PIMENTO AND HABENERO MAC AND CHEESE



Pimento and Habenero Mac and Cheese image

One 16-ounce box pasta (your choice)
2 cups half-and-half (or 1 cup whole milk and 1 cup cream)
1 pound shredded sharp Cheddar
1 cup your favorite pimento cheese (homemade works best)
4 medium habeneros, seeded and chopped
2 teaspoons prepared yellow mustard
Salt and freshly ground black pepper
Cayenne pepper

Steps:

  • Preheat the oven to 400 degrees F. Prepare the pasta according to the directions on the box given for al dente pasta. Drain the pasta and put back in the same pot over low heat. Add the half-and-half, half the Cheddar, the pimento cheese and habaneros. Stir until melted and creamy. Stir in the mustard, salt and pepper. Pour into a 9 by 13-inch casserole dish, top with the remaining Cheddar and sprinkle with cayenne pepper. Bake until golden brown and bubby, about 20 minutes.

Habanero Apple Mac and Cheese image

A crowd pleasing main dish or impressive side for large groups or intimate dining. Creamy habanero cheese sauce with chopped apples to balance the spice. Finished under the broiler with crushed fresh ground pepper kettle chips on top. This is easily my most requested recipe.

1/2 cup butter
1/2 cup flour
1 1/2 cups milk
1/2 cup shredded habanero cheese (pepperjack can substitute)
1 cup shredded cheddar cheese or 1 cup colby-monterey jack cheese
1 -2 cup crushed kettle chips
pasta, of your choosing I recommend large shells
2 apples, diced
2 slices bacon (optional)
cajun seasoning

Steps:

  • Melt butter in medium sized saucepan over low-medium heat.
  • Once butter is melted, combine flour and stir until well incorporated. About 1-2 minutes.
  • Add milk and wait 3-4 minutes for the sauce to warm through.
  • Add 1/2 of the cheese and stir for 2-3 minutes.
  • Add remainder of cheese and stir 2-3 additional minutes.
  • At this point, the cheese sauce should be melted and creamy. If not, keep it over low-medium heat and stir occasionally. Add any additional milk as needed to adjust for desired consistency.
  • Cook pasta according to package, drain and place in 10 inch cast iron skillet.
  • If using peppered bacon, it should be ready at this point. Chop it and mix it with cheese sauce.
  • Mix chopped apples in with pasta and pour cheese sauce over, gradually mixing as you pour.
  • Crumble Kettle brand Fresh Ground Pepper Kettle Chips over the dish and place under broiler on high until they begin to brown.
  • Serve and enjoy!
