6 tablespoons fresh lemon juice
4 tablespoons, plus 1 teaspoon, olive oil
1 teaspoon chopped rosemary
2 cloves garlic, peeled and minced
Freshly ground pepper to taste
4 6-ounce tuna steaks
4 red bell peppers, cored, halved, seeded and deribbed
Salt to taste

Steps:

  • Combine the lemon juice, 4 tablespoons olive oil, rosemary, garlic and ground pepper in a shallow dish. Add the tuna and turn to coat well on all sides. Let marinate for 1 hour, turning tuna from time to time.
  • Preheat a grill or broiler. Brush the remaining teaspoon of olive oil over both sides of the pepper halves. Grill or broil the tuna and peppers until the tuna is charred on the outside but still pink in the center, about 4 minutes per side, and until the peppers are crisp-tender, about 3 minutes per side. Divide among 4 plates, season the tuna with salt and pepper to taste and serve immediately.

  • Cook pasta in a large pot of boiling salted water until al dente.

TUNA WITH RED BELL PEPPER SAUCE

Tuna steaks are best seared quickly, leaving the flesh still pink and almost raw inside. The sauce is also good with other grilled or pan-fried fish.

4 fleshy red bell peppers
2 garlic cloves, unpeeled
3 tablespoons red or white wine vinegar
3 tablespoons extra virgin olive oil
3 tablespoons olive oil
4 thick tuna steaks
Salt
1 to 2 tablespoons chopped flat-leaf parsley

Steps:

  • Prepare the sauce first. Place the peppers and garlic on a sheet of foil on an oven tray and place under a preheated broiler, 2 1/2 to 6 1/2 inches from the broiler. Turn the peppers until their skins are black and blistered all over. Remove the garlic when it feels soft. Alternatively-and more easily-roast both the peppers and garlic in the hottest oven for about 30 minutes (take out the garlic much sooner, when it feels soft), or until the peppers are soft and their skins blistered and blackened, turning them once after 15 minutes.
  • To loosen their skins further, put the peppers in a strong plastic bag, twist it shut, and leave for 10 to 15 minutes. Another old way that has the same effect is to put them in a pan with a tight-fitting lid for the same length of time. When the peppers are cool enough to handle, peel them and remove and discard the stems and seeds. Peel the roasted garlic cloves.
  • Blend the roasted peppers and garlic in a food processor with the rest of the sauce ingredients.
  • Heat the oil in a large, preferably nonstick, skillet. Put in the tuna steaks and cook over high heat for less than 1 minute on each side, sprinkling lightly with salt. The time depends on the thickness of the piece. Cut into a steak with a pointed knife to test it; it should be soft and still pink inside.
  • Serve the tuna steaks on top of the sauce, sprinkled with the chopped parsley.

2 tablespoons extra-virgin olive oil
Salt and fresh ground black pepper
Oven-Roasted Peppers, recipe follows
2 green bell peppers
2 red bell peppers
2 yellow bell peppers
1 teaspoon chopped fresh thyme leaves
1 teaspoon chopped fresh oregano leaves
1 teaspoon chopped fresh basil leaves
1 tablespoon minced shallots
1 clove garlic, minced
2/3 cup extra-virgin olive oil
1 tablespoon balsamic vinegar

Steps:

  • Preheat grill to high heat.
  • Rub olive oil over each steak and season with salt and pepper. Transfer steaks to grill and cook for 2 to 3 minutes per side for rare. Place in the refrigerator to make the slicing easier.
  • Serve with Oven-Roasted Peppers.
  • Over a gas flame, or under the broiler, roast peppers until the skin blisters and turns black, turning with tongs so they get evenly charred. Place the peppers in a bowl and cover with plastic for 15 to 20 minutes. Uncover, peel off the blackened skin, remove the core, and discard the seeds and ribs. Cut the peppers into thin strips and place in a clean bowl. Add the fresh herbs, shallots, garlic, olive oil, and balsamic vinegar and toss to combine.

1 1/4 cup olive oil
5 anchovy fillets
1 large shallot, coarsely chopped

1 cup pitted and coarsely chopped nicoise olives

  • Combine mayonnaise, vinegar, olive oil, anchovy fillets, shallots, in a blender and blend until smooth. Season with salt and pepper to taste. Combine peppers, olives, garlic, thyme, parsley, vinegar, and honey in a mixing bowl. Season with salt and pepper to taste. Serve at room temperature. Preheat grill. Brush tuna with olive oil and season with salt and pepper to taste. Grill rare to medium rare. Drizzle with vinaigrette and top with relish.

Tuna is available most of the year, so fresh steaks should be easy to come by. Be choosy: a reddish color is acceptable, but flesh with dark spots or streaks should be avoided. As with all great ocean fish, the flesh tends to be dry. Marinate with oil, and avoid overcooking. The timing is critical, as tuna should be served medium rare. Use a kitchen timer.

3 tablespoons extra virgin olive oil

½ cup hickory wood chips, soaked

1/4 cup soy sauce
3 tablespoons brown sugar
3 tablespoons olive oil
2 tablespoons white wine vinegar
2 tablespoons sherry
2 tablespoons unsweetened pineapple juice

4 tuna steaks (6 ounces each)

Steps:

  • In a small bowl, combine the first eight ingredients. Remove 1/3 cup to a small bowl for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag; add tuna. 2 tablespoons olive oil
1/4 cup roasted red pepper
1/2 teaspoon dill weed
1/2 teaspoon tarragon
3/4 cup white wine
1/4 cup melted butter
1 tablespoon flour

  • Add 2 tablespoons olive oil to a hot skillet.
  • Sear tuna steaks on both sides.
  • Melt 1/4 cup butter and stir in 1 tablespoon of flour.

2 pounds 1/2-inch-thick tuna steaks or four 6-ounce cans oil-packed tuna
2 tablespoons fresh lemon juice
1 teaspoon minced fresh thyme leaves
1/4 cup plus 2 tablespoons extra-virgin olive oil
2 cups fresh flat-leafed parsley leaves
1/8 cup sliced red onion (about 1)
1 Thyme Focaccia
3 large red bell peppers,roasted and peeled
2 tablespoons drained capers

  • If using tuna steaks, prepare grill.
  • Season tuna steaks with salt and pepper and grill on an oiled rack set 5 to 6 inches over glowing coals 3 to 4 minutes on each side, or until just cooked through. (Alternatively, tuna steaks may be grilled in a hot well-seasoned ridged grill pan over moderately high heat.) Transfer tuna to a platter and cool. In a large sealable plastic bag combine lemon juice, thyme, and 1/4 cup oil and add grilled tuna. Marinate grilled tuna, chilled, turning bag occasionally, at least 1 hour and up to 1 day. If using canned tuna, drain tuna and in a bowl stir together with lemon juice, thyme, 1/4 cup oil, and salt and pepper to taste.
  • In a bowl toss together parsley, onion, and remaining 2 tablespoons oil and season with salt and pepper. Pat roasted peppers dry. Halve focaccia horizontally and layer one half with peppers, tuna, capers, and parsley salad. Top sandwich with remaining focaccia half, pressing gently, and cut lengthwise in half and crosswise into thirds to make 6 sandwiches. Cut sandwiches in half diagonally and wrap tightly in plastic wrap. Chill sandwiches at least 1 hour and up to 1 day.

2 (3/4-lb) sushi-grade tuna steaks (1-inch thick)

1 teaspoon black pepper

1/2 teaspoon Dijon mustard
1/4 cup olive oil
1 1/2 tablespoons small capers in brine, drained and chopped
2 tablespoons chopped fresh flat-leaf parsley

  • Prepare gas grill for cooking over direct high heat.
  • While grill heats, cut peppers lengthwise into quarters, discarding stems and seeds. Trim ends so that quarters lie flat.
  • Sprinkle tuna all over with 1 teaspoon salt and 1/2 teaspoon pepper. 1 tablespoon Tommy Tang's Thai seasoning
4 8 ounce tuna fillets 3/4 to 1 i nch thick
ROASTED RED BELL PEPPER SAUCE
2 tablespoons olive oil
1 tablespoon finely chopped garlic
1 cup Red or Green Bell Pepper Puree (red)
1/4 cup Tomato Puree
1 tablespoon Thai fish sauce
1 1/2 teaspoons white peppers
1/4 cup whipping cream
4 sprigs basil (garnish)

Steps:

  • Combine 2 tablespoons olive oil with Thai seasoning in a medium mixing bowl and whisk to blend well. Add tuna and toss gently until completely coated. Cover bowl with plastic wrap and refrigerate 3 hours. Prepare charcoal grill. Grill tuna fillets 5 minutes on each side. Set aside and keep warm. If a charcoal grill is not available, preheat oven broiler, place tuna fillets, coated with the leftover marinade, on a thick pan and cook 5 to 6 minutes. To test for doneness, carefully cut into the middle of the fish with a small, thin knife. It should be cooked through but still very moist. For sauce, heat olive oil in a medium skillet over high heat. Add garlic and sauté 1 minute. Add pepper and tomato purees, fish sauce, and white pepper and cook, stirring constantly, 3 minutes. Add cream and bring to boil. Reduce heat to low and simmer 4 minutes. Divide fillet among 4 serving plates, smoothing over bottom of each plate. Place 1 tuna fillet in center of each plate, garnish with basil, and serve.
