This pan seared halibut recipe with lemon butter sauce takes just 20 minutes... which you'd never guess with how fancy pan fried halibut looks. I'll show you how to pan sear halibut, plus how to make the perfect sauce for halibut.

4 6-oz Halibut fillets ((1.5 lb total))
1/2 tsp Garlic powder
1/2 tsp Paprika
1 tsp Sea salt
1/4 tsp Black pepper
2 tbsp Olive oil
1/2 cup Salted butter
1 medium Lemon ((cut in half))

Steps:

  • Use paper towels to pat the halibut fillets completely dry - this will ensure even browning. Season the fish on both sides with garlic powder, paprika, sea salt, and black pepper. Set aside.
  • Heat the olive oil in a large skillet over medium-high heat for 2 minutes.
  • Add the fish fillets in a single layer (you can do it in batches if all the fish won't fit in a single layer). Sear, without moving, for 3-4 minutes, until the edges of the fish are opaque. Flip and cook for 2-4 minutes, until cooked through.
  • Remove the fish from the pan and cover tightly with foil to keep warm.
  • Reduce heat to medium-low. Add the butter to the same pan. Wait for it to melt, then heat for 2-3 minutes, stirring occasionally, until the butter is browned and smells nutty.TIP: If you like garlic, you can also use this lemon butter sauce recipe.
  • Use the Zulay Kitchen Lemon Squeezer to squeeze all the juice from both halves of the lemon into the pan. Bring to a simmer, then reduce heat and simmer for about 3-4 minutes, stirring often, until volume is reduced by half. The lemon butter sauce will still be thin.
  • Drizzle a little lemon butter sauce over each serving plate. Place the pan seared halibut fillets over the sauce, then drizzle more sauce on top.

CUMIN-SEARED HALIBUT WITH SWEET CORN SAUCE



Cumin-Seared Halibut with Sweet Corn Sauce image

Northern Pacific halibut is my fish of choice to have in the warmer months. It is a flat fish and deserves special care when handling. Since it can be a little more expensive, I save it for special occasions. The sauce relies on corn, which is very important to Native American culture and recipes. Use blue corn if you can get ahold of it. Otherwise, sweet corn is a great go-to.

2 tablespoons canola oil
1/2 small onion, chopped
1 clove garlic, minced
2 fresh thyme sprigs
1 bay leaf
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/2 cup white wine, optional
5 ears corn, kernels cut off, 2 cobs reserved
4 cups vegetable stock
8 teaspoons canola oil
1/2 teaspoon ground cumin
Zest of 1 lemon plus 1 teaspoon fresh lemon juice
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Four 6- to 8-ounce halibut fillets
2 teaspoons unsalted butter

Steps:

  • For the sweet corn sauce: In a medium heavy-bottomed saucepan, add the canola oil, onions, garlic, thyme, bay leaf, salt and pepper. Sweat on medium heat, stirring occasionally, until the onions are softened, 7 to 10 minutes. Add the wine, if using, and cook until it evaporates, about 5 minutes.
  • Add the corn kernels, reserved cobs and stock. Bring to a boil over medium-high heat, then reduce the heat to medium and cook for about 10 minutes.
  • For the halibut: Meanwhile, in a large plastic bag, combine 5 teaspoons of the canola oil, the cumin, lemon zest and juice, salt and pepper with the halibut fillets and allow to marinate in the refrigerator for 30 minutes.
  • Discard the corn cobs, thyme and bay leaf from the sauce. Carefully pour the mixture into a blender and puree on high speed for 4 to 5 minutes. The natural starches will activate and thicken the sauce. Pour the sauce through a fine-mesh sieve into a clean saucepan. Simmer over low heat until it reduces by half, about 15 minutes.
  • To finish the halibut, in a medium sauté pan, heat the butter and remaining 3 teaspoons canola oil over high heat until the butter melts and the oil is hot (a little smoke indicates it's ready). Place the halibut fillets in the pan skin-side up and cook until a nice crust forms on the bottoms, about 4 minutes. Carefully flip the fillets and cook 3 minutes more. Lower the heat and continue to cook until the internal temperature registers 140 degrees F, about 4 minutes. Let rest, covered with foil, for a few minutes. Serve topped with the sweet corn sauce.

6 tablespoons olive oil
3 small garlic cloves, peeled and minced
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons lemon juice
4 6-ounce halibut fillets, skin removed
1 tablespoon light olive oil or vegetable oil
Chopped parsley, for garnish, optional

Steps:

  • In a large sealable plastic bag, combine the 6 tablespoons olive oil, garlic, basil, salt, pepper and lemon juice. Add fish, seal bag, and turn to coat. Refrigerate for at least 30 minutes or up to 2 hours.
  • In a large flat skillet (do not use a ridged pan), pour light olive oil or vegetable oil, tilting pan to spread evenly. Warm over high heat until smoking, then add fish fillets. Brush top and sides with marinade. Cook until seared, about 3 minutes; turn and sear other side, about 3 more minutes. Brush top and sides with marinade again. Reduce heat to medium. Cook until centers of fillets are just opaque, 2 to 4 minutes more on each side depending on thickness, brushing with marinade as before. Garnish with parsley, if desired, and serve.

This is my version of a recipe from a favorite seafood restaurant in Anchorage, Alaska. It's pretty close. This recipe is AMAZING with your favorite rice dish and steamed broccoli.

1 1/2 lbs halibut fillets, cut in serving sizes (Not steaks)
1 1/2 cups shredded cheddar cheese, Tilamook if it is available
2 (1 ounce) packages of knorr bearnaise sauce mix
1/2 cup butter
2 cups milk
3 tablespoons sliced almonds
paprika, to garnish

Steps:

  • Cut halibut into serving size pieces.
  • Make Bearnaise sauce according to package directions,using the butter and milk.
  • Add 1/2 cup of the shredded cheddar and stir till melted through.
  • Roll halibut filets in the sauce, and place in a lightly greased baking dish.
  • Drizzle the remaining sauce over top of the fish, top with the remaining 1 cup of cheddar cheese and bake for 15 minutes in a 350°F oven.
  • After 15 minutes, sprinkle with the sliced almonds and paprika and bake another 15 minutes, or till your fish flakes as when done.
  • Baking times will vary according to thickness of fish.

½ cup grated Parmesan cheese
¼ cup butter, softened
3 tablespoons mayonnaise
2 tablespoons lemon juice
3 tablespoons chopped green onions
¼ teaspoon salt
1 dash hot pepper sauce
2 pounds skinless halibut fillets

Steps:

  • Preheat the oven broiler. Grease a baking dish.
  • In a bowl, mix the Parmesan cheese, butter, mayonnaise, lemon juice, green onions, salt, and hot pepper sauce.
  • Arrange the halibut fillets in the prepared baking dish.
  • Broil halibut fillets 8 minutes in the prepared oven, or until easily flaked with a fork. Spread with the Parmesan cheese mixture, and continue broiling 2 minutes, or until topping is bubbly and lightly browned.

6 (4 ounce) halibut steaks or 6 (4 ounce) other fish steaks
1/3 cup orange juice
1/4 cup lemon juice
1 teaspoon dried basil
1 teaspoon dried tarragon
1 teaspoon curry powder
1/8 teaspoon ground red pepper
1 tablespoon olive oil, divided
3 tablespoons dijon-style mustard
2 tablespoons red onions, minced
1 1/2 tablespoons capers, drained
1 tablespoon minced fresh parsley

Steps:

  • Arrange fish in a large shallow baking dish.
  • Combine orange juice and next 5 ingredients in a small bowl and mix well.
  • Pour over fish steaks, cover and marinate in refrigerator for 1 hour, turning once.
  • Remove steaks from marinade and reserve marinade.
  • Combine reserved marinade, olive oil and mustard in small saucepan and bring to boil.
  • Add onion, capers and parsley and reduce heat to simmer for 5 minutes.
  • Place halibut steaks on broiler pan sprayed with nonstick cooking spray and brush with sauce.
  • Broil for 5 minutes.
  • Turn, brush with sauce and broil an additional 3 minutes or until fish flakes easily with fork.
  • Spoon remaining sauce over fish or serve on the side.
