Pork and poblano tacos with kiwi salsa and lime crema.

1 red onion, halved and thinly sliced
1 Roma tomato, seeded and finely chopped
1 ripe kiwi, diced
1 lime, quartered, divided
2 tablespoons chopped cilantro, divided
salt and ground black pepper to taste
4 tablespoons sour cream
olive oil
1 poblano pepper - cored, seeded, and finely chopped
10 ounces ground pork
1 tablespoon Mexican seasoning
2 tablespoons chicken stock
1 tablespoon tomato paste
6 flour tortillas

Steps:

  • Mince a few slices of onion to get 1 tablespoon. Add minced onion, tomato, kiwi, juice from 2 lime wedges, 3/4 of the cilantro, salt, and pepper to a small bowl. Mix into a salsa.
  • Juice 1/4 of the lime into another small bowl; mix in sour cream to make the crema.
  • Heat olive oil in a large pan over medium-high heat. Add sliced onion and poblano pepper. Cook, tossing occasionally, until softened and lightly charred, 3 to 4 minutes. Add pork and Mexican seasoning. Cook until pork is browned throughout, 4 to 5 minutes. Reduce heat to medium-low. Add chicken stock, tomato paste, salt, and pepper. Cook and stir until everything is coated, 1 to 2 minutes.
  • Wrap tortillas in a damp cloth and microwave for 30 seconds. Divide tortillas over plates; spread cream on top. Top tortillas with pork mixture and salsa. Garnish with remaining cilantro.

I was searching for a way to use up some ground pork, and found this on a pork association website. I've altered the original recipe slightly, to suit our tastes. This is just as quick and easy to make as the standard hamburger and store-bought seasoning packet version, with a different flavor that's sure to please!

1 lb ground pork
1 (8 ounce) can diced tomatoes
1/2 cup diced onion
1 tablespoon chili powder
1 tablespoon garlic powder
8 flour tortillas (or 8 hard taco shells)
shredded cheese or sour cream, etc. for garnish

Steps:

  • Brown the ground pork in a large skillet.
  • Add in undrained tomatoes, onion, and seasonings.
  • Bring to a boil, then reduce heat to a simmer, stirring occasionally, until most of the liquid is gone- about 10 minutes.
  • Spoon mixture into tortillas or taco shells, garnish as desired, and enjoy!

These peach and pork tacos are a Mexican delight.

1 cup canned peaches, juice reserved
2 cloves garlic, minced
1 tablespoon honey
salt and ground black pepper to taste
½ pound ground pork
8 (6 inch) whole wheat tortillas
cooking spray
1 cup cooked brown rice
1 tablespoon minced fresh ginger root
2 cups baby arugula
1 cup shredded red cabbage
1 cup crumbled goat cheese

Steps:

  • Mix reserved peach juice with garlic, honey, salt, and pepper. Combine marinade with ground pork and chill for 10 minutes. Dice 1/2 cup peaches and set aside.
  • Keep tortillas warm in a pan over low heat or in the oven.
  • Heat a saute pan over medium heat and grease with cooking spray. Drain marinade from pork and discard. Add pork to pan and cook until browned, 5 to 7 minutes. An instant-read thermometer inserted into the meat should read 145 degrees F (63 degrees C).
  • Add ginger to cooked brown rice and mix well. Assemble tacos by adding arugula, red cabbage, rice, pork, goat cheese, and diced peaches to the tortillas.
