Yield Makes about 2 cups

Number Of Ingredients 8

2 ripe avocados (preferably Californian, such as Hass)
1 small onion, minced or diced
1 garlic clove, minced and mashed to a paste with ½ teaspoon kosher salt
½ teaspoon kosher salt
4 teaspoons fresh lime juice, or to taste
½ teaspoon ground cumin
1 fresh or pickled jalapeño, seeded and minced (optional)
3 tablespoons chopped fresh cilantro (optional)

Steps:

  • Halve and pit 2 ripe avocados and scoop the flesh into a mixing bowl.
  • Mash the avocados with a fork until the mixture reaches a coarse, chunky consistency. Stir in the remaining ingredients: 1 onion, minced, 1 garlic clove, minced and mashed to a paste with ½ tsp. salt, an additional ½ tsp. salt, 4 tsp. lime juice, ½ tsp. ground cumin, 1 jalapeño, seeded and minced, and 3 tablespoons chopped fresh cilantro, if using. Taste and adjust seasoning. MAKE AHEAD: This guacamole recipe can be made two hours in advance. Press plastic wrap flush with the surface of the dip to prevent oxidation. Let it come to room temperature before serving.

1/2 vidalia onion
1/2 ripe tomatoes
1 jalapeno
1 bunch fresh cilantro
3 avocados
1 lime, juice of
salt

Steps:

  • Dice onion, tomato, cilantro, and jalapeno. If you don't like spice, then remove seeds. Place in medium bowl.
  • Remove pits from avacados. Spoon the meat of the avacados from the skin. Smash with fork; I use a large meat fork. Add to bowl of vegetables.
  • Add juice and salt. Stir well.
  • Cover with saran wrap (it should be touching the guacamole to prevent air). Let set for one hour.
  • Serve with chips or on tacos, etc.

This guacamole is the definitive recipe, adapted from Josefina Howard, the chef at the original Rosa Mexicano restaurant in Manhattan. It is dead simple and easily scaled to serve a crowd, which is good, because you'll need a lot of it - even if you're the only one partaking.

3 tablespoons chopped onion
1/2 teaspoon minced Serrano chili, or more, to taste
1 1/2 teaspoons finely chopped cilantro leaves
1/2 teaspoon salt, or more, to taste
1 small vine-ripened tomato
1 ripe Hass avocado
Tortilla chips for serving

Steps:

  • In a medium-size bowl, mortar or a Mexican molcajete (lava stone mortar), thoroughly mash 1 tablespoon of the onion with the chili, 1/2 teaspoon cilantro and the salt to make a paste.
  • Cut the tomato in half horizontally, squeeze out the juice and seeds and discard. Chop pulp, and add it to the bowl.
  • Cut the avocado in half lengthwise, cutting around the pit. Gently twist the top half of the avocado off to separate the halves. Carefully rap the pit with the edge of a sharp knife and twist it out. Using a paring knife slice the avocado flesh of both halves lengthwise, then crosswise, cutting down to the skin, to form a grid. Scoop the avocado into the bowl with a spoon.
  • Add the remaining onion and cilantro, and gently fold all the ingredients together. Season with more chili and salt if desired. Serve at once with tortilla chips.

1 lime, juiced

½ cup diced onion

2 roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch ground cayenne pepper

  • In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.

3 ripe avocados (ripe as in really dark in color and slightly soft when squeezed)
1 small onion, finely diced
1 medium tomatoes, diced
1 lime (juice of )
salt and pepper (to taste )
Tabasco sauce (optional)

Steps:

  • Take avocados and cut into and around the circumference of the avocado's pit.
  • With both hands twist the two halves in opposite directions and pull apart.
  • Remove the pit with a knife or a spoon.
  • Carve out the flesh of the avocado with a tablespoon.
  • Place avocados into a medium bowl and mash and stir until moderately creamy. I use a fork or a pastry blender.
  • Some people like the avocados more chunky than others-- either way it tastes great.
  • Add diced onion and tomatoes to the avocados.
  • Add salt, pepper, tabasco sauce and lime juice and taste to see if seasoned enough to your liking.
  • In a separate small bowl put in 2 tablespoons of the dip.
  • Add 1 tbsp of sour cream and adjust your seasonings again.
  • Taste it and decide if you prefer your guacamole with or without sour cream.
  • If you like with sour cream add 4 tablespoons or more to the avocado mixture and adjust your seasonings again.
  • If not, do nothing and leave it like it is.
  • Serve chilled with chips or add a little to your taco salad, tacos or fajitas.
