CALIFORNIA GRILLED VEGGIE SANDWICH

I came up with this recipe to entertain friends. Since I am a semi-vegetarian and love to BBQ, I am always inventing something new. The first time I made this, my meat-lover friends raved about this dish! I prefer mesquite coals over gas barbeques...however, either works fine.

¼ cup mayonnaise
3 cloves garlic, minced
1 tablespoon lemon juice
⅛ cup olive oil
1 cup sliced red bell peppers
1 small zucchini, sliced
1 red onion, sliced
1 small yellow squash, sliced
2 (4-x6-inch) focaccia bread pieces, split horizontally
½ cup crumbled feta cheese

Steps:

  • In a bowl, mix the mayonnaise, minced garlic, and lemon juice. Set aside in the refrigerator.
  • Preheat the grill for high heat.
  • Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill, and set aside.
  • Spread some of the mayonnaise mixture on the cut sides of the bread, and sprinkle each one with feta cheese. Place on the grill cheese side up, and cover with lid for 2 to 3 minutes. This will warm the bread, and slightly melt the cheese. Watch carefully so the bottoms don't burn. Remove from grill, and layer with the vegetables. Enjoy as open faced grilled sandwiches.

1 ½ cups coleslaw mix
½ cup bean sprouts
8 thick slices (3/4 inch thick) sourdough bread
3 tablespoons margarine, softened
3 tablespoons honey mustard
6 ounces sliced Havarti cheese

Steps:

  • In a medium bowl, toss together the coleslaw mix and bean sprouts.
  • Spread one side of each bread slice with margarine. Spread opposite side of 4 slices with honey mustard. Layer the honey mustard side of the 4 bread slices with the coleslaw mixture and cheese. Top with remaining 4 bread slices, margarine side out.
  • In a large skillet over medium heat, cook the sandwiches about 2 minutes on each side, until the cheese has melted and the bread is golden brown.

2 Tbsp red pepper hummus
4 slice multi grain bread loaf
1/2 avocado
1/2 tsp lemon juice
2 slice monterey jack cheese
1 red bell pepper, roasted
4 slice cucumber, peeled and sliced lengthwise
2 slice tomato
1/4 c alfalfa sprouts
salt and pepper to taste
grilled veggies of choice. (season)

Steps:

  • 1. Slice the avocado and squeeze lemon juice and salt & pepper. Set aside. Spread roasted red pepper hummus on each slice of bread.
  • 2. Next, top with cheese slices. Place roasted veggies on one side of bread. Used roasted red pepper and zuchinni.
  • 3. Cover with cucumber and tomato slices. Season with S&P Top w/california avocado & sprouts and cover with second slice of bread. Cut in half and enjoy!

3 tablespoons butter (softened)
8 slices of a good bread
3 -4 tablespoons honey mustard
1 1/2 cups coleslaw mix (either regular or broccoli mix)
6 ounces swiss cheese (or other desired)

Steps:

  • Spread butter over one side of all the slices of bread.
  • Put four slices on a griddle, butter side down, and generously spread mustard over the top-side of the slices.
  • Layer each slice of bread with one-fourth of the coleslaw mix and one-fourth of the cheese.
  • Top with remaining bread, butter side up.
  • Toast until the bread is lightly browned on each side and cheese is melted.

3 tablespoons olive oil, divided
1 ½ teaspoons kosher salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
1 orange bell pepper, seeded and sliced into 1/2 in wide strips
1 red bell pepper, seeded and sliced 1/2 in wide strips
1 zucchini, sliced lengthwise into 1/4 in thick planks
1 yellow squash, sliced lengthwise into 1/4 in thick planks
4 ½ tablespoons French's® Creamy Mustard, plus more for drizzling
6 ciabatta rolls
1 ¾ cups arugula
3 tablespoons fresh basil, chopped
½ lemon, juiced
red pepper flake, to taste
2 balls burrata

Steps:

  • In a large bowl, toss the orange and red bell peppers, zucchini, and yellow squash with 2 tablespoons olive oil, the salt, and black pepper until well-coated.
  • Heat the grill (or a grill pan) to medium heat, then grill the vegetables, flipping once, until tender, about 15 minutes. Remove the vegetables from the grill and set aside.
  • Slice the ciabatta rolls in half, then spread the French's® Creamy Mustard on both halves.
  • Reduce the heat on the grill to medium-low. Place the ciabatta rolls on the grill, cut-side down, and toast for about 3 minutes, until golden brown.

1 eggplant, thinly sliced
1 small onion, thinly sliced

6 sun-dried tomatoes packed in oil, drained & thinly sliced
8 slices firm polenta

Steps:

  • In a nonstick skillet over medium heat warm 3 tablespoons of olive oil. Add the eggplant and saute until very soft (8 minutes).
  • Season with salt and pepper and transfer to a bowl (keep warm).

1 large wala wala onion, sliced thickly
2 medium zucchini, sliced thickly
10 large button mushrooms, cut in half
1/2 loaf garlic bread or 1/2 loaf French bread, sliced horizontally
8 slices cheese (I used pepperjack)
3 garlic cloves
3 sprigs fresh thyme
3 sprigs fresh rosemary
salt
pepper
olive oil

Steps:

  • Start up your grill.
  • Make your marinade by mashing the garlic, thyme, rosemary, salt, and pepper using a mortar and pestle. Add olive oil to cover this and mix well.
  • Using a brush, brush one side of the onion slices and place the oiled side on the grill. Brush the other side. Cook until grill marks are shown and the onion is slightly browned and translucent. Do the same with the zucchini. You may have to cook these in batches, I cooked the onions first, then zucchini, then mushrooms. If you are doing it this way, once the onions are off and the zucchini are on, take the rest of your marinade mixture and using the oil only, mix the rest of the marinade on your mushrooms and let set while the zucchini are grilling. Cook mushrooms and then pull everything off the grill.
  • Take your garlic bread or french bread and place, cut side down, directly on the grill. If using garlic bread you will probably get flames as the butter and oils drip down onto the coals. Be careful! The bread only needs to be on for a few minutes, until slightly toasted. Watch this carefully.
  • Remove the bread and construct your open faced sandwich. Bread, zucchini, onions, mushrooms, cheese. Put back on the grill (non-heat side) and cover until cheese melts. Remove and get ready for some goodness.
