1/4 cup olive oil
1 teaspoon salt
1 teaspoon dried parsley flakes
1 teaspoon dried basil
3 large ears fresh corn on the cob, cut into 3-inch pieces
2 medium zucchini, cut into 1/4-inch slices
1 medium yellow summer squash, cut into 1/4-inch slices
1 medium sweet onion, sliced
1 large green pepper, diced
10 cherry tomatoes
1 jar (4-1/2 ounces) whole mushrooms, drained
1/4 cup butter

Steps:

  • In a large bowl, combine the oil, salt, parsley and basil. Add vegetables and toss to coat. Place on a double thickness of heavy-duty foil (about 28 in. x 18 in.). Dot with butter. Fold foil around vegetables and seal tightly. , Grill, covered, over medium heat for 20-25 minutes or until corn is tender, turning once. Open carefully to allow steam to escape.

4 ounces green beans

1/2 teaspoon salt

1/4 teaspoon garlic pepper
1/4 teaspoon ground cumin

Steps:

  • Heat coals or gas grill for direct heat. Spray 24x18-inch piece of heavy-duty aluminum foil with cooking spray.
  • Toss all ingredients in large bowl. Spoon mixture onto foil. Fold foil over vegetables so edges meet. Seal edges, making tight 1/2-inch fold; fold again. Allow space on sides for circulation and expansion.

1 medium sweet potato, peeled and cut into chunks
4 tablespoons butter, melted, divided
4 to 6 garlic cloves, minced, divided
2 tablespoons minced fresh parsley, divided
1-1/2 teaspoons salt, divided
1/2 teaspoon lemon-pepper seasoning, divided
3/4 pound whole fresh mushrooms
1 large onion, sliced
1 medium green pepper, cut into 1/4-inch slices
1 small zucchini, cut into chunks
1 medium yellow summer squash, cut into chunks
1 cup shredded part-skim mozzarella cheese or shredded Swiss cheese
Sour cream, optional

Steps:

  • Place potatoes and sweet potato on an 18x15-in. piece of heavy-duty foil. Drizzle with half of the garlic, parsley, salt and lemon-pepper. Seal packet tightly. 1 medium red bell peppers or 1 medium yellow bell pepper, cut into 1/4 inch strips
1 medium zucchini, cut crosswise into 1/4 inch slices

1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme leaves

1/2 cup Italian herb dressing
3 cloves garlic, finely chopped
2 pork tenderloins (about 1 pound each)
3 small onions, cut into fourths
2 medium zucchini, cut into 1/2-inch slices
1 cup baby carrots, cut lengthwise into fourths
1 large red bell pepper, cut into 1-inch pieces
2 cups whole mushrooms
2 tablespoons Italian herb dressing
Grated Parmesan cheese, if desired

Steps:

  • Mix 1/2 cup dressing and the garlic in shallow glass or plastic dish or resealable plastic food-storage bag. Add pork; turn to coat with marinade. Cover dish or seal bag and refrigerate at least 2 hours but no longer than 12 hours.
  • Heat coals or gas grill for direct heat. Mix remaining ingredients except cheese in square aluminum pan, 9x9x2 inches.
  • Remove pork from marinade; reserve marinade. Cover and grill pork and pan of vegetables 4 to 5 inches from medium heat 15 to 20 minutes, brushing pork occasionally with marinade and turning once, until pork is slightly pink in center and vegetables are crisp-tender. Stir vegetables 2 or 3 times during grilling. Discard any remaining marinade.
  • Cut pork into slices. Sprinkle cheese over vegetables.

3/4 cup blue cheese, crumbled
6 tablespoons unsalted butter, softened
1 teaspoon fresh lemon juice
salt and pepper
2 tablespoons olive oil
1 tablespoon fresh basil, chopped
3 garlic cloves, roasted and mashed
2 lbs vegetables (asparagus, zucchini, yellow squash, carrots, and eggplants, peeled, trimmed and sliced)

Steps:

  • In a small bowl, blend blue cheese, butter and lemon juice thoroughly. Season with salt and pepper. Cover with plastic wrap and refrigerate until ready to serve.
  • In a blender, combine olive oil, basil and roasted garlic and blend until smooth. Pour over the vegetables. Season with salt and pepper and marinate for 20 minutes. Grill the vegetables over medium-high heat and create grill marks on all sides, approximately 4 minutes each.

4 rib-eye steaks or cut of preference
2 summer squash, cut diagonally
2 bell peppers, seeded & quartered
1 large onion, cut into discs

garlic powder
McCormick's steak seasoning
olive oil
Asian-Glaze (for chicken)
1/2 cup ketchup
2 tbsp honey
2 tbsp soy sauce
1 tbsp chili powder
1/2 tsp ginger powder
1/2 tsp garlic powder

Steps:

  • 1. Wash vegetables thoroughly under cold water. For the summer squash, cut into large diagonal pieces; onion, cut into flat discs; bell peppers, seed and quarter. Place in air-tight container until ready to use. Other vegetables can be substituted in likewise manner. 2. Wash chicken breasts under cold water and pat dry with paper towel. Cut 4 or 5 slits 1/2-inch in depth on the outer, smooth surface of the breasts. Sprinkle a generous amount (approx. 1/2 tsp) of salt, pepper, and garlic powder for each chicken breast. Repeat the same process with steak pieces and flavor with Lowry's steak seasoning as well. Transfer to an air-tight container until ready to use. 3. On low-burning flame, double wrap foil on the grill and apply a generous amount of olive oil to prevent sticking. Place the chicken breasts, steaks, and vegetables accordingly and cook until well browned and slightly charred. Vegetables will cook much quicker so adding them later is acceptable. For the chicken Asian-glaze, baste during the last 3 minutes of cooking. 4. Cut into the steak and chicken breast to ensure it's fully cooked. Transfer to a serving dish and enjoy while hot. Serve with accompanying sauces like steak or barbecue sauce for extra flavor.
