3 slices bacon
2 tablespoons unsalted butter, melted
1 large buttermilk biscuit, crumbled (about 1 cup)
2/3 cup shredded sharp cheddar cheese
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley
Kosher salt and freshly ground pepper
Vegetable oil, for the grill
1/4 cup barbecue sauce

Steps:

  • Preheat a grill to medium. Prepare the chicken: With your knife parallel to the cutting board, slice each chicken breast in half horizontally without cutting all the way through; open like a book. Cover with plastic wrap and pound until 1/2 inch thick.
  • Make the filling: Cook the bacon in a skillet until crisp; crumble. Mix 2 tablespoons bacon drippings with the melted butter in a bowl. Combine the buttermilk biscuit, bacon, half of the drippings mixture, the cheese, chives and parsley in a separate bowl. Stir in 2 to 3 tablespoons water; season with salt and pepper.
  • Season the pounded chicken on both sides with salt and pepper and brush with the remaining drippings mixture. Spoon the filling over the top, leaving a 1-inch border around the edges. Roll up the chicken toward the pointy end; tie with 3 pieces of kitchen twine.

2 tablespoons chopped fresh tarragon, basil, chives or other herb
4 bone-in chicken breasts

Steps:

  • Prepare charcoal or gas grill; heat should be medium-high and rack about 6 inches from fire; keep part of grill cool for indirect cooking. In a small bowl, use a spoon or fork to combine butter and herbs, or use a mini food processor.
  • With sharp-bladed knife, cut a 2- to 3-inch slit in deepest part of chicken. Fill with as much herb butter as possible; rub some under skin as well. Sprinkle chicken with salt and pepper and brush with oil.
  • When grill is ready, put chicken skin-side up on cool side of grill. After some fat has been rendered, turn chicken; if it flares up, move to an even cooler part of fire or turn so skin side is up again. Steps:

  • In small bowl, place couscous; set aside.
  • In 1-quart saucepan, heat broth, butter, coriander, 1/2 teaspoon cumin, 1/4 teaspoon salt and the turmeric to boiling.
  • Pour hot broth over couscous, stir well and cover with foil. Let stand 5 minutes to allow liquid to be absorbed. Uncover and fluff couscous with fork. Stir in lemon peel, lemon juice, cranberries, pine nuts and pepper sauce; set aside.

To create a pocket for the stuffing, insert long, thin knife (a boning knife is ideal) into middle of thick end, parallel to work surface. Slide knife in until it reaches middle of chicken. Move knife up and down within the chicken to form a pocket. You want to have a smaller opening where knife entered the chicken and a larger pocket within the chicken to stuff with couscous mixture. Repeat with remaining chicken breasts.
  • Spray grill rack with cooking spray or brush with oil. Heat coals or gas grill for medium heat. (Check the temperature of the coals by placing your hand, palm side down, near but not touching the cooking grill rack. If you can keep your hand there for two seconds [one-thousand one, one-thousand two], the temperature is high; three seconds is medium-high; four seconds is medium; five seconds is low.)
  • Use one hand to hold chicken with thick end up. With other hand, stuff 1/4 cup of the couscous into pocket. Repeat with remaining chicken. Brush chicken with oil.
  • In small bowl, mix 1/2 teaspoon salt, 1/2 teaspoon cumin and the pepper. Sprinkle mixture evenly over chicken breasts.
  • Grill chicken covered 15 to 20 minutes, turning occasionally, until juice of chicken is no longer pink when center of thickest part is cut (170°F) and stuffing is hot. To serve, slice each breast and layer on plate so stuffing is visible.

Step-by-Step
Building Better Grilled Stuffed Chicken Breasts
Most recipes for grilled stuffed chicken breasts do nothing more than take chicken cordon bleu (the classic dish featuring boneless breasts stuffed with ham and cheese) outdoors, for typically flawed results. Here's how we turned the concept into something a whole lot better.
PROBLEM: Dry, leathery exterior
SOLUTION: Instead of the usual boneless, skinless breasts, we use bone-in, skin-on breasts. Both skin and bone help protect the white meat from the grill's fierce heat.
PROBLEM: Filling that won't stay put
SOLUTION: Most recipes layer a filling of cheese and meat. We roll the prosciutto around the cheese, which helps keep it contained.
PROBLEM: Dry, bland interior
SOLUTION: Even a great filling can't fully compensate for the breast's bland flavor. To add moistness and boost taste, we spread a compound butter inside the butterflied meat before adding the filling.

Steps:

  • 1. Starting on thick side of breast, closest to breastbone, cut horizontal pocket in each breast, stopping ½ inch from edge so halves remain attached. Dissolve 3 tablespoons salt in 1 quart cold water in large container. Add breasts, cover with plastic wrap, and refrigerate 30 minutes. 2. Light large chimney starter filled with charcoal (6 quarts, about 100 briquettes) and allow to burn until coals are fully ignited and partially covered with thin layer of ash, about 20 minutes. Arrange all coals over half of grill, leaving other half empty. Position cooking grate over coals, cover grill, and heat grate until hot, about 5 minutes. Scrape grate clean with grill brush. Dip wad of paper towels in vegetable oil; holding wad with tongs, wipe cooking grate. Grill is ready when coals are hot (you can hold your hand 5 inches above grate for 2 seconds). 3. Meanwhile, combine butter, shallot, and tarragon in small bowl. Roll each piece of cheese in 1 slice prosciutto. Remove breasts from brine, dry thoroughly inside and out with paper towels, and season inside and out with pepper. Spread equal amount of butter mixture inside each breast. Place 1 prosciutto-wrapped piece of cheese inside each breast and fold breast over to enclose. Evenly space 3 pieces kitchen twine (each about 12 inches long) beneath each breast and tie, trimming any excess. 4. Place chicken breasts, skin side down, over hot part of grill and cook until well browned, 3 to 5 minutes. Flip chicken and cook until second side is just opaque, about 2 minutes. Move chicken, skin side up, to cool side of grill, with thicker side of breasts facing fire. Cover grill and continue to cook until instant-read thermometer inserted into thickest part of stuffing registers 160 degrees, 25 to 30 minutes. Transfer chicken to carving board and let rest, tented with foil, 10 minutes. Remove twine, then carve breast meat from bone (see photo below). Carve into ½-inch-thick slices and serve.

Steps:

  • Butterfly or cut a deep pocket into each chicken breast.
  • Place 2 pieces of Asiago Cheese on each breast pocket.
  • Chop roasted Red Pepper and place in small bowl.
  • Add the roasted Garlic& Oregano to the peppers and mix well.
  • Place this mixture on top of Asiago cheese.
  • Secure with toothpicks.
  • Prepare the marinade and drizzle over chicken and let sit for 30 minutes.
  • Preheat BBQ grill.
  • Grill breasts for approximately 10- 15 minutes or until no longer pink.

1 whole boneless chicken breast with skin (about 1 pound), halved
2 sticks of Saga Blue (each 2 by 1/2 by 1/2 inch)
2 thin slices of cooked ham (each 4 by 4 inches)
1 tablespoon Worcestershire sauce
1 tablespoon fresh lemon juice
2 tablespoons unsalted butter, cut into pieces

Steps:

  • Insert a sharp paring knife into the thicker end of each chicken breast half and cut a lengthwise pocket carefully, making it as wide as possible without puncturing the sides. Wrap each stick of Saga Blue in a ham slice, enclosing it, insert the packages in the chicken pockets, and seal each opening well with a wooden pick. In a small saucepan bring the Worcestershire sauce and the lemon juice just to a simmer, remove the pan from the heat, and swirl in the butter. Grill the chicken, seasoned with salt and pepper, on an oiled rack set about 6 inches over glowing coals, basting it frequently with the sauce, for 12 minutes on each side. (Do not baste the chicken during the last 2 minutes of grilling, and discard any unused sauce.)

4 skinless, boneless chicken breasts (about 8 ounces each)
1/4 cup plus 1 tablespoon extra-virgin olive oil, plus more for the grill
2 teaspoons harissa
1 teaspoon ground cumin
Kosher salt and freshly ground pepper
1 Japanese eggplant, sliced
3/4 cup cooked bulgur
1 plum tomato, diced
1/2 cup crumbled feta
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh mint
1 tablespoon fresh lemon juice

Steps:

  • Preheat a grill to medium. Prepare the chicken: With your knife parallel to the cutting board, slice each chicken breast in half horizontally without cutting all the way through; open like a book. Cover with plastic wrap and pound until 1/2 inch thick.
  • Make the filling: Whisk 1/4 cup olive oil, the harissa, cumin and a pinch each of salt and pepper in a bowl. Brush the eggplant with some of the harissa oil. Brush the grill grates with olive oil. Grill the eggplant until tender, 1 to 2 minutes per side. Meanwhile, mix the bulgur, tomato, feta, parsley, mint, lemon juice and remaining 1 tablespoon olive oil in a separate bowl; season with salt and pepper.
  • Season the pounded chicken on both sides with salt and pepper and brush with half of the remaining harissa oil; top with the eggplant and bulgur mixture, leaving a 1-inch border around the edges. Roll up the chicken toward the pointy end; tie with 3 pieces of kitchen twine. Brush with the remaining harissa oil.
  • Grill the chicken breasts, turning, until cooked through, 18 to 20 minutes. Transfer to a cutting board and let rest 5 minutes, then remove the twine and slice.

1/4 cup KRAFT Zesty Italian Dressing
4 oz. (1/2 8 oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/2 cup KRAFT Shredded Pepper Jack Cheese
1/4 cup canned diced green chiles
2 Tbsp. canned jalapeño peppers, diced
1 cup diced fresh tomatoes
1/4 cup pickled jalapeño peppers

Steps:

  • Heat grill to medium high heat
  • Cut lengthwise slit in thickest side of each chicken breast, being careful to not cut through to opposite side.
  • Place the chicken in a zipper bag, and pour the Italian dressing over the chicken. Marinate for 20-30 minutes.
  • In a medium bowl, mix together the cream cheese, pepper jack, green chilies, and jalapeños. Remove the chicken from the marinade. Discard bag and marinade. Spoon the cheese mixture into each of the chicken breasts, being careful not to overfill; secure with wooden toothpicks.
  • Grill the chicken 8-10 minutes per side, or until done(165°F).

1/4 teaspoon pepper
3 oz Cheddar cheese
1 tablespoon butter or margarine, melted
1/4 cup Old El Paso™ Thick 'n Chunky salsa

Steps:

  • Heat gas or charcoal grill. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick. Sprinkle with salt and pepper.
  • Cut cheese into 4 slices, about 3x1x1/4 inch. Place 1 slice cheese in center of each chicken piece. Roll chicken around cheese, folding in sides. Brush chicken rolls with butter.

2 Large whole, boneless skinless chicken breasts (each 12 to 16 ounces) or 4 half breasts (each half 6 to 8 ounces)
8 sun-dried tomatoes, soaked in hot water for 1 hour, then drained.
8 large fresh basil leaves
4 ounces creamy goat cheese log
course salt and black pepper to taste
3 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
Soak toothpicks in oil for later use

Steps:

  • 1. Cut the goat cheese log into 8 slices of approximately 1/4 inch. 2. Cut each whole chicken breast in half or use the 4 half breasts. Remove the tenders and set them aside for future use. Trim any sinews or excess fat off the breasts and discard. Rinse the breasts under cold running water, then drain and blot dry with paper towels. Cut pockets in the chicken breast by placing it flat on a cutting board with the thicker side facing out. Holding it flat with your palm and holding the knife parallel to the cutting board, cut a deep pocket in the breast. Do not cut all the way through and try not to pierce the top or bottom of the breast 3. Stuff the chicken breasts with the sun-dried tomatoes, basil leaves, and goat cheese slices and pin the breasts shut with toothpicks. Place the chicken breasts in a nonreactive baking dish and season generously with salt and pepper. Pour the oil and lemon juice over the breasts and let marinate, turning once or twice, while preheating the grill. 4. Set up the grill and preheat to high. When ready to cook, brush and oil the grill grate. Arrange the breasts on the hot grate, all facing the same direction, at a 45 degree angle to the bars of the grate. Grill for 4 - 6 minutes per side, rotating the breasts 90 degrees after 2 minutes on each side to create an attractive crosshatch of grill marks. I reduced the heat to medium for cooking and cooked approx 8 minutes per side. To test for doneness, poke a breast in the thickest part with your finger. It should feel firm to the touch. 5. Transfer the breasts to plates or a platter. Remove the toothpicks before serving. For a prettier presentation, cut the breasts crosswise into thin slices.

2 tablespoons chopped fresh tarragon, basil, chives or other herb
4 bone-in chicken breasts
Salt and freshly ground black pepper
Extra virgin olive oil as needed
Lemon wedges for serving

Steps:

  • 1. Prepare charcoal or gas grill; heat should be medium-high and rack about 6 inches from fire; keep part of grill cool for indirect cooking. In a small bowl, use a spoon or fork to combine butter and herbs, or use a mini food processor. 2. With sharp-bladed knife, cut a 2- to 3-inch slit in deepest part of chicken. Fill with as much herb butter as possible; rub some under skin as well. Sprinkle chicken with salt and pepper and brush with oil. 3. When grill is ready, put chicken skin-side up on cool side of grill. After some fat has been rendered, turn chicken; if it flares up, move to an even cooler part of fire or turn so skin side is up again. When skin has lost its raw look and most of the fat has been rendered, after 20 minutes or so, move chicken directly over fire. Cook, turning now and then, until both sides are browned and flesh is firm and cooked through, 5 to 10 minutes longer. Serve hot, warm or at room temperature, with lemon wedges.
