During Lent, we are always looking for easy-to-prepare, economical recipes that offer a change of pace. This recipe definitely fits the bill! You can substitute cod for the halibut. Just toss fresh or stale bread in the food processor and pulse until coarse crumbs are formed.

2 tablespoons butter
1 garlic clove, minced
1 cup coarse fresh breadcrumb
2 teaspoons minced fresh tarragon
1 teaspoon finely grated lemon zest
1/4 teaspoon salt
fresh ground black pepper
4 (5 ounce) halibut fillets or 4 (5 ounce) cod fish fillets
4 teaspoons mayonnaise
2 teaspoons prepared horseradish
lemon wedge

Steps:

  • Preheat oven to 400 degrees.
  • Melt butter in a small skillet over medium heat, add garlic, and saute 1 minute. Add breadcrumbs, tarragon, lemon zest, salt and pepper. Stir well.
  • Place halibut on a parchment-lined baking sheet. Combine mayonnaise and horseradish; spread over each fillet. Top with crumbs, patting lightly to help them adhere. Bake 10-12 minutes, or until fish is tender and crumbs are golden.

1/2 cup fresh lemon juice
1 tablespoon minced lemon zest
1/4 cup Dijon mustard
3 tablespoons finely chopped fresh tarragon
2 tablespoons finely chopped fresh chives
1/4 cup olive oil
salt
fresh ground black pepper
6 (8 ounce) halibut fillets
lemon slice
fresh tarragon sprig

Steps:

  • Make the marinade: in a small bowl, whisk the lemon juice, lemon zest, mustard, tarragon, and chives together; slowly whisk in the olive oil until well blended; season with salt and pepper.
  • Arrange fish pieces in a large, shallow, non-aluminum dish; pour the marinade over the fish, coating evenly; cover and refrigerate for 30 minutes to 2 hours.
  • Prepare the grill for medium-heat grilling.
  • Remove fish from the marinade; grill the fish about 3 inches from the fire, turning once, for 5-7 minutes on each side, or to desired doneness.
  • Transfer fish to a platter and garnish with lemon slices and tarragon; serve immediately.

2 tablespoons butter
1 tablespoon olive oil
1/3 cup limoncello
1 tablespoon tarragon, finely chopped
1 tablespoon lemon zest, finely chopped
1/8 teaspoon sea salt, ground
1 halibut fillet
1/2 teaspoon hot paprika (to taste)

Steps:

  • In a small bowl, combine all the ingredients for the sauce. Pour half of it in a small saucepan; keep it warm.
  • Lay lemon slices on a large foil and place fillet on top, skin side down. Brush generously with the room temperature butter sauce (the one from the small bowl); season with salt, black pepper and hot paprika.
  • Gather foil together, fold it and crimp it, including the ends. Place it on a perforated grill top and transfer to the BBQ. Grill for 15 to 20 minutes at 500-550ºF, or until fish flakes easily with a fork.
  • Before serving, spoon the warm butter sauce on top. Served with rice and steamed veggies.

1/2 cup fresh lemon juice
1 tablespoon minced lemon, zest of
1/4 cup Dijon mustard
3 tablespoons finely chopped fresh tarragon (fresh preferred) or 1 tablespoon dried tarragon
2 tablespoons finely chopped fresh chives (or a combination) or 2 tablespoons scallions (or a combination)
1/4 cup olive oil
salt & freshly ground black pepper
6 halibut steaks, 8 ounce steaks
lemon slice, for garnish
fresh tarragon, for garnish

Steps:

  • In a small bowl whisk together the lemon juice, zest, mustard, tarragon, and chives or scallions, then gradually whisk in the olive oil until well incorporated to make the marinade; season to taste with salt and freshly ground pepper.
  • Place fish steaks in a Ziplock bag (or use a large shallow non-reactive dish w/ cover), then add the marinade, close the bag securely, and refrigerate for 30 minutes to 2 hours.
  • Prepare your barbecue or grill pan to medium temperature.
  • Grill the fish about 3 inches from the coals, or in the grill pan, for 5 to 7 minutes on each side or to desired doneness.
  • Transfer steaks to a serving platter, garnish with lemon slices and tarragon, and serve immediately.
  • Goes nicely with a rice salad!
  • Note: you can also use this recipe with salmon steaks or fillets.

1 cup water
1 cup riesling wine or 1 cup other white wine
3/4 cup chopped onion
1/2 cup chopped celery
1 lemon, sliced
1 tablespoon unsalted butter
1/2 small onion, minced
6 (6 ounce) halibut fillets
coarse salt
1 tablespoon fresh tarragon
2 tablespoons finely chopped chives
1 lemon, cut into six wedges

Steps:

  • For the poaching liquid:.
  • In a medium heavy saucepan combine water, wine, onions, celery and lemon and simmer for 15 minutes.
  • Strain and keep warm.
  • For the Halibut:.
  • In a large heavy frying pan melt the butter over medium heat and saute onions until translucent, about five minutes.
  • Season fish with salt and add to pan.
  • Pour poaching liquid around the fish along with tarragon and simmer gently for eight minutes or until fish is firm to the touch and white in the centre.
  • Using a slotted spoon, remove the fish to a heated platter.
  • Add chives and a little of the poaching liquid and lemon wedges.
  • Serve at once.

1/2 cup blanched hazelnuts
1 large bunch fresh tarragon
1 3-3 1/2-pounds skinless halibut fillet (halved lengthwise if very wide)
4 tablespoons olive oil, divided
Kosher salt, freshly ground pepper
1/2 cup (1 stick) unsalted butter
1/4 cup fresh lemon juice
Lemon halves

Steps:

  • Preheat oven to 350°F. Spread hazelnuts in a single layer on a rimmed baking sheet and toast, stirring occasionally, until golden, 8-10 minutes. Coarsely chop; set aside.
  • Reduce oven temperature to 300°F. Scatter tarragon sprigs on a large rimmed baking sheet. Place halibut on top, drizzle with 2 tablespoons oil, and season with salt and pepper. Roast until halibut is just opaque in the center, 20-30 minutes, depending on thickness of fish.
  • Meanwhile, melt butter in a small saucepan over medium-high heat. Cook, stirring often, until butter foams, then browns (don't let it burn), about 5 minutes. Remove from heat; let brown butter cool slightly. Stir in lemon juice, hazelnuts, and remaining 2 tablespoons oil; season with salt and pepper.
  • Serve fish with hazelnut brown butter sauce and lemon halves.

¾ cup panko bread crumbs
⅓ cup chopped fresh parsley
¼ cup chopped fresh dill
¼ cup chopped fresh chives
1 tablespoon extra-virgin olive oil
1 teaspoon finely grated lemon zest
1 teaspoon sea salt
¼ teaspoon ground black pepper
4 (6 ounce) halibut fillets

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Line a baking sheet with foil.
  • Combine panko bread crumbs, parsley, dill, chives, extra-virgin olive oil, lemon zest, sea salt, and black pepper in a bowl. Taste and adjust with more salt if desired.
  • Rinse halibut fillets and pat dry with a paper towel.
  • Place halibut fillets onto the prepared baking sheet.
  • Generously spoon the herbed crumbs over the fish, and lightly press crumb mixture onto each fillet.
  • Bake in the preheated oven until crumb topping is lightly browned and fish flakes easily with a fork, 10 to 15 minutes.
