle each with honey mustard dressing.

This is a classic French croque-monsieur, but with the added tang of Dijon mustard and sourdough bread. While it may well be the quintessential warm ham and cheese sandwich, it also makes a great snack with drinks. Please note the sandwiches may be prepared in advance and reheated to serve.

6 slices sourdough bread
2 tablespoons softened unsalted butter
Dijon mustard
6 ounces/2 cups grated Emmenthal, Gouda or Monterey Jack cheese or a mixture
6 slices prosciutto or cooked ham
1/2 cup thick béchamel sauce (See Note)
Pinch of chopped thyme, for garnish
1 tablespoon snipped chives, for garnish

Steps:

  • Heat oven to 400. Lay bread slices on a work surface. Lightly butter 3 slices and place butter-side-down on a baking sheet. Now spread them lightly with mustard.
  • Distribute half the cheese over the mustard. Top each of the slices of cheese-covered bread with 2 slices prosciutto and cover each evenly with more grated cheese, reserving 1/4 cup cheese for final topping.
  • Lay on the remaining 3 bread slices and press down gently. Spread each top slice with about 3 tablespoons béchamel. Sprinkle with reserved cheese.
  • Bake until browned and bubbling on top, about 10 minutes. To serve, cut each sandwich in half diagonally or vertically to make 6 small sandwiches. Sprinkle with thyme and chives. Cut off crusts if desired. May also be cut into bite-size pieces.

1/2 medium onion, cut into wedges
2 cups finely shredded cheddar cheese
2 packages (8 ounces each) cream cheese, cubed
1 cup chopped pecans
1 slice Swiss cheese

Steps:

  • Place ham and onion in a food processor; pulse until finely chopped. Add cheddar cheese; pulse until blended. Add cream cheese; process until smooth., Shape cheese mixture into a football; press pecans into cheese mixture. Cover and refrigerate at least 1 hour., Cut Swiss cheese into strips; arrange over top for laces. Serve with crackers.

1/4 English cucumber
1/2 carrot
1 Tbsp. KRAFT Classic Ranch Dressing
6 round buttery crackers
2 slices OSCAR MAYER Deli Fresh Smoked Ham, each cut into 3 pieces
1 KRAFT Singles, cut into 6 pieces

Steps:

  • Cut cucumber lengthwise in half; run tip of spoon down center of each piece to remove seeds. Use vegetable peeler to cut cucumbers and carrots into thin lengthwise slices for the "noodles"; place in resealable container. Spoon dressing into small resealable container. Pack in insulated lunch bag. Add small plastic fork.
  • Place crackers, meat and Singles in separate stacks. Place in second resealable container. Add to lunch bag.
  • Toss vegetables with dressing just before serving. Top crackers with meat and Singles; serve with "noodle" mixture.
