GRILLED SAUSAGE SANDWICHES WITH CARAMELIZED ONIONS AND GRUYèRE CHEESE

Steps:
- Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add onions and sauté until slightly softened, about 5 minutes. Stir in vinegar, sugar and caraway seeds. Reduce heat to medium-low and sauté until onions are deep brown and very tender, about 20 minutes longer. Season to taste with salt and pepper. (Can be prepared 2 hours ahead. Let stand at room temperature. Rewarm over low heat before using.)
- Preheat broiler. Brush 11x7-inch metal baking pan with oil. Place sausages in pan. Broil until sausages are brown and crisp, about 6 minutes per side. Transfer sausages to work surface and cut lengthwise in half.
- Arrange 3 sausage halves on each of 2 bread slices. Spread 2 teaspoons mustard over sausages on each. Top sausages with caramelized onions, dividing equally. Top with Gruyère or Emmenthal cheese slices, dividing equally. Cover with remaining 2 bread slices. Spread half of butter over upper bread slices.
- Heat large nonstick skillet over medium-low heat. Carefully invert sandwiches, buttered side down, into skillet. Cover and cook until bottoms are brown, about 5 minutes. Spread remaining butter over upper bread slices. Turn sandwiches, cover and cook until bottoms are brown, about 4 minutes longer.
APPLE AND GRUYèRE CHEESE TARTS

- Heat oven to 400°F. Unroll pie crusts; roll each crust into 12-inch round. Using 3 1/2-inch round cutter, cut 10 rounds from each crust, rerolling dough if necessary. Press each round into ungreased regular-size muffin cup.
- In medium bowl, mix apple and cheese cubes; set aside.
- In 8-inch skillet, melt butter over medium heat. Add shallots, cook 2 to 4 minutes, stirring occasionally, until tender. Remove from heat; stir into apple mixture. Spoon heaping tablespoon apple-shallot mixture into each cup.
- Bake 24 to 27 minutes or until crust is golden brown and cheese is melted. Cool in pans 5 minutes. Remove from muffin cups.
- Meanwhile, in medium bowl, stir nuts, cranberries and thyme. Spoon about 1 teaspoonful nut mixture over each tart. If desired, garnish tarts with additional thyme sprigs. Serve warm or cool.

ENDIVE, APPLE AND WALNUT SALAD
This classic French combination makes a great autumn and winter salad. Walnuts and apples are always a good mix, and their flavors contrast nicely with the bitter endive. Gruyère cheese has a nutty flavor and adds a bit of protein, as well.

- Remove any damaged outer leaves of the endives and rinse with cold water. Dry with paper towels, then separate the leaves, or slice crosswise, about 1/2 inch thick. Place in a wide salad bowl. Add the walnuts, gruyère, parsley and tarragon.
- Quarter the apple and cut away the core, then slice very thin (you should have at least 16 slices). Place in a bowl of water acidulated with 1 tablespoon lemon juice.
- Whisk together the vinegars, lemon juice, mustard, salt, and pepper. Whisk in the oils. Taste and adjust seasonings.
- Drain the apple slices, dry on paper towels, then add to the salad bowl. Toss with the dressing and serve.
