1 pound ground beef
2 cans (10-3/4 ounces each) condensed cream of potato soup, undiluted
1-1/2 cups frozen peas, thawed
1-1/2 cups frozen sliced carrots, thawed
4 cups mashed potatoes (with added milk and butter)

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink; drain. Add soup, peas and carrots. Pour into a greased 11x7-in. baking dish. Top with potatoes., Bake, uncovered, 30-40 minutes or until heated through.

1 small onion, chopped
2 garlic cloves, minced
1 can (10-1/2 ounces) beef gravy
1 cup frozen mixed vegetables

3 tablespoons unsalted butter
1 medium onion, diced
3 medium carrots, peeled and sliced
1 rib celery, sliced
1/2 pound cremini mushrooms, quartered
2 cloves garlic, minced
1 tablespoon kosher salt
3/4 teaspoon dried oregano
3 tablespoons tomato paste
1 pound ground beef
1/4 cup canned low sodium beef broth
1/2 teaspoon Worcestershire sauce
Freshly ground black pepper
4 cups Mashed Potatoes, recipe follows
1/4 cup grated Parmesan, optional
1 1/2 pounds russet potatoes, peeled quartered
2 teaspoons kosher salt, plus more for seasoning
3/4 cup whole milk
6 tablespoons unsalted butter
2 tablespoons chopped fresh flat-leaf parsley
Freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Heat the olive oil and 2 tablespoons of the butter in a large skillet over medium heat. Add the onion, carrots, celery, mushrooms, garlic, half the salt, and oregano. Cook until vegetables are tender, about 10 minutes. Stir in the tomato paste and cook until mushrooms are soft and tomato paste has turned brick red, about 8 minutes more. Stir in the beef, the broth, the remaining salt, the Worcestershire, and some pepper, breaking up any large clumps of meat, cook until the meat is no longer pink, about 3 minutes.
  • Transfer the meat and vegetables to a 2-quart oval casserole dish and spread the mashed potatoes over the top, leaving a 1/4-inch boarder around the edge. Bake until potatoes brown and the juices bubble around the edge, about 40 minutes. Let cool for 10 minutes before serving.

3 large potatoes (diced into 1 inch squares)
6 garlic cloves (thinly sliced)
1/4 cup butter
1/2 cup 1% low-fat milk
1 (398 ml) can creamed corn
1 (398 ml) can kernel corn
1 lb ground beef (Extra Lean)
2 large carrots (Finely chopped)
1 large onion (Finely chopped)
1/4 cup parmesan cheese
salt and pepper

Steps:

  • Dice peeled potatoes and garlic and boil together in a large pot until potatoes are soft enough to mash. Drain potatoes and mash. Add butter and milk and continue to mash until soft. Season with salt and pepper to taste. Set aside.
  • Brown ground beef in a large skillet. Add carrots and onions and cook until softened. Salt and pepper to taste.
  • Using 2 litre casserole dish, pack ground beef mixture onto bottom of casserole dish. Spread creamed and kernel corn onto ground beef and top with dollops of mashed potatoes until they cover the corn completely. Smooth off the top of the mashed potatoes and sprinkle parmesan cheese over the potatoes.
  • Cook the Shepherd's Pie in a 350F oven for 45 minutes or until bubbles appear along the sides.

Instead of mixed vegatbles, you can use a can of corn, peas... or half and half! Mom always did peas and corn, I prefer mixed vegetables. Enjoy!

1 (10 1/2 ounce) can beef gravy

This shepherd's recipe has a couple of secret shortcuts that'll help you have it on the table in under an hour-perfect for a weeknight meal!

1 teaspoon olive oil
1 small onion, finely chopped (1/3 cup)
1 1/2 lb ground beef sirloin
2 cups frozen mixed vegetables (from 12-oz bag)
3 tablespoons tomato paste
1/2 teaspoon salt
1/4 teaspoon pepper
1 3/4 cups Progresso™ beef-flavored broth (from 32-oz carton)
2 tablespoons Gold Medal™ all-purpose flour
1 package (20 oz) refrigerated mashed potatoes

Steps:

  • Heat oven to 375°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray.
  • In 12-inch skillet, heat oil over medium-high heat. Cook onion in oil 5 minutes, stirring occasionally, until soft. Add beef; cook 5 to 7 minutes, stirring occasionally, until thoroughly cooked. Drain.
