APPLE AND CELERY SLAW

4 stalks celery, julienned
2 green apples, julienned
1 jalapeno, halved lengthwise and thinly sliced
1/2 head green cabbage, thinly sliced
1/2 head purple cabbage, thinly sliced
1/2 cup olive oil
1/2 tablespoon Dijon mustard
1 tablespoon sugar
1 teaspoon white vinegar
1/4 teaspoon cayenne pepper
1/8 teaspoon salt
1/8 teaspoon celery salt
2 cups fresh cilantro leaves, barely chopped

Steps:

  • Combine the celery, apples, jalapeno and green and purple cabbage in a bowl. In a separate bowl, mix the olive oil, mustard, sugar, vinegar, cayenne, salt and celery salt. Pour over the cabbage mix and toss to combine. Cover and refrigerate for 2 hours.
  • Before serving, toss in the cilantro leaves.

GRILLED SLAW WITH GINGER AND SESAME



Grilled Slaw With Ginger and Sesame image

Napa makes an excellent cabbage for grilling. Its elongated shape provides greater surface area to char - and thus smoke - over a hot fire than a round cabbage. Its leaves are less tightly packed than conventional cabbage, allowing for deep penetration of the smoke flavor. Also known as Chinese cabbage, napa cabbage is native to China and pairs well with Asian seasonings, such as sesame oil, rice vinegar and ginger. To notch up the heat, add a spoonful of Asian chile paste.

Canola or grapeseed oil, for brushing the grate
1 head napa cabbage (about 2 pounds)
1 Asian pear
2 scallions
2 to 3 tablespoons sesame oil, plus 3 tablespoons for the dressing
Sea salt and freshly ground black pepper
1 red bell pepper
2 jalapeños
2 tablespoons granulated sugar, plus more to taste
1 tablespoon minced fresh ginger
1 garlic clove, minced
2 tablespoons rice vinegar, plus more to taste
2 tablespoons black or toasted white sesame seeds (optional)
1 teaspoon Chinese or Vietnamese chile paste (optional)

Steps:

  • Light your grill, building a hot fire and set it up for direct grilling. Brush or scrape the grill grate clean and grease it with a tightly folded paper towel dipped in canola oil.
  • Meanwhile, cut the cabbage lengthwise into quarters through the core. Cut the pear in half lengthwise and scoop out the seeds. Lightly brush the cabbage, pear and scallions all over with 2 to 3 tablespoons sesame oil and season with salt and pepper.
  • Grill the cabbage until darkly charred on all sides, 2 to 3 minutes per side. Char just the outside; the inside should remain cool, firm and crisp. Transfer to a sheet pan to cool.
  • Grill the cut sides of the pear until grill-marked, 2 to 3 minutes per side. Grill the scallions, bell pepper and jalapeños until grill-marked, turning halfway through, about 4 minutes. Transfer to the sheet pan. Let the vegetables cool to room temperature.
  • Make the dressing: In a large bowl, mash together the sugar, ginger and garlic with 1/2 teaspoon each salt and pepper. Add the rice vinegar and whisk until the salt and sugar are dissolved. Whisk in the remaining 3 tablespoons sesame oil, plus the sesame seeds and chile paste, if using.
  • Cut away and discard the core of each cabbage quarter, then thinly slice the charred cooled napa cabbage crosswise, and add it to the dressing. Julienne the pear, bell pepper and jalapeño and add them to the slaw, discarding the bell pepper and jalapeño seeds. Thinly slice the scallions crosswise, discarding the root ends, and add them as well.
  • Taste the slaw for seasoning, adding more vinegar, sugar and salt to taste. Refrigerate until serving and serve within a couple hours of mixing.

500 g cleaned squid
1 tablespoon salt
1/2 cup coriander leaves
7 tablespoons fish sauce, dip
1 pinch pepper
2 garlic cloves, crushed
2 tablespoons peanut oil
1 teaspoon five-spice powder
1 teaspoon curry powder
1 tablespoon finely chopped lemongrass
1 tablespoon soy sauce
1 teaspoon sesame oil
1 tablespoon lime juice
1 teaspoon sugar

Steps:

  • Rub the squid with salt and rinse.
  • Slit and flatten the squid sac and make diagonal cuts on the inside surface.
  • Cut into bite-sized pieces.
  • Set aside in a bowl.
  • In another bowl, mix all the ingreduents, EXCEPT THE FIRST FOUR INGREDIENTS, making the marinade. Mix for thirty seconds.
  • Put the squid inside the bowl with the marinade and leave for 1 hour.
  • When one hour is finished, grill the squid over a charcoal grill until just tender (about three minutes each side).
  • Arrange on a serving platter and garnish with half-a-cup of coriander leaves.
  • Serve with fish sauce dip.

1/4 cup extra-virgin olive oil
1/4 cup apple cider vinegar
2 tablespoons freshly squeezed orange juice
1 teaspoon honey mustard
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 cups finely shredded green cabbage
2 small fennel bulbs, cores removed and thinly sliced, fronds reserved for garnish
2 stalks celery, thinly sliced on a bias, plus 1/4 cup celery leaves
1 Honeycrisp apple, julienned

Steps:

  • To make the dressing, add the olive oil, vinegar, orange juice, honey mustard, salt and pepper to a mason jar. Cover and shake to emulsify. Set aside.
  • Add the cabbage, sliced fennel, celery, celery leaves and apple to a serving bowl. Top with the dressing. Toss to coat the vegetables in the dressing.

6 tablespoons honey
3 tablespoons red chile paste, such as sambal
2 tablespoons rice vinegar
1 tablespoon low-sodium soy sauce
Juice of 1/2 lime
1 garlic clove, minced
1 teaspoon minced fresh ginger
2 pounds squid bodies and tentacles, cleaned
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
Juice of 1 lime
Fresh mint leaves, for serving

Steps:

  • Put the first seven ingredients in a small bowl and stir to combine. Set aside.
  • Place a large grill pan on two burners over medium-high heat or preheat an outdoor gas or charcoal grill and get it very hot. Take a few paper towels and fold them several times to make a square. Blot a small amount of oil on the paper towels and then carefully and quickly wipe the hot grates of the grill (or the ridges of the grill pan) to create a nonstick surface.
  • Rinse the squid under cool water and pat dry. Split the tubes from top to bottom, then cut in half diagonally so that you get 2 triangles from each squid. Score the flesh lightly in a diamond pattern. Thread a skewer through the length of each to keep the squid flat on the grill. Toss with olive oil and sprinkle with salt and pepper. Lay the calamari on the grill and cook for 2 minutes on each side.
  • Serve the squid with the chili sauce, along with remaining lime juice and mint leaves.

Juice of 1 lemon
3 tablespoons extra-virgin olive oil
Sea salt and freshly ground pepper
8 medium squid (no bigger than your hand)
6 large fresh red chiles, seeded and very finely chopped
2/3 cup extra-virgin olive oil
Sea salt and freshly ground pepper
1/2 pound arugula
1 lemon, cut into quarters

Steps:

  • Dressing: Whisk together lemon juice and oil. Season with salt and pepper.
  • Squid: Clean squid by cutting body open to make a flat piece and scraping out guts. Keep tentacles in their bunches but remove eyes and mouth. Using a serrated knife, score inner side of flattened squid body with parallel lines 1/2 inch apart, and then lines equally apart the other way to make crosshatching.
  • To make the sauce, put chiles in a bowl and cover with oil. Season with salt and pepper.
  • Heat grill for direct heat (or a grill pan on high). Place squid (including tentacles), scored-side down, on grill, season with salt and pepper, and grill 1 to 2 minutes. Turn squid pieces over; they will immediately curl up, by which time they will be cooked.
  • Toss arugula in dressing. Arrange two squid bodies with tentacles on each plate with some arugula. Put a little chile sauce on squid and serve, with lemon quarters.
