1 lb swai fillets
1 tsp garlic powder
1 tsp paprika powder
1 tsp onion powder
1 tsp chili powder
salt and pepper
1 Tbsp olive oil
1 Tbsp butter

Steps:

  • 1. combine dry ingredients and coat Swai fillets both sides.
  • 2. on medium high skillet, put olive oil and butter.
  • 3. pan sear swai fillets 3 mins per side

1 pounds swai fillets
3 tablespoons Worcestershire sauce
2 tablespoons lemon juice
1 clove garlic crushed
1/2 teaspoon paprika
1/8 teaspoon ground black pepper

Steps:

  • Place fish in a shallow baking dish; set aside. Combine Worcestershire sauce, lemon juice, garlic, paprika and pepper in large bowl; mix well. Pour over fish and marinate in refrigerator for 2 hours. Preheat grill or broiler. Transfer fish to large sheet of heavy aluminum foil. Fold up sides to form a rim; pour marinade over the fish. Grill or broil in foil for about 5 minutes flip broil for another 5 minutes or until fish flakes when tested with fork at the thickest part.

I love making foil packet dinners. Who wouldn't love a full dinner with virtually no dishes to wash afterwards? This flavorful packet has tender, moist fish, and seasoned vegetables. It is incredibly versatile!

cooking spray
1 stick butter, divided
1 bunch fresh asparagus, trimmed and cut into bite-sized pieces
½ onion, thinly sliced
1 tablespoon dried dill weed
1 pinch onion and herb seasoning blend (such as Mrs. Dash®)
4 (4 ounce) fillets swai fish
2 lemons, thinly sliced
lemon, cut into wedges

Steps:

  • Preheat an outdoor grill for medium heat. Tear off 4 large squares of aluminum foil and spray with cooking spray.
  • Melt 1/3 of the butter in a skillet over medium heat. Toss asparagus, onion, dill, and seasoning blend with butter. Divide among the foil squares.
  • Top vegetables with swai fillets. Place small pats of remaining butter over each fish fillet. Sprinkle liberally with seasoning blend. Place lemon slices on top. Fold up foil into packets, sealing seams tightly but leaving room inside for steam to circulate.
  • Place packets directly on the grill and cook until swai flakes easily with a fork, 20 to 25 minutes. Open packets carefully and squeeze lemon juice over swai and vegetables.

Fantastic new recipe we discovered when we were looking for a way to use some swai we found on sale at the market. The fish is sturdy enough to hold up to sauteeing and really absorbs the flavors perfectly for a great fish taco!

2 tablespoons olive oil, divided
1 onion, thinly sliced
1 red bell pepper, sliced into thin strips
1 jalapeno pepper, sliced into thin strips
2 cloves garlic, minced
4 (4 ounce) fillets swai fish, cut into 1-inch cubes
2 tablespoons chili powder
½ teaspoon sea salt
½ teaspoon ground cumin
¼ teaspoon coarsely ground black pepper
12 corn tortillas, warmed
1 cup shredded Monterey Jack cheese

Steps:

  • Heat 1 tablespoon oil in a saute pan over medium-high heat. Cook and stir onion, red bell pepper, jalapeno, and garlic until slightly softened, about 4 minutes. Transfer to a plate and set aside.
  • Heat remaining oil in the same pan. Add swai; cook for 2 minutes. Add chili powder, salt, cumin, and pepper; cook until swai is coated and opaque in the center, 1 to 2 minutes. Return vegetables to the pan.
  • Divide swai and vegetables among tortillas. Sprinkle Monterey Jack cheese on top.

4 (4 ounce) fillets swai fish
2 tablespoons margarine
¼ cup dry white wine
1 tablespoon lemon juice
1 tablespoon chopped fresh cilantro
1 teaspoon minced garlic
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a shallow pan or baking sheet with cooking spray.
  • Place fish fillets into the prepared pan.

My husband loves fish. Since I am allergic, I don't partake. Swai was on sale at the grocery so we picked some up. Since he has never tried it before, I decided to cook it in a familiar way for him. He devoured it. I served this with honeyed carrots and fried yellow squash.

2 teaspoons red pepper flakes
1 teaspoon seafood seasoning (such as Old Bay®)
1 teaspoon garlic powder
salt and ground black pepper to taste
1 cup cornmeal
4 (4 ounce) fillets swai fish
2 tablespoons canola oil
¼ cup water

Steps:

  • Combine red pepper flakes, seafood seasoning, garlic powder, salt, and pepper in a bowl. Spread corn meal into a shallow bowl. Season swai fish with red pepper flake mixture and press each fillet into cornmeal to coat. Wrap coated fillets in plastic wrap and refrigerate for 30 minutes.
