GUACAMOLE CILANTRO LIME CHEESEBURGER
A Cheeseburger with a Southwestern citrus twist

Steps:
- Preheat an outdoor grill for medium heat.
- To make the guacamole, mash the avocado in a medium bowl with the juice of half a lime, jalapeno, tomatoes, 1/4 cup onion, and 1 1/2 teaspoons of minced garlic; season to taste with salt, and set aside.
- In a large bowl, mix together beef, the juice of half a lime, 1 tablespoon garlic, chili powder, 1/2 cup diced onion, and cilantro. Form the meat into 6 patties.
- Cook the burgers to desired doneness on the preheated grill. Add a slice of cheese to each burger during the last minute of cooking. Serve on toasted buns with a dollop of guacamole.

CILANTRO GUACAMOLE
Cilantro and avocado! My two favorite flavors combined in one recipe. Serve with chips or as part of just about any Mexican main dish.

Steps:
- Peel, seed and mash the avocado in a bowl.
- Add all the other ingredients.
- Serve right away, or refrigerate for a few hours after sprinking with some extra lime juice, then pressing plastic wrap onto the surface (keeps mixture from turning brown).
- Serve with tortilla chips.
CILANTRO LIME YUCCA CHIPS WITH GUACAMOLE

- In a large bowl, toss yucca, olive oil, half of the cilantro and the juice of one lime. Season chips with salt and pepper. Coat a baking sheet with nonstick spray, then lay yucca slices flat on a baking sheet. Bake for 4 to 6 minutes per side, or until golden brown.
- In a medium bowl, mix diced avocado with remaining cilantro and lime juice; season with salt and pepper and mash to your favorite consistency - I like mine chunky. Save those avocado shells to use as a serving "bowl."
