Categories     World Cuisine Recipes     Latin American     Mexican

Yield 6

Number Of Ingredients 12

2 tablespoons chipotle chilies in adobo sauce
1 ½ tablespoons chili powder
3 large garlic cloves
⅓ cup packed cilantro leaves, plus extra
½ cup orange juice concentrate
⅓ cup water
½ teaspoon salt
6 tablespoons extra-virgin olive oil
1 (2 pound) package pork tenderloins
6 plums, halved and pitted
¾ cup slivered almonds
1 pound napa cabbage

Steps:

  • Puree first seven ingredients plus 2 Tbs. oil in a blender until smooth, about 30 seconds. Pour all but 3/4 cup of mixture into a gallon-sized zipper bag. Add meat; seal and refrigerate 30 minutes to 4 hours. Whisk 1/4 cup olive oil into remaining mixture for a dressing.
  • Brush plums with oil; season with salt and pepper. Toast almonds in a 350-degree oven for 4 minutes. Finely shred cabbage. Set all aside.
  • Build a fire on one side of grill, so you have direct and indirect heat. When coals are covered with white ash, place plums, cut side down, and meat over direct heat; cover and grill until meat is well seared, 5 minutes. Then turn pork to sear other side, 5 minutes more, rearranging plums to ensure even browning. Move meat and plums to indirect heat; cover and grill 12 to 13 minutes, or until meat thermometer inserted in thickest end of meat registers 145 degrees F (63 degrees C).
  • Remove meat and plums to a platter; let sit 5 minutes or up to 1 hour. Cut pork, crosswise, into 1/2-inch-thick slices. Toss cabbage with almonds, salt, pepper and most of dressing. Arrange slaw in each of six shallow bowls. Place a portion of pork over each and 2 plum halves alongside. Drizzle with remaining dressing; garnish with cilantro.

GRILLED PORK TENDERLOIN WITH SPICY CUCUMBER, APPLE AND MANGO SALAD

Grilled Pork Tenderloin with Spicy Cucumber, Apple and Mango Salad image

This recipe actually started off very different for me because I initially wanted to make my version of a Thai green papaya salad. I had the hardest time finding green papaya while I was visiting my in-laws, so I used what I found in the store: crunchy green apples, sweet tangy mango and cooling cucumber. Luckily, this quickly turned into one of my new favorite salads. It goes great with grilled pork, chicken, shrimp and fish.

Time 25m

Yield 4 servings

Number Of Ingredients 16

One 1 1/2-pound pork tenderloin
Grapeseed oil, for greasing
Kosher salt and freshly ground black pepper
1 English cucumber, cut into 3-inch-long matchsticks
1 green apple, cored and cut into 1/4-inch-thick half-moons
1 mango, pitted and cut into 1/4-inch-thick half-moons
1/2 cup loosely packed mint leaves, torn, plus whole leaves for garnish
1 small lime, zested and juiced
1 medium jalapeno, finely minced
1 clove garlic, minced or grated
1 tablespoon light brown sugar
1 tablespoon fish sauce
1 tablespoon tamari
2 teaspoons rice wine vinegar
1 teaspoon kosher salt
1/4 cup lightly salted, dry roasted peanuts, roughly chopped

Steps:

  • For the pork: Preheat the grill to medium-high, about 375 degrees F, or preheat a large grill pan over medium-high heat. Clean and oil the grill grates or grill pan.
  • Lightly oil the tenderloin and sprinkle with salt and pepper. Grill, covered, until you get nice grill marks and a thermometer inserted into the thickest part registers 145 degrees F, flipping once, 14 to 16 minutes. Remove to a cutting board and let rest for 5 minutes. Slice into 1/2-inch thick pieces and transfer to a large plate or platter.
  • While the pork grills, make the salad: Combine the cucumber with the apple, mango and mint in a large bowl. Combine the lime zest with the juice, jalapeno, garlic, brown sugar, fish sauce, tamari, vinegar and salt in a small bowl. Whisk together then pour over the salad (see Cook's Note). Add some of the peanuts, saving the rest for garnish.
  • Top the pork with the salad, mounding it high in the middle of the platter. Sprinkle with the reserved peanuts and a few mint leaves.

Categories     main-dish

Time 1h25m

Yield 4 servings

Number Of Ingredients 25

2 pork tenderloins, 1 1/2 to 2-pounds total
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1/2 lime, juiced
2 tablespoons extra-virgin olive oil
1 (1-inch) piece fresh ginger, peeled and chopped
2 garlic cloves, chopped
1 lemongrass stalk, white part only, chopped into small pieces
1 fresh red jalapeno, cut into rounds
1 (14-ounce) can unsweetened coconut milk
1 teaspoon sugar
1 lime, juiced
1 tablespoon fish sauce (recommended: Nam pla)
Kosher salt and freshly ground black pepper
Stems from 1/4 bunch fresh cilantro
Chile-Coconut Tomato Salad, recipe follows
1 1/2 cups shredded, unsweetened coconut
2 pounds fresh heirloom tomatoes, cut into big chunks (variety of colors purple, yellow, bright red)
1/2 small red onion, slivered
1 fresh red jalapeno, thinly sliced
Leaves from 1/4 bunch fresh cilantro
Kosher salt and freshly ground black pepper
Handful fresh mint leaves
Extra-virgin olive oil
2 scallions, trimmed and chopped

Steps:

  • Put the pork on a platter and sprinkle all over with salt and pepper. Add the olive oil and lime juice and turn to coat the pork with the marinade. Cover with plastic wrap and set aside in the refrigerator.
  • For the Chile-Coconut Sauce:
  • Heat the olive oil in a saucepan over medium heat. Add the ginger, garlic, lemongrass and chile and cook to soften, about 3 minutes. Add the coconut milk, and sugar and simmer until thickened, about 5 minutes. Stir in the lime juice and season with fish sauce, and salt and pepper. Cool to room temperature. Add cilantro stems and puree using an immersion blender or blender.
  • Preheat an outdoor gas or charcoal grill. Blot some oil onto a thick square of paper towel and then carefully and quickly wipe the hot grates of the grill to make a non-stick surface. Put the pork on the grill and cook, turning to brown all sides, until crusty on the outside and almost cooked through but still slightly pink in the center, 10 to 15 minutes.
  • Remove from the grill and let rest for a few minutes.
  • To serve, slice the pork and add it to the bowl with the tomato salad. Pour over the chile-coconut sauce and toss it all together.
  • Preheat the oven to 375 degrees F.
  • Spread the coconut out in a thin layer on a baking sheet and bake, shaking every now and then for even cooking, until lightly browned, about 10 minutes.
  • In a big bowl, toss together the tomatoes, red onion, chile, cilantro, mint, and salt and pepper. Drizzle with olive oil or with some remaining Chile-Coconut Sauce and fold in the toasted coconut and scallions.

1 teaspoon kosher salt
1 teaspoon smoked paprika (pimentón de la Vera)
1 teaspoon smoked paprika (pimentón de la Vera)
1/2 teaspoon garlic powder
1/2 teaspoon dried Mexican oregano (Mexican oregano is different from other varities)
1/4 teaspoon black pepper
1 pork tenderloin (about 1 1/4 pounds)
3 tablespoons fresh lime juice
1 1/2 teaspoons reserved spice rub
3 tablespoons olive oil
2 ears yellow corn
2 cups peeled diced red or Yukon Gold potatoes (12 ounces)
1/2 cup diced red bell pepper
1 jalapeño pepper, diced small
1 jalapeño pepper, diced small
1/3 cup diced red onion
3 small green onions, minced
1/4 cup chopped fresh cilantro
Salt and freshly ground black pepper

Steps:

  • To make spice rub: In a small bowl stir together the cumin, salt, smoked paprika, garlic powder, oregano and black pepper. Measure 1 1/2 teaspoons of the spice rub and set aside.

  • To make salad: In another small bowl whisk together the lime juice, reserved spice rub and olive oil. Set aside.
  • Bring 2 medium pots of water to a boil. Add the corn to one pot and cook for 5 minutes. Drain and let cool. When cool enough to handle, cut the corn off of the cobs.
  • Prepare grill and preheat to medium-high (see note).
  • Add a large pinch of salt to the second pot and add the diced potatoes. Return to a boil and cook for 5 to 6 minutes or until the potatoes are just tender, Drain and place in a large bowl. Toss the warm potatoes with 2 tablespoons of the dressing and let stand for a few minutes so the potatoes can absorb the dressing.
  • Add the cut corn to the potatoes along with the red pepper, jalapeño, red and green onions and cilantro. Toss and add the remaining dressing. Toss again and set aside to allow the flavors to blend. Just before serving, taste and add additional salt and pepper if necessary.
  • Brush the prepared grill with oil and place the tenderloin in the center of the grill. Grill for 12 to 14 minutes, turning every 2 minutes, or until the pork reaches an internal temperature of 140 degrees. Remove from grill, tent with aluminum foil and let stand for 10 minutes. Slice pork and serve with the salad.
  • Note: To check grill temperature, count the seconds you can hold your hand, palm side down, 2 to 3 inches above the rack until it feels uncomfortable: 3 seconds for medium-hot.

Provided by Food Network Kitchen

Time 1h

Yield 6 servings

Number Of Ingredients 14

1/4 small red onion, thinly sliced
3 cups basil leaves
1 avocado, chopped
1 clove garlic, smashed
1/2 cup Mexican crema or sour cream
Juice of 2 limes
Kosher salt and freshly ground pepper
1 1 3/4- to 2-pound beef tenderloin (about 2 inches in diameter)
3 tablespoons extra-virgin olive oil, plus more for brushing
1 1/2 teaspoons ground cumin
2 black (ripe) plantains
3 cups diced watermelon (about 6 ounces)
1/2 cup crumbled Cotija cheese (about 2 ounces)
1 tablespoon finely chopped jarred or fresh aji peppers (Peruvian yellow chiles)

Steps:

  • Preheat a grill to medium high and prepare for indirect grilling: On a charcoal grill, bank the coals to one side. For a gas grill, turn off half of the burners. Put the onion in a small bowl and cover with cold water; let soak 20 minutes, then drain and squeeze dry. Meanwhile, pulse 1 cup basil, the avocado, garlic, crema and the juice of 1 lime in a blender or mini food processor until smooth; season with salt and pepper. Transfer to a bowl and refrigerate until ready to use.
  • Tie the beef tenderloin in 2-inch intervals using kitchen twine. Combine 1 tablespoon olive oil, the cumin, 1 teaspoon salt and a few grinds of pepper in a small bowl. Brush the oil mixture all over the beef and transfer to the grill over direct heat. Grill, turning occasionally, until the beef is well marked, about 15 minutes. Transfer to a cutting board and let rest 10 minutes.
  • While the beef is cooking over indirect heat, cut a small slit down the center of each plantain and lightly brush the skins with olive oil; transfer to the grill over direct heat. Grill, turning occasionally, until the skins are charred and the plantains are soft, about 20 minutes; cut into thirds.
  • Meanwhile, roughly chop the remaining 2 cups basil; toss with the watermelon, the remaining lime juice and 2 tablespoons olive oil, the cheese, aje peppers and onion in a medium bowl. Season with 1/4 teaspoon salt. Slice the beef and serve with the basil crema, plantains and watermelon salad.

Yield Makes 4 servings

Number Of Ingredients 12

2 (3/4-lb) pork tenderloins
1 cup dry red wine
1 (2-inch) sprig fresh rosemary plus 1/4 teaspoon finely chopped
1 garlic clove, smashed
1/4 teaspoon dried hot red pepper flakes
1/4 cup red-wine vinegar
1 tablespoon mild-flavored honey
2 medium red bell peppers, quartered
3 medium zucchini (1 lb total), trimmed and cut lengthwise into 1/4-inch-thick slices
1 medium onion, cut lengthwise into 6 wedges, leaving root ends intact
2 teaspoons extra-virgin olive oil
2 cups trimmed baby arugula (1 oz)

Steps:

  • Trim off tail ends of tenderloins to form 2 (8-ounce) pieces, reserving trimmings for another use.
  • Boil wine, rosemary sprig, garlic, and red pepper flakes in a small heavy saucepan until reduced to about 1/2 cup, 7 to 8 minutes. Pour through a fine sieve into a measuring cup, then transfer rosemary sprig, garlic, and red pepper flakes to a sealable plastic bag along with 1/4 cup wine marinade and tenderloins. Marinate, chilled, turning bag occasionally, at least 2 hours or overnight.
  • Return remaining 1/4cup wine marinade to saucepan and add vinegar, honey, and chopped rosemary, then boil dressing until reduced to about 1/4 cup, 6 to 8 minutes.
  • Prepare grill for cooking.
  • When fire is medium-hot (you can hold your hand 5 inches above rack for 3 to 4 seconds), put bell peppers, zucchini, and onion on a lightly oiled grill rack and place over fire. Grill zucchini and onion, turning, until tender, 8 to 10 minutes, then transfer to a cutting board. Grill peppers until skins are blackened and flesh begins to soften, about 8 minutes, then transfer to a bowl, cover, and let steam 10 minutes.
  • While peppers are steaming, pat pork dry and season with salt and pepper. Grill on lightly oiled grill rack over medium-hot fire, turning frequently, until an instant-read thermometer inserted diagonally 2 inches into meat registers 155°F, about 20 minutes. Transfer to a cutting board, then tent loosely with foil and let stand 10 minutes before slicing.
  • Peel peppers and cut into 1-inch pieces. Transfer to a large bowl.
  • Cut zucchini and onion into 1-inch pieces and add to peppers. Toss vegetables with 2 tablespoons rosemary dressing, 1 teaspoon oil, and salt and pepper to taste.
  • Toss arugula with remaining teaspoon oil. Mound grilled vegetables on 4 plates and top with sliced pork. Add any juices from cutting board to remaining 2 tablespoons dressing and drizzle over pork. Top with arugula.
