One-Pan Baked Halibut Recipe with Vegetables image

You'll love this simple baked halibut recipe with colorful vegetables tossed in a citrus and olive oil sauce! Perfect for busy weeknights because it comes together in 20 minutes or less. If you can't find halibut, another white fish like cod, haddock, or red snapper would work well. This sheet pan dinner is a filling meal in one, but if you want to make the most of the zesty Mediterranean-style sauce, serve the halibut and veggies over a bed of barley or bulgur.

Zest of 2 lemons
Juice of 2 lemons
1 cup extra virgin olive oil
1 1/2 tablespoon freshly minced garlic
2 teaspoon dill weed
1 teaspoon seasoned salt, (more for later)
1/2 teaspoon ground black pepper
1 teaspoon dried oregano
1/2 to 3/4 teaspoon ground coriander
1 pound fresh green beans
1 pound cherry tomatoes
1 large yellow onion, (sliced into half moons)
1 1/2 pound halibut fillet, (slice into 1 1/2-inch pieces)

Steps:

  • Preheat the oven to 425 degrees F.
  • In a large mixing bowl, whisk the sauce ingredients together. Add the green beans, tomatoes, and onions and toss to coat with the sauce. With a large slotted spoon or spatula, transfer the vegetables to a large baking sheet (21 x 15 x 1 inch baking sheet, for example). Keep the vegetables to one side or one half of the baking sheet and make sure they are spread out in one layer.
  • Now, add the halibut fillet strips to the remaining sauce, toss to coat. Transfer the halibut fillet to the baking sheet next to the vegetables and pour any remaining sauce on top.
  • Lightly sprinkle the halibut and vegetables with a little more seasoned salt.
  • Bake in 425 degrees F heated oven for 15 minutes. Then transfer the baking sheet to the top oven rack and broil for another 3 minutes or so, watching carefully. The cherry tomatoes should begin to pop under the broiler.
  • When ready, remove the baked halibut and vegetables from the oven. Serve immediately.

2 tablespoons all-purpose flour
1 ½ teaspoons lemon juice

1 cup sour cream
1/2 cup grated Parmesan cheese
1/4 cup butter, softened
1/2 teaspoon dill weed
1/2 teaspoon salt
1/4 teaspoon pepper
Paprika

Steps:

  • Preheat oven to 375°. Place halibut in a greased 13x9-in. baking dish. Combine sour cream, cheese, butter, dill, salt and pepper; spoon over halibut. , Cover and bake for 20 minutes. Uncover; sprinkle with paprika. Bake until fish just beings to flake easily with a fork, 10-15 minutes.

HALIBUT, CHARD AND POTATO CASSEROLE

This is based on a comforting Majorcan dish that is traditionally made with hake, a fish that isn't as easy to find here as halibut or Arctic char, both of which I've used for the dish. Pacific halibut is the type that gets the Environmental Defense Fund's highest rating. Make sure to cover this tightly so the fish doesn't dry out. An hour seems like a long time to cook fish, but the fish is well insulated and won't dry out.

2 tablespoons extra virgin olive oil
1 medium onion, chopped
2 garlic cloves, minced
1 14-ounce can chopped tomatoes, with juice
Salt
freshly ground pepper
1 generous bunch Swiss chard 1 3/4 to 2 pounds, stemmed and washed
1 pound Yukon gold potatoes or fingerlings, scrubbed and sliced
1 cup flat-leaf parsley leaves, chopped 1/2 cup chopped
2 pounds Pacific halibut or Arctic char fillets
1/2 cup dry white wine

Steps:

  • Preheat the oven to 350 degrees. Oil a heavy lidded casserole or Dutch oven.
  • Heat 1 tablespoon of the olive oil over medium heat in a medium skillet and add the onion. Cook, stirring often, until tender, about 5 minutes, and stir in the garlic. Cook, stirring, until fragrant, 30 seconds to a minute. Stir in the tomatoes and salt and pepper to taste. Bring to a simmer and cook, stirring often, for 10 to 15 minutes, until the tomatoes have cooked down slightly and smell fragrant.
  • Meanwhile, steam the chard for 2 to 3 minutes, until just wilted. Rinse briefly with cold water, squeeze out excess water, and chop coarsely.
  • Place a spoonful of the tomato sauce in the bottom of the casserole. Season the potato slices with salt and pepper and arrange in a layer in the bottom of the casserole.
  • In a large bowl toss together the chard, salt and pepper, and parsley. Lay half of this mixture over the potatoes. Season the fish fillets with salt and pepper and lay on top of the chard. Pour half the tomato sauce over the fish. Top with the remaining chard mixture and pour on the remaining tomato sauce. Pour in the wine and drizzle on the remaining olive oil. Cover tightly and place in the oven.
  • Bake 1 hour, until the potatoes are tender. Serve hot or warm.

4 medium potatoes (unpeeled)
1 -1 1/2 lb halibut
1 teaspoon salt
pepper
1/2 teaspoon sage
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
1 lemon, juice and zest of
1/2 cup sour cream (I use low fat)
1/3 cup grated cheddar cheese

Steps:

  • Boil potatoes till done.
  • Peel and slice thinly.
  • Spread in the bottom of a 1 1/2 quart casserole that has been lightly treated with cooking spray.
  • Place Halibut in a saucepan with salt, pepper and sage.
  • Cover with boiling water. Simmer on medium 15 minutes.
  • Drain break in pieces and spread over potatoes.
  • Melt butter in a small saucepan.
  • Stir in flour and cook and stir a minute till flour looses its rawness.
  • Gradually whisk in milk (it must boil to thicken ).
  • When sauce has thickened add lemon juice, zest and sour cream, mix well.
  • Pour over fish and top with grated cheese.
  • Bake at 375° 10 - 15 minutes.

Fish can be intimidating for those who didn't grow up cooking or eating it. One of the best ways to ease people into eating anything unfamiliar is by smothering it in roasted garlic and cheese. Forget the old Italian maxim of not mixing seafood and cheese: they pair magically and make first forays into cooking and eating halibut easy to execute and even easier to eat.

1 garlic head
1/2 tablespoon olive oil
1 tablespoon unsalted butter
1 pound halibut, skin removed, in 4 even fillets
Kosher salt, as needed
Freshly ground black pepper, as needed
1/2 cup mayonnaise
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 375˚F.
  • Cut off the top of the head of garlic and brush off some of the outer paper skin, leaving just the individually wrapped cloves. On a piece of foil, pour the olive oil over the garlic, then wrap the foil around it and place it in the oven for 45 minutes, until it's completely soft. For the recipe, you'll only need six cloves from the head, but it's worth making a whole head to keep the rest for spreading on crusty bread or adding to salads.
  • Raise the oven temperature to 425˚F.
  • Heat the butter in an oven-proof pan over low heat. Sprinkle both sides of the fish with salt and pepper. When the butter is melted, add the halibut and put it into the oven for 10 minutes. The fish should be just cooked and opaque throughout.
  • While the halibut cooks, blend or food process together six cloves of garlic, the mayonnaise, and parmesan. When the halibut is done, pull it out and generously smear the mayonnaise mixture on the top. Switch the oven to a high broil and return the pan to the still-hot oven for 4 minutes under the broiler, until the top is almost entirely golden brown.
  • Remove and serve immediately.
