4 (12 to 14-ounce) strip steaks
Kosher salt

Steps:

  • Preheat the grill to high. Brush the grill with a wire grill brush to remove any soot and fat on the grill grates. Wipe the grill grate with an oiled cloth to remove any bits of crud that were loosened by brushing.
  • Remove the steaks from the refrigerator and let them come to room temperature. Season the steaks generously with salt and let sit for at least 15 minutes.
  • Arrange the steaks on the hottest part of the grill until beautiful brown grill marks form, then rotate the steaks 90 degrees to create the crosshatch marks.
  • Turn the steaks over and repeat the process. Once the grill marks have formed on the second side, move the steaks to a cooler part of the grill and let cook to the desired doneness. Cook about 5 to 6 minutes on each side for medium-rare.

Have you ever wondered...How do I get those perfect diamond grill marks on my steak, slightly crispy texture on the outside, and pink and juicy on the inside. Well it's simple. Salt and Rest. Bring the steaks to room temperature (about 20 to 30 minutes). If you put the steaks on the grill while they are cold they will cool the grill down quickly and you won't get a good sear... and that means no good grill marks. Don't salt the meat while it is cold or the salt will absorb the moisture from the meat and cause it to steam rather than sear on the grill. So after the meat has reached room temperature, then salt and pepper it and let it rest an additional 5 minutes at least. After grilling the steaks to your liking let them rest again for 5 minutes or so. If done right you will be a hit at the dinner table. Happy Cooking.

Steps:

  • Trim all excess fat off steaks to prevent flare ups.
  • Preheat gas or charcoal grill to high heat. Approximatley 400 degrees.
  • Place Steaks over direct heat for 1 1/2 minutes then turn 90 degrees -- do not turn the steaks over yet.
  • After 1 1/2 minutes turn the steaks over and let cook for another 1 1/2 minutes, turn 90 degrees let cook for a final 1 1/2 minutes.
  • Remove from grill, let rest for 3 to 5 minutes and serve.

4 cups low-sodium beef stock
Four 16-ounce New York strip steaks
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
4 tablespoons unsalted butter
2 shallots, minced
2 tablespoons fresh cracked five-peppercorn blend
1/2 cup brandy
1/2 cup red wine
1/2 cup heavy whipping cream
2 tablespoons minced fresh parsley

Steps:

  • Bring the beef stock to a boil in a medium saucepan over medium-high heat. Immediately lower to a simmer and cook until reduced to 1/2 cup, about 45 minutes. Set aside.
  • Preheat a grill to medium-high heat. Sprinkle the strip steaks with the salt and pepper and let sit for 15 minutes.
  • Place the steaks on the grill, evenly spaced, and grill for 2 1/2 minutes; rotate a quarter turn and cook another 2 1/2 minutes¿this creates cross-hatch sear marks. Flip the steaks and repeat on the reverse side. Remove steaks to a baking sheet and let rest for 4 to 5 minutes.
  • Combine 2 tablespoons of the butter, the shallots and the five-peppercorn blend in a medium saucepan over medium heat. Cook until the shallots and peppercorns are fragrant and the butter is beginning to bubble. Off the heat, add the brandy and the red wine. Carefully place the saucepan back on the burner and allow the brandy and wine to flame. Add the reduced beef stock and the heavy whipping cream, bring to a boil and immediately lower to a simmer. Cook until the liquid has reduced by two-thirds, about 8 to 10 minutes. Prior to serving, whisk the remaining 2 tablespoons butter into the sauce, then remove from the heat.
  • With a sharp knife, slice the steaks 1/2-inch thick on the bias. Transfer to a large serving platter and spoon over the five-peppercorn sauce. Garnish with the minced parsley. Serve immediately.

1/2 cup apple cider

Steps:

  • For the dressing: Combine the yogurt, Parmesan, lemon juice, mustard, olive oil, oregano, anchovies, garlic, 3/4 teaspoon salt and 1 teaspoon pepper in a blender or food processor and blend until smooth. Cover and chill for at least 30 minutes. The dressing will keep for up to 3 days refrigerated.
  • For the steak and romaine: Prepare a grill for medium heat. Lightly oil the grill grates.
  • Sprinkle the steaks with salt and pepper and grill about 5 minutes per side for medium rare. Remove to a cutting board to rest for 8 minutes.

8 garlic cloves, smashed
4 fresh thyme sprigs, coarsely chopped
2 rosemary sprigs, coarsely chopped
1 cup dry red wine (recommend a Chilean Cabernet )
1 medium red onion, very finely chopped
2 tablespoons olive oil
8 beef strip steaks
salt & pepper
4 garlic cloves, quartered (remove middle germ)
1/2 cup parsley, packed
1/2 cup oregano leaves, packed
1/4 cup rice vinegar
1 lemon, juice of
1 cup olive oil

1/2 lb bacon

Steps:

  • Marinate the steak: In a large, shallow dish (or large ziplock bag), combine the garlic, thyme, rosemary, wine, onion and olive oil. Ad the steaks and turn to coat thoroughly with the marinade. Cover and refrigerate for at least 4 hours or overnight.
  • Chimichurri Sauce:.
  • In a food processor, pulse the garlic, parsley, oregano, vinegar, lemon juice and olive oil until the herbs are pureed. Scrape into a bowl and season with salt & pepper.
  • In a large skillet, cook the bacon in 2 batches over moderate heat until crisp, about 8 minutes. Drain on paper towels, and let cool, the finely chop. Pour excess bacon fat out of skillet keeping 2 Tbsp in it.
  • Cooking:.
  • LIght a grill. Remove steaks from marinade and season with salt & pepper. Grill the steaks over high heat until charred all over, about 7 - 8 minutes per side. Transfer to a cutting board and sit at rest for 5 minutes.
  • Meanwhile, heat the bacon fat in the skillet. Add the chimichurri and bring to a simmer over high heat. Remove from the heat and stir in the bacon. Pour the sauce into a serving bowl.
  • Carve the steaks crosswise into thick slices and serve immediately with the chimichurri.
  • Serve with a Chilean Cabernet which echoes the herbal marinade for these flavourful steaks.

4 New York strip steaks
Salt and freshly ground black pepper
4 tablespoons extra-virgin olive oil, plus some for drizzling
4 portobello mushroom caps
2 cups shiitake mushroom caps
1 large white onion, peeled and sliced into 1/2-inch thick rounds
1 bunch jumbo asparagus, peeled
4 tomatoes, cored
3 jalapeno peppers
3 large basil leaves
2 tablespoons balsamic vinegar, plus some for drizzling

Steps:

  • Preheat grill to high. Season steaks with salt and pepper and drizzle with olive oil.
  • Toss the mushroom caps in 2 tablespoons olive oil and season with salt and freshly ground black pepper. Place the steaks on the hottest part of the grill. Place smaller mushrooms around the edges of the grill. Cook the steak for 4 minutes on each side for medium rare, 8 minutes on each side for well done. Cook the portobellos for 2 minutes on each side, and the shiitakes for about 1 to 2 minutes on each side.
  • Coat your onion slices, asparagus, tomatoes and jalapenos in 2 tablespoons olive oil. Season with salt and pepper. Add to the hot grill. Cook the asparagus, onion slices and tomatoes for 4 minutes on each side. Remove from the grill.
  • Remove charred loose rings from the onion rounds and place into the blender. Remove the skins and seeds from the tomatoes, and disgard. Add tomatoes to the blender. Remove the skin and the seeds from the jalapenos and discard. Mince the jalapenos and add to the blender. Finally add the basil leaves, olive oil and balsamic vinegar to the blender and pulse until chunky.
  • Slice the steak and portobellos on a bias. Serve on a platter with the asparagus, shiitakes and tomato salsa. Drizzle with extra-virgin olive oil and balsamic vinegar.

2 (1 pound) New York strip steaks
2 tablespoons extra-virgin olive oil
1 tablespoon walnut oil
ground sea salt
freshly ground black pepper
1 large zucchini, cut into chunks
1 large yellow squash, cut into chunks
1 orange bell pepper, cut into 1-inch pieces
2 small tomatoes, cut into wedges
4 small red potatoes, cut into small wedges

1 pinch garlic and herb seasoning, or more to taste

Steps:

  • Soak the grilling planks in water.
  • Trim fat from the steaks and pat them dry with paper towels. Place the steaks in a zip-top plastic bag with 2 tablespoons olive oil and the walnut oil. Massage the oil into the steaks - I like to pound them a bit with my fists. Think anger management. Grind in the salt and pepper and squish them around in the bag to coat the steaks.   • To panbroil: Heat a stove-top ridged grill pan over medium-high heat for 5 minutes. Steps:

  • Prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill.

  • Pat dry steaks and season with salt if desired. Coat evenly with coarsely ground peppercorns, pressing lightly.
  • In a large, heavy skillet over medium high heat, combine oil and 1 Tbsp. of butter. Cook steaks for 4 to 7 minutes on each side, or until cooked to desired doneness. Transfer to serving plate.

6 (8 ounce) ny strip steaks
1 large shallot, minced (1/4 cup)
2 tablespoons fresh lemon juice
3 tablespoons extra virgin olive oil
kosher salt
fresh ground black pepper
10 cups loosely packed arugula
1 medium fennel bulb, trimmed halved lengthwise, cored, very thinly sliced
1 (4 ounce) container alouette crumbled goat cheese

Steps:

  • Whisk shallot and lemon juice in small bowl to blend. Gradually whisk in oil. Season to taste with salt and pepper. Let stand 15 minutes to blend flavors.
  • Combine Arugula and sliced fennel in large bowl. Toss with enough dressing to coat salad. Add Alouette Crumbled Goat Cheese; toss gently and serve.
  • ** You can also sprinkle a little of the Alouette Crumbled Goat Cheese onto the "Strip Steaks" during the last 2 to 3 minutes of cooking for a different presentation.

This sandwich was amazing, Steak cheese and mushrooms, what can be better. I sauteed fresh mushrooms for this but canned works too.

4 ounces cream cheese, softened
2 tablespoons horseradish mustard
1 cup baby spinach leaves, stems removed, coarsely chopped
2 New York strip steaks, grilled to desired doneness (about 8 oz. each)
4 tablespoons butter, softened
8 slices hearty white bread
4 slices havarti cheese
2/3 cup mushrooms, canned drained or 2/3 cup previously sauteed fresh mushrooms

Steps:

  • In a small bowl, combine cream cheese and horseradish mustard.
  • Stir until smooth.
  • Fold chopped spinach gently into the mixture.
  • Trim steak of any visible fat and thinly slice on the diagonal.
  • Spread butter evenly on one side of each slice of bread.
  • On the unbuttered sides of each slice, spread equal amounts of the cream cheese mixture.
  • Layer four slices of bread each with approximately 1/4 of the steak slices and 1/4 of the sautéed mushrooms.
  • Top each sandwich with a slice of Havarti cheese and remaining slice of bread, buttered side out.
  • Preheat a large skillet or griddle over medium heat.
  • Cook sandwiches for 2 to 3 minutes each side, or until golden and the cheeses are melted.
  • Serve immediately.

GRILLED MARINATED STRIP STEAK WITH SCALLIONS



Grilled Marinated Strip Steak with Scallions image

4 boneless strip steaks (about 10 ounces each)
1 bunch scallions
1/4 cup Worcestershire sauce
1/4 cup soy sauce
1 teaspoon dry mustard
1 teaspoon freshly ground pepper
1/2 teaspoon ground cumin
Grated zest of 1 lemon
Coarse salt

Steps:

  • Place the steaks in a large, shallow nonreactive dish. Slice 3 scallions into thin rounds, and combine with the remaining ingredients except the salt in a small bowl; whisk to combine. Pour the marinade over the steaks; cover with plastic wrap, and set aside at room temperature 40 minutes, turning the steaks once.
  • Heat a grill or grill pan. Remove the steaks from the marinade, letting the excess drip off, and pat dry with paper towels. Season both sides generously with salt. Grill until they are well browned on the outside and cooked to desired doneness, or about 6 minutes on each side, for medium-rare. Transfer to a large serving platter; cover with foil, and let rest 10 minutes. Grill the remaining scallions, about 1 minute on each side, and serve with the steaks.
