GROUPER NUGGETS
I made these for an appetizer last night for me and the guys watching football. They were easy and a big hit!!! I used a FryDaddy and they turned out perfect.

Steps:
- Cut the grouper fillets in half lengthwise.
- Then cut into 1 inch strips. (use scissors).
- Place nuggets of grouper in a bowl with the buttermilk and hot sauce.
- Refrigerate 30-60 minutes.
- Heat oil in a pot or heat your electric fryer.
- Using your hand, strain out the buttermilk and then crack the egg into the bowl.
- Mix the egg around.
- Put the crackers, garlic salt, and pepper into a food processor and process until pretty finely ground. (not too fine).
- Put the crackers onto a plate and coat the nuggets one at a time, dropping into the hot oil as you go.
- These fry up really quick (in like 2 minutes).
- Serve with cocktail sauce.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Combine melted butter and lemon juice in a small bowl. Brush 2 tablespoons of this mixture on a piece of foil placed on the broiler pan.
- Mix together garlic salt, parsley, paprika and white pepper. Sprinkle spice mixture on both sides of fillets.
- Bake fillets until meat flakes, about 10 minutes. Brush fillets again with lemon butter and spread with mayonnaise. Sprinkle with paprika before serving.

GROUPER WITH TOMATO AND BASIL
Steps:
- Working off heat, put 1 tablespoon oil in a 10-inch nonstick skillet and add fish, turning to coat with oil on both sides. Arrange fish skinned sides down and sprinkle with salt and pepper.
- Toss together tomato, garlic (if using), basil, remaining tablespoon oil, and salt and pepper to taste in a small bowl, then mound on top of fish. Cover skillet with a tight-fitting lid and cook fish over moderately high heat until just cooked through, about 8 minutes.
