LEFTOVER HAM STIR FRY



Leftover Ham Stir Fry image

Ham is pretty salty as is, so be sure to adjust your seasonings accordingly!

Number Of Ingredients 17

2 cups chopped, leftover ham (or as much as you desire!)
1/2 lb carrots, sliced into small, thin matchsticks
1 large onion, chopped
1 portoello mushroom, halved and sliced
2 celery stalks, chopped
2 bunches baby bok choy, white part sliced and green part roughly chopped, divided
1 large zucchini, halved lengthwise and sliced
1 red pepper, chopped
3 garlic cloves, minced
1 small can of sliced water chestnuts, drained
Preferred oil (avocado or vegetable oil works well!)
1/4 cup soy sauce
1 cup broth of your choosing
Salt and pepper (ham is quite salty to be careful here.)
1/4 tsp. chili flakes
2 tsp. dried oregano
2 tsp. cornstarch

Steps:

  • Add a couple of tablespoons of oil to a wok and set over medium-high heat. When hot, add in the carrots and cook for 5 minutes. Stir in onions, mushroom, celery, and white part of bok choy. Cook for 3 minutes. Add in zucchini, red pepper, garlic, and water chestnuts. Cook for 3 minutes. Add in soy sauce, ham, and green part of bok choy. Cook 3 more minutes.
  • Whisk together all the sauce ingredients until really well combined. Poor into stir fry and cook for a few minutes, or until nicely thickened!
  • Serve or rice or noodles.

Heavy cream and Parmesan cheese make a simple yet flavorful sauce for this pasta. Ham and broccoli are the perfect flavor combo for this easy dish.

8 ounces pasta (e.g., penne , elbows, shells)
3 cups broccoli florets, roughly chopped (about 1 medium broccoli crown)
3 tablespoons unsalted butter
1 1/2 to 2 cups diced ham (about 8 ounces)
1 large clove garlic, finely minced
2 to 3 teaspoons chopped fresh basil, or 1/2 teaspoon dried leaf basil
3/4 cup heavy cream
3/4 cup freshly grated Parmigiano-Reggiano cheese
Salt, to taste, optional
Freshly ground black pepper, to taste, optional

Steps:

  • Cook the pasta in a pot of boiling salted water following the package directions. Drain in a colander.
  • Meanwhile, put the broccoli pieces in a steaming basket. Bring about an inch of water to a boil in a medium to large saucepan. Put the steaming basket in the pan (above the water, so the broccoli doesn't sit in the water). Cover the pan and steam the broccoli for about 4 minutes, or until the florets are just barely tender.
  • In a skillet or saute pan over medium heat, melt the butter. Add the ham and cook, stirring, until browned. Add the garlic and cook for 1 more minute. Add the basil, cream, and Parmesan cheese. Bring to a simmer over low heat and continue cooking for about 1 minute.
  • Taste and add salt and pepper, as needed. Combine with the drained pasta and toss. Heat through.
  • Transfer the pasta mixture to a serving bowl and toss again at the table just before serving.
  • Serve with extra Parmesan cheese, a tossed salad or Caesar salad, along with crusty rolls or bread . Variations

SIMPLE BROCCOLI STIR-FRY

Stir-frying has stood the test of time. It's a wonderful way to cook small pieces of vegetables and meat quickly, without a lot of fat. Prepping your ingredients ahead of time and having them near your stovetop is the key to success. This recipe can be made in a large nonstick skillet, but consider purchasing a wok: Carbon steel and cast-iron take on high heat well, and the concave shape makes stir-frying foods easy and fast.

1 large bunch broccoli (about1 1/2 pounds)
2 tablespoons soy sauce
1 tablespoon cornstarch
1 teaspoon sugar
2 tablespoons plus 1 teaspoon vegetable or peanut oil
1 scallion, chopped
2 to 3 cloves garlic, chopped (about 2 teaspoons)
1-inch piece ginger, peeled and chopped (about 2 teaspoons)
Pinch to 1/4 teaspoon crushed red pepper flakes
1/4 teaspoon toasted sesame oil
Cooked white or brown rice, for serving

Steps:

  • Trim the florets off the broccoli, and cut into 1- to 1 1/2-inch pieces. Peel the broccoli stalks with a vegetable peeler to remove the tough outer skin, and slice 1/4 inch thick on the diagonal. Set aside.
  • Whisk together 1/2 cup water, soy sauce, cornstarch and sugar in a small bowl. Set aside.
  • Heat a large wok over high heat. Add 2 tablespoons of the vegetable oil, and swirl to coat the wok. Once the oil begins to smoke, add the broccoli florets and stems. Cook, stirring constantly, until browned around the edges, about 2 minutes. Add 2 tablespoons of water to steam the broccoli, and cook, stirring constantly, until tender, about 2 minutes more. Push the broccoli to the edges of the pan, forming an empty well in the center. Add the remaining 1 teaspoon vegetable oil, then the scallions, garlic, ginger and pepper flakes, and stir until aromatic, 30 to 45 seconds. Add the soy mixture, and stir until the sauce has thickened and the broccoli is coated, about 30 seconds. Remove from the heat, add the sesame oil and stir to coat. Serve with rice.

1 bunch broccoli (about 2 pounds)
1 large red pepper
1 large onion
1 pound cooked ham in one piece
salad oil
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Cut broccoli into 2 inch x 1 inch pieces. Cut red pepper into 1/2 inch wide slices. Cut onion into 8 wedges. Cut ham into bite-size chunks. In 12 inch skillet over high heat, in 1 tablespoon very hot salad oil, cook broccoli pieces and salt, stirring quickly and constantly, until evenly coated with oil. Add 1/4 cup water. Reduce heat to medium, cover and cook 2 minutes. Uncover and stir-fry 5 minutes or until broccoli is tender-crisp. Remove to a small bowl. In the same skillet over medium heat, in 2 tablespoons hot salad oil, cook red pepper and onion until golden brown. Stir in ham chunks, broccoli, black pepper and 1/4 cup water, stirring gently until ham is heated through.

1 ½ cups water
1 cup couscous
2 cups chicken broth
¼ cup cornstarch
3 tablespoons soy sauce
3 tablespoons brown sugar
⅛ teaspoon ground ginger
1 tablespoon vegetable oil
2 cloves garlic, minced
1 (16 ounce) package mixed broccoli and cauliflower florets
1 carrot, sliced
¼ pound cooked ham, cut into strips
1 (8 ounce) can sliced water chestnuts, drained
½ cup sliced almonds

Steps:

  • To Make Couscous: In a medium saucepan, bring water to a boil. Stir in couscous, reduce heat to medium-low, and simmer for 8 to 10 minutes, until fluffy. Cover and set aside.
  • In a small bowl, combine broth, cornstarch, soy sauce, brown sugar and ginger. Mix together and set aside.
  • Heat oil in a large skillet or wok. Add garlic, broccoli, cauliflower and carrot; stir-fry for 7 to 8 minutes or until crisp-tender (add water as needed if pan gets too dry).
  • Stir broth mixture and pour over vegetable mixture in skillet, then stir in ham and water chestnuts. Cook 2 minutes, stirring frequently. Stir in almonds. Serve stir fry over hot couscous.

1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/4 cup whole milk
1 teaspoon prepared mustard
1/2 teaspoon Worcestershire sauce
Pinch pepper
2 packages (10 ounces each) frozen broccoli cuts
2 cups cubed fully cooked ham
1 can (6 ounces) french-fried onions, divided
1 cup shredded cheddar cheese

Steps:

  • In a large bowl, combine the soup, milk, mustard, Worcestershire sauce and pepper; spoon half into a skillet. Top with the broccoli, ham, half of the onions and cheese. , Spoon remaining soup mixture over cheese and top with remaining onions. 2 packages (10 ounces each) frozen cut broccoli
2 cups cooked rice
6 tablespoons butter, cubed
2 cups fresh bread crumbs (about 2-1/2 slices)
1 medium onion, chopped
3 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
3 cups milk
1-1/2 pounds fully cooked ham, cubed
Shredded cheddar or Swiss cheese

Steps:

  • Preheat oven to 350°. Cook broccoli according to package directions; drain. Spoon rice into a 13x9-in. baking pan. Place broccoli over rice. , Melt butter in a large skillet. Sprinkle 2 tablespoons of melted butter over the bread crumbs and set aside. In remaining butter, saute onion until soft. Add flour, salt and pepper, stirring constantly until blended; stir in milk. Bring to a boil; cook and stir until thickened, about 2 minutes. Add ham. , Pour over rice and broccoli. Sprinkle with crumbs. Bake until heated through, about 30 minutes.
