HAM AND BROCCOLI BAKE
This quick, week-night dinner is a nice alternative to mac and cheese with ham. It comes together easily and is comforting and filling.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Bring a large pot of lightly salted water to a boil; cook the pasta in the boiling water, stirring occasionally, until tender but not mushy, about 10 minutes. Drain.
- Thaw the broccoli in a microwave oven until you can break it apart into small pieces.
- Heat the olive oil in a large skillet over medium heat; cook and stir the diced ham in the hot oil until the edges start to brown, about 10 minutes. Stir in the broccoli and cook and stir until any excess water has cooked away and the ham and broccoli are hot. Pour in the jar of Alfredo sauce and the milk; stir to blend, sprinkle with pepper, and add the cooked pasta. Stir everything together to coat the pasta with sauce and bring to a simmer.
- Spread the bubbling pasta mixture into the prepared baking dish, top with shredded Colby-Monterey jack cheese, and bake in the preheated oven until the casserole is hot and the cheese is melted and starting to brown, about 30 minutes.

- In a small saucepan, melt butter; stir in flour. Stir in the mustard, horseradish, Worcestershire sauce, onion and salt. Combine the pineapple juice, milk and egg yolk. Gradually stir into butter mixture. Bring to a gentle boil; cook until thickened. Remove from the heat and set aside. , Top each piece of ham with a cheese slice and two to three broccoli spears. Spoon 1 tablespoon sauce over broccoli. Roll-up, securing with toothpicks if necessary. Place, seam side down, in a greased shallow baking dish. Top with remaining sauce. , Cover and bake at 350° for 15-20 minutes or until heated through. Discard toothpicks.

- 1. cook the rice, f, and spoon into a well greased 13x9 baking dish. 2. cook broccoli, drain well. Place in a single layer over rice in dish. 3. melt butter. In a large skillet, stir onions into butter and saute until soft. Stir in the flour, salt and pepper; cook, stirring constantly until bubbly. Stir in milk, and continue cooking until sauce thickens and bubbles, about 3 minutes. Stir in ham, pour over rice. 4. Place cheese slices over sauce. Bake in 350 degree oven for 45 minutes, until cheese has melted. makes 8 servings.

- In a large bowl, combine the soup, milk, mustard, Worcestershire sauce and pepper; spoon half into a skillet. Top with the broccoli, ham, half of the onions and cheese. , Spoon remaining soup mixture over cheese and top with remaining onions. Cover and cook over low heat for 20-25 minutes or until heated through. Do not stir.

I found this recipe in an old Amish cookbook a while back. It combines lots of my family's favorite foods, like ham, broccoli and rice, and it makes a very tasty meal.

- In a large saucepan, bring 1 in. water, broccoli and onion to a boil. Reduce heat; cover and simmer for 5-8 minutes or until vegetables are crisp-tender; drain. , In a greased 1-1/2-qt. baking dish, layer the rice, ham and broccoli mixture. Combine the soup, cheese and milk; spoon over broccoli. Bake, uncovered, at 350° for 20 minutes. , Meanwhile, coarsely crumble bread. In a small skillet, cook crumbs in butter over medium-high heat until lightly browned. Sprinkle over casserole. Bake 15 minutes longer or until heated through.
