Very important to remove as much air as possible and to use a glass bowl to prevent oxidation. Also if you want it hotter coarsely chop all of the onion instead of just half.

2 califorina avocados
1/2 medium onion, finely chopped
1/2 medium onion, coarsley chopped
1 medium tomatoes, chopped 1/4 inch chunks
1 tablespoon garlic powder
1/8 teaspoon sea salt, finely ground

Steps:

  • Remove meat from avocados and place in glass mixing bowl.
  • Add all other ingredients and mix leaving about 1/2 of the avocado in good size chunks.
  • Press down in same glass bowl to remove all air pockets and place plastic wrap directly on mixture it's self, leaving NO AIR SPACE between mixture and top of glass bowl.
  • Put in refrigerator for one hour and serve.

Great for one or two over burritos, enchiladas or quesadillas or just as a dip. If the avocado is not quite ripe,place in a paper bag for a few days.

1 avocado, mashed
1 green onion, sliced
1 tablespoon lemon juice
2 tablespoons tomatoes
1 dash Tabasco sauce
salt & pepper

Steps:

  • Mix all ingredients together, Do not puree in a blender or food processor, mixture should be slightly lumpy.
  • Serve with tortilla chips or over taco, burritos, enchiladas and quesadillas.

We have an avocado tree in our backyard, and my neighbor has a fabulous lime tree in hers and I had to do something with them. My husband loves Mexican food. I make "Guac" for him as an evening snack because he would just eat the whole thing before I even put it in the refrigerator.

1 avocado (ripe)
1 roma tomato (slightly under-riped)
1/4 cup onion (finely chopped, I use white onion)
1/2 lime, juice of (about 2 tablespoon)
1 dash sea salt

Steps:

  • Coarsely chop the tomato and drain.
  • Half the avocado.
  • Remove pit (hold the half of avocado with the pit in one hand, firmly but gently smack a chef's knife into the pit until the knife sinks about half inch into the middle of the pit, twist the knife and the pit back and forth to loosen the pit and remove).
  • Score the flesh of the avocado with the tip of the knife.
  • Scoope out the flesh with a spoon into a small bowl.
  • Mash the avocado with a fork, leaving some chunks.
  • Fold in tomato, onion, lime juice and salt.
  • At this point, I usually watch my husband inhale the "guac" with some authentic chips from the local Mexican market.
  • Note: If you are going to put the "guac" into the refrigerator, save the pit and put it in with the "guac" to help preserve the avocado.
