SPICY GROUND BEEF TACOS

Steps:
- Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the onion and cook, stirring occasionally, until tender, about 4 minutes. Add the tomato paste, Worcestershire sauce, chili powder, cumin, coriander, paprika, oregano and garlic powder; cook, stirring, until the onion is coated, about 1 minute.
- Add the beef, 1 teaspoon salt and a few grinds of pepper to the skillet. Cook, breaking up the meat, until no longer pink, about 5 minutes. Add the tomatoes, hot sauce and 1/4 cup water and bring to a simmer. Reduce the heat and cook, stirring occasionally, until the juices are slightly thickened, 5 to 7 minutes. Season with salt and pepper.
- Meanwhile, warm the taco shells as the label directs. Fill with the beef mixture and top with lettuce, cheese and/or pickled jalapenos.

Who doesn't like some version of a taco, there are so many. This is one of my family's favorites, as long as they get to pick their own toppings.

Steps:
- In a 2 quart sauce pan add ground beef, salt, chili powder, garlic, cumin, paprika, and enough water to cover meat.
- Bring to a boil.
- Simmer for about an hour.
- Add bell pepper and onion. Continue simmer for 20 to 30 minutes. (Until bell pepper and onion are fully cooked).
- Meat can be used at this time or cooled for later depending on your meal schedule. I like to make the meat mixture ahead of time.
- Full Corn Tortilla Shells just about 1/2 way full or desired amount.
- Put into a preheated oven (300) for about 10 minutes or until completed heated through.
- Ready to Serve!

GROUND BEEF TACOS
Making a ground beef taco filling ain't rocket science. You just cook ground meat with Tex-Mex seasonings. This recipe is a little spicy, but feel free to skip the serranos and substitute a packaged taco seasoning mixture for the spices, especially if you're cooking for kids. Many taco seasoning mixes, such as Old El Paso and Ortega, come in your choice of spicy or mild.

- For the filling:
- Heat the oil in a skillet over medium-high heat and cook the onion until it begins to wilt, about 2 minutes. Add the meat and sear, chopping with a spatula into small pieces until the pink color is gone. Add the garlic and chile and cook for 2 minutes or until the garlic is soft. Add the salt, chili powder, black pepper, cumin, and a tablespoon of water, mix well, and cook for 2 to 3 minutes or until well blended.
- Assembly:
- To assemble the tacos, put 1/4 cup meat mixture, then 1/4 cup each cheese, chopped tomato, and lettuce on each taco shell. Drizzle with salsa if desired.

THE BEST GROUND BEEF TACOS ON THE PLANET.
OK, I MIGHT be a bit over confident in the title... but my family doesn't think so! This takes just a little bit of work and some time to simmer and will (IMHO) make you completely incapable of ever using a taco seasoning packet again. Try not to use dried onion or garlic as it really does make a huge difference in the end product. You may need to play with the amounts of the chile powder and crushed red pepper depending on how hot you like your taco meat. This recipe is reasonably mild, but YMMV Finally, try to get some high quality chile powder made with a blend including ancho and chipotle chiles. Most bulk "chile powder" out there has salt, garlic and "other spices" in it and is not even CLOSE to as good as the "real" thing! I hope you enjoy these as much as my family does!

- Add the ground beef and cook until it is nearly, but not quite, all browned.
- Add the minced garlic and continue cooking until the ground beef is completely browned through.
- Add all the remaining ingredients, including enough water to ensure the spices get evenly distributed throughout the mixture, but not so much that it's going to take forever to cook off.

- 1. Dice potatoes into a pot of water and boil them until done...add enough salt for your taste.Drain water from potatoes and set aside.
- 2. Fry the ground beef in a large frying pan. After the meat is done pour 1 1/2 cans of the El Pato into the meat and simmer for 10 minutes. Add garic also.
- 3. Pour your cooked potatoes into the ground meat and mash potatoes into meat with a fork.
- 4. In a large frying pan heat up enough vegetable oil that will cover the bottom of fry pan and that will fry the corn tortillas. With a pair of tongs hold the tortilla and submerge half in hot oil, then with a fork put some of the meat mixture the tortilla and fold the rest of tortilla over the meat.fry until golden brown on both sides. Put taco on paper towels to drain off excess oil.
- 5. Garnish with cheese, lettus, tomatoes, onion...and enjoy.

GROUND BEEF CON MOLE TACOS
I got this recipe from a Better Homes and Garden magazine all on Mexican food. I have made this recipe a few times now for a variety of people and everybody LOVES it! It's awesome and a must try! The recipe calls for hominy, and I always forget to buy it so I throw some corn in the mixture and it's good and adds a little color. It looks a little intimidating because of the number of ingredients but takes 35 minutes total to prep and cook and well worth every minute of it!

- In a large skillet, cook beef until browned. Remove beef from skillet, drain, and keep warm.
- In same skillet, healt oil over medium-high heat. Add garlic; cook and stir for 1 minute. Stir in sweet pepper, onion, and 1/2 tsp salt for about 5 minutes or until onions and peppers are softened.

- Add the onion, cumin, red pepper flakes, and oregano; cook for 1-2 minutes, stirring often, until aromatic.
