2 cups chopped leftover pot roast or beef stew
1/2 cup beef gravy
2 cups chopped cooked vegetables, like carrots, leeks, spinach, Swiss chard, etc.
Salt and freshly ground black pepper
3 cups mashed potatoes, heated
2 tablespoons freshly grated horseradish
1/2 to 3/4 cup fresh bread crumbs
1/4 cup grated Parmesan
2 tablespoons butter, cut into pieces

Steps:

  • Preheat the oven with 350 degrees F.
  • Combine the meat, gravy, and vegetables in a large saute pan and cook over medium heat just until everything is heated through. Season with salt and pepper.
  • Pour the heated mixture into a large glass pie plate or a round glass baking dish. Add the horseradish to the heated potatoes. Spread the mashed potatoes over the meat mixture, smoothing with a spatula and spreading to the edges of the pie dish.
  • Sprinkle the top with the bread crumbs and the Parmesan. Dot the top with butter. Bake for 45 minutes on the top shelf of the oven. Raise the oven temperature to broil and broil just until the crumbs are browned, about 1 minute. Serve.

2 onions, chopped
3 garlic cloves, minced (or pressed)
1 tablespoon butter
2 tablespoons olive oil
3 tomatoes, chopped
1 1/2 lbs lean ground beef
1 tablespoon herbes de provence (or other herbs to your taste)
salt & pepper, to taste
1 egg yolk
2 tablespoons parmesan cheese
4 -5 cups mashed potatoes (instant is fine)
3/4 cup gruyere cheese, grated (can also use emmental or similar)

Steps:

  • In a large frying pan, cook the onions & garlic in the butter & olive oil on medium heat for about 5 minutes. Stir in the tomatoes, ground beef, herbs, salt & pepper. Cook until the meat is browned thoroughly. Turn off heat & add egg yolk & Parmesan cheese, stirring to mix completely.
  • Spread the meat in the bottom of a lightly oiled oven proof dish (a 9x13 would be perfect). Spread the potatoes on top of the meat mixture. And finish by sprinkling the grated cheese on top.
  • Bake in 400 deg oven for 15 to 20 minutes, until the cheese is melted & the potatoes lightly browned.

6 medium floury potatoes, such as Yukon gold
2 pounds/ 1 kg mushrooms
3 tablespoons butter
2 tablespoons olive oil, more as needed
1 large red onion, chopped
3 cloves garlic
1/2 cup/125 ml red wine
1/2 cup/125 ml vegetable stock or water
Handful fresh thyme leaves, chopped
Kosher salt and freshly ground black pepper
1 tablespoon flour
1 handful fresh parsley, chopped
1/4 cup/60 ml milk
2 to 4 tablespoons butter
Kosher salt and freshly ground pepper
4 ounces/110 g Comte or Gruyere cheese, cut into very fine dice
2 tablespoons grated Parmesan

Steps:

  • For the potatoes: Steam the potatoes in a covered saucepan with about 1 inch/2.5 cm water in the bottom, until very tender, about 30 minutes.
  • For the mushrooms: Clean and quarter the mushrooms. Heat just 2 tablespoons of the butter with 1 tablespoon of the olive oil and saute the mushrooms until cooked and golden. Remove from the pan. Heat the other spoonful of olive oil (adding more if you need it) and saute the onion until soft. Add the garlic for 1 minute. Deglaze with the wine and reduce to no more than a spoonful. Add the stock, thyme and mushrooms, season with salt and pepper and cook until the stock has reduced by half. Knead together the flour with the last tablespoon of butter and stir it in. Cook until the liquid has thickened to a sauce, a matter of minutes. Stir in the parsley. Spoon the mixture into a gratin dish.
  • For the cheese potato top: Heat the oven to 425 degrees F/220 degrees C. Mash the potatoes with the milk and butter until smooth, adding more milk if needed. Season with salt and pepper. Stir in the diced cheese. Distribute evenly over the mushroom mixture, and smooth with the back of the spoon (if you want to be very retro-housewife, make patterns with the tines of a fork or make waves with a spoon). Sprinkle over the Parmesan. Bake the gratin until bubbling hot and golden on top, about 15 minutes.

CHICKEN POT PARMENTIER

This version of the classic French Parmentier subs in a rotisserie chicken for the traditional beef. Think of it as a French spin on chicken pot pie.

4 cups chicken stock
3 carrots, peeled and diced
2 ribs celery, diced
16 pearl onions, peeled
6 Tbsp. (85 g) salted or unsalted butter
6 Tbsp. (60 g) all-purpose flour
1 clove garlic, peeled and minced
2 Tbsp. dry white wine
4 cups (500 g) diced or shredded cooked chicken
1 cup (130 g) fresh or frozen peas or shelled fava beans
2 Tbsp. finely chopped fresh tarragon or 3 Tbsp. chopped chervil leaves
2 Tbsp. finely chopped fresh flat-leaf parsley
1 tsp. sea salt or kosher salt, plus more if needed
½ tsp. freshly ground black pepper
2½ pounds russet potatoes, peeled and cubed
6 Tbsp. (85 g) unsalted butter, cubed and at room temperature, and 2 Tbsp. melted
1 tsp. sea salt or kosher salt
3 large egg yolks
⅓ cup (80 ml) heavy cream
Freshly ground black pepper
Pinch of freshly grated nutmeg

Steps:

  • To make the filling, heat the stock in a saucepan over medium-high heat with the carrots, celery, and onions. Let simmer until the vegetables are almost tender, about 15 minutes. Turn off the heat and set aside.
  • Melt the butter in a large pot or Dutch oven over medium heat. Stir in the flour and cook, stirring constantly, for 2 minutes. Whisk a few ladlefuls of the warm stock into the flour mixture, which will appear lumpy at first but will smooth out as you go. Gradually add all the stock, including the vegetables, stirring as you go. Cook for about 10 minutes, until thickened. During the last minute of cooking, add the garlic and white wine. Remove the pot from the heat and stir in the chicken, peas, tarragon, parsley, salt, and pepper. Taste and add a bit more salt, if desired. Transfer the mixture to a 2½‑ to 3-qt. (2.5- to 3-L) shallow baking dish set on an aluminum foil-lined baking sheet (to catch any spills).
  • Preheat the oven to 400ºF.
  • To make the potato topping, bring a large pot of lightly salted water to a boil. Add the cubed potatoes and cook until fork-tender, about 25 minutes. Drain well. Return the potatoes to the pot and cook over medium heat for 1 minute, stirring constantly, to remove some of the moisture.
  • Pass the potatoes through a food mill or potato ricer (don't use a mixer or food processor because it will make the potatoes gluey). Mix in the cubed butter and salt, let stand 5 minutes, stirring once or twice while they're cooling.
  • Stir the egg yolks into the warm potatoes. Add the cream, a generous amount of pepper, and the nutmeg. Either spread the potato mixture over the chicken filling with a spatula, or transfer the mixture to a pastry bag fitted with a star tip and pipe the potatoes decoratively over the filling. With a pastry brush, gently dribble the melted butter over the potatoes. Bake the pot pie for 30 minutes, until the potatoes are golden brown and burnished in places.
