PAN SEARED GROUPER WITH TROPICAL SALSA



Pan Seared Grouper with Tropical Salsa image

2 cups cubed mango
2 cups cubed pineapple
2 cups cubed papaya
1 cup diced roasted peppers
1 bunch diced cilantro leaves
2 limes, juiced
2 tablespoons diced jalapenos
2 tablespoons olive oil
8 to 10 ounces grouper fillet per person
Cajun spice, for coating
Mixed greens, for serving

Steps:

  • To make the tropical salsa: Mix all ingredients except oil, grouper and Cajun spice. Let sit while you prepare the grouper.
  • To make the grouper: In a cast iron frying pan, heat olive oil until smoking. Coat both sides of grouper with Cajun spice. Place coated grouper in pan. Cook for 2 to 3 minutes per side (depending on thickness) until done. Transfer grouper to a serving dish, placing on top of mixed greens. Spoon Tropical Salsa on top of fish.
  • * Cook's Note: This recipe also works well with flounder and other types of fish.

4 Fresh Grouper filet
2 teaspoons Cajun spice (1 teaspoon for flour)
2 teaspoons Lime Juice
1/2 bunch Cilantro (chopped)
2 and 1/4 cup Olive Oil (2 cups for sauteing fish)
2 cups flour
Salt and pepper to taste
1 whole pineapple (Julienne)
4 mint leaves (diced)
5 large Strawberry (sliced)
2 teaspoons agave
1/2 lime (juiced)
1/2 lemon (juiced)
1/2 orange (juiced)
2 leaf basil (chopped)
1 pound mixed greens
1/4 cup olive oil

Steps:

  • Place fish, Cajun spice, lime juice and cilantro in mixing bowl and allow ingredients to marinate for 30 minutes in the refrigerator. Place flour on a cookie sheet, seasoning the flour with 1 teaspoon of Cajun spice and salt/pepper. Roll fish in flout creating a nice even coat. Shake off excess flour. Warm olive oil over medium heat in a non-stick pan. Once oil is hot, place fish side down for 3 minutes, flip fish and complete the same process. Remove fish from oil, placing on a rack to remove excess oil. Place fish on plate and garnish with salad.
  • In a large mixing bowl mix all ingredients together. Place in refrigerator for 30 minutes. Toss with mixed greens. Serve alongside fish or any spring time poultry.

A super simple broiled grouper fillet recipe for all of you grouper groupies. Fillets 1 inch thick take about 12 to 14 minutes to cook properly. If using thinner fillets, reduce cooking time accordingly.

½ cup butter, melted
2 tablespoons lemon juice
¼ teaspoon garlic salt
½ teaspoon dried parsley
⅛ teaspoon paprika
¼ teaspoon ground white pepper
2 pounds grouper fillets
2 tablespoons mayonnaise
⅛ teaspoon paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Combine melted butter and lemon juice in a small bowl. Brush 2 tablespoons of this mixture on a piece of foil placed on the broiler pan.
  • Mix together garlic salt, parsley, paprika and white pepper. Sprinkle spice mixture on both sides of fillets.
  • Bake fillets until meat flakes, about 10 minutes. Brush fillets again with lemon butter and spread with mayonnaise. Sprinkle with paprika before serving.

2 (6 ounce) grouper fillets
1/2 cup coarsely chopped pineapple (I prefer fresh pineapple)
1/4 cup finely chopped red onion
1/4 cup finely chopped red bell peppers or 1/4 cup green bell pepper
1/4 cup diced fresh tomato, seeds removed
2 stalks green onions, finely chopped
1 small jalapeno pepper, seeded and finely chopped
2 tablespoons lime juice
1 tablespoon chopped fresh cilantro
2 tablespoons vegetable oil
salt and pepper, to taste

Steps:

  • In a medium mixing bowl, combine pineapple, red onion, bell pepper, tomatoes, green onions, jalapeno, lime juice and cilantro.
  • Add salt and pepper, to taste.
  • Set aside.
  • In a medium frying pan, heat vegetable oil over medium high heat.
  • Sprinkle grouper with salt and pepper.
  • Saute grouper for 3 to 4 minutes each side or until fully cooked.
  • Remove fish from pan, top with pineapple salsa and serve immediately.
