These super easy puff pastry cheese twists make for the perfect snack or treat. They are also fantastic for lunch boxes as most kids will love them.

1 sheet of puff pastry
1/3 cup cheddar cheese, shredded
¼ cup parmesan, shaved
2 tsp garlic, crushed
1 tsp oregano
1 large egg, beaten
½ tsp salt

Steps:

  • Preheat an oven to 220°C (430°F)
  • In a bowl, mix the shredded cheese, grated parmesan, garlic, salt, and oregano.
  • Using a pastry brush, brush the beaten egg across the puff pastry.
  • Place the cheese mix over half of the puff pastry sheet.
  • Fold the pastry in half and brush with some beaten egg.
  • Place the rest of the cheese mix over the half.
  • Cut the pastry into 1 cm (1/2 inch) wide strips.
  • Twist the strips slightly and place onto an oven tray lined with baking paper.
  • Repeat until you have done all the strips.
  • Using a pastry brush, lightly brush the twists with the egg.
  • Place into the preheated oven and cook for about 15 minutes or until golden brown.
  • Once golden browned, remove and allow to cool.
  • Serve & Enjoy.

1 sheet frozen puff pastry, thawed
1/2 cup unsalted butter, melted
3/4 cup sugar
2 1/2 teaspoons cinnamon
1 cup milk
8 ounces semisweet or milk chocolate, chopped
1/4 cup smooth peanut butter

Steps:

  • Preheat the oven to 400 degrees F. Line a sheet pan with parchment or buttered waxed paper.
  • Unroll the puff pastry on a work surface. Brush the pastry generously with melted butter.
  • In a small bowl, toss together the sugar and cinnamon. Sprinkle evenly over the pastry.
  • Working lengthwise, cut the pastry in half and then cut each half into 6 even strips, each 3/4-inch wide. Twist the strips to make long twisted "straws".
  • Transfer to the prepared pan, pushing the ends down with your thumb to help them stay in place on the pan and remain twisted. Bake until puffed and golden brown, about 20 minutes.
  • To make the sauce, heat the milk in a saucepan. Pour the hot milk over the chocolate and whisk to melt it. Whisk in the peanut butter until smooth. Keep sauce warm until ready to serve.
  • To serve, place the twists on a tray and serve with the sauce along side for dipping.

1 sheet frozen puff pastry, 1/2 (17.3-ounce) package
1/3 cup grated Parmesan
2 tablespoons extra-virgin olive oil
2 teaspoons minced garlic
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon cayenne
1 large egg
All-purpose flour, for dusting

Steps:

  • Preheat oven to 400 degrees F.
  • Line 3 large baking sheets with parchment paper. Thaw the pastry sheet at room temperature covered by a clean kitchen cloth, about 30 minutes. While the pastry is thawing, combine cheese, olive oil, garlic, oregano, salt and cayenne in a small mixing bowl. Stir well to combine. In a clean small mixing bowl, beat the egg with a fork. On a lightly floured surface, gently unfold the pastry.
  • Sprinkle the pastry lightly with flour and using a rolling pin, roll into a 14 by 10-inch rectangle. Brush the top of the pastry with a beaten egg. Cut in 1/2 lengthwise to form 2 (7 by 10-inch) rectangles. Spread the herb-cheese mixture with the back of a spoon evenly across 1 rectangle. Lay the second rectangle across the coated piece, egg side-down. With the rolling pin lightly roll the 2 sheets together to seal. With a large knife cut crosswise into strips, about 1/3-inch wide each. (Alternately, you can use a pizza wheel to cut the strips.) One at a time, grab the ends of each strip and twist in opposite directions to form a spiral. Transfer to the prepared baking sheets. Bake until light golden brown, about 10 minutes. Remove from the oven and let cool on baking sheets until cool enough to handle. Serve either warm or at room temperature.

TOMATO & HALLOUMI SLICE

400g cherry tomatoes, halved
1 yellow pepper, thinly sliced
2 tbsp olive oil
400g halloumi, cut into 5mm slices
500g block puff pastry
flour, for dusting
2 tbsp soft cheese
3 tsp milk
1 garlic clove, finely grated
1 egg yolk
handful of basil leaves, to serve

Steps:

  • Heat the oven to 160C/140C fan/gas 3. Arrange the tomatoes and peppers on a baking tray in a single layer. Drizzle with half the oil, season with salt and roast for 25 mins.
  • Meanwhile, heat a griddle pan over a medium heat. Lightly brush the halloumi slices with the remaining oil and griddle for 6 mins. Flip and cook for 3 mins more. Remove from the heat and set aside.
  • Roll the puff pastry out on a lightly dusted surface to roughly 32 x 22cm, and about 1cm thick. Transfer to a large baking tray lined with baking parchment and score a 2cm border around the edges. Combine the soft cheese, 2 tsp milk and the garlic, and spread inside the border.
  • Turn the oven to 200C/180C fan/gas 4. Tip away any liquid from the tray of tomatoes and peppers, then arrange the roasted veg over the soft cheese mix. Lay the halloumi on top. Combine the egg yolk and remaining milk, then brush this over the border. Bake for 25 mins until the pastry is golden and risen. Scatter over the basil and serve immediately.
