Grilled Shrimp with Fresh Tomato Sauce and Angel Hair Pasta image

Everything except the pasta is done on the grill in this quick and delicious recipe. Shrimp bathe in a yummy marinade while the rest of the ingredients are prepped. Angel hair pasta cooks in about 5 minutes, so have it ready and out of the way, before you go to the grill. Once you get the ingredients outside, things will go very quickly! A Caesar salad and some hot garlic bread would be great sides!

¼ cup herb-infused extra-virgin olive oil
½ lemon, juiced
salt and ground black pepper to taste
1 pound fresh shrimp, peeled and deveined
1 (8 ounce) package angel hair pasta
2 teaspoons herb-infused extra-virgin olive oil
½ red onion, thinly sliced
2 Roma tomatoes, diced
3 cloves garlic, minced
¼ teaspoon crushed red pepper flakes
½ cup dry white wine
¼ cup heavy cream
1 tablespoon chopped fresh parsley

Steps:

  • Combine 1/4 cup olive oil, lemon juice, salt, and pepper in a large resealable plastic bag. Gently squeeze ingredients in the bag to combine. Add shrimp. Remove as much air as possible, seal, and move shrimp around in the bag to coat in the marinade. Place in a tray or plate so shrimp are in a single layer. Marinate in the refrigerator for 30 to 45 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes. Drain.
  • Preheat an outdoor grill for medium-high heat. Place a heat-proof skillet on one side of the grill to heat with the grill. Thread shrimp onto metal skewers.
  • Place shrimp skewers onto the hot grate and grill until the shrimp turn white and opaque, 2 to 3 minutes per side. Remove from the grill.
  • Meanwhile, pour 2 teaspoons olive oil into the hot skillet and cook onion, stirring frequently, until softened, 2 to 3 minutes. Add tomatoes, garlic, and red pepper flakes; cook and stir for 1 to 2 minutes. Pour in wine and allow to reduce, about 4 minutes. Stir in cream. Cook and stir for 1 minute. Season with salt and pepper to taste. Add cooked pasta and shrimp to the skillet and stir to combine. Sprinkle with fresh parsley and serve.

A wonderful creamy pasta in a delicious wine sauce, loaded with grilled shrimp and chicken. This recipe is similar to that of a famous steakhouse which shall remain anonymous! Don't be a 'chicken' - try it!

¼ teaspoon poultry seasoning
¼ teaspoon cayenne pepper, or to taste
⅛ teaspoon ground white pepper
⅛ teaspoon onion powder
1 tablespoon garlic powder
2 tablespoons butter
1 cup heavy cream
½ cup milk
1 pound linguine pasta
1 tablespoon olive oil
½ cup white wine
4 skinless, boneless chicken breasts
8 ounces shrimp
3 tablespoons grated Romano cheese

Steps:

  • In a small bowl, mix together the poultry seasoning, cayenne pepper, white pepper, onion powder, and garlic powder. Divide spice mixture in half.
  • In a small skillet, melt butter over low heat. Slowly stir in cream and milk, and 1/2 of spice mixture. Continue cooking over low heat, stirring frequently, until slightly reduced and thickened to desired sauce consistency. Remove from heat, and set aside.
  • Preheat grill to high heat. Meanwhile, bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente. Drain, and set aside.
  • In a large skillet, heat olive oil over medium-high heat. Carefully stir in wine and remaining spice mixture. Place chicken breasts in the skillet, and cook for 16 to 20 minutes, or until no longer pink in center and juices run clear. Remove from heat and set aside.
  • Lightly oil grill grate. Cook shrimp on preheated grill for 3 to 4 minutes, or until slightly opaque. Serve each chicken breast on a bed of linguine topped with grilled shrimp. Ladle generously with cream sauce. Garnish with Romano cheese, if desired. Enjoy!

I have been working and trying to perfect this Asian inspired recipe for years. Here is my latest version, and I'm happy to share.

1 pound(s) shrimp, peeled and deveined (16-21 count)
8 ounce(s) linguine, uncooked
1/2 pound(s) sugar snap peas
1 large red pepper sliced 1/4 inch
1/2 cup(s) celery chopped
1/4 cup(s) cilantro chopped
3 - scallions chopped
DRESSING
1/2 cup(s) rice vinegar
1/2 cup(s) low sodium soy sauce
3 tablespoon(s) toasted sesame oil
2 teaspoon(s) chili oil
1-1/2 tablespoon(s) fresh ginger grated
2 large garlic cloves grated
1 teaspoon(s) sugar
GARNISH
- cilantro leaves
- toasted sesame seeds (optional)

Steps:

  • Since you'll be grilling the shrimp, soak wooden skewers in water for 1/2 to 1 hour. While skewers are soaking, prepare dressing by combining all ingredients into a medium size jar and shake to combine. Pour half the dressing into a gallon size plastic bag and add shrimp. Let shrimp marinate for 30 minutes. Skewer and cook shrimp on grill (I use my indoor grill pan) about 2-3 minutes per side. Set cooked shrimp aside and assemble the salad.
  • Cook linguini according to package directions, drain and rinse with cold water to stop the cooking. While pasta is cooking, chop the cilantro, scallions and celery. Microwave the sugar snaps for 1-1/2 minutes and the sliced red peppers for 45 seconds.
  • Combine pasta, cooled sugar snaps and red pepper, scallions, celery and cilantro and toss with remaining dressing.
  • Plate and garnish with cilantro and toasted sesame seeds (optional). Serve the shrimp on skewers as I do, but the dish is equally impressive when the shrimp is mixed in with the pasta salad. Serve at room temp or cold.

2 lbs pineapple chunks, packed in their own juice, drained
1 large red bell pepper, chopped
1 large red onion, chopped
1 jalapeno pepper, minced (seeded for less heat or half seeded for more heat)
1/4 cup pineapple juice (from the pineapple chunks)
1/4 cup orange juice
1/3 cup lime juice
1 -2 tablespoon low sodium soy sauce (optional)
1 1/2 cups shrimp, peeled and deveined
4 1/4 cups fusilli or 4 1/4 cups rotelle pasta

  • In a large bowl, combine all salsa ingredients plus the low-sodium tamari, except the shrimp and pasta.
  • Prepare an outside grill with an oiled rack set 4 inches above the heat source.
  • On a gas grill, set the heat to high.
  • Grill the shrimp on each side for 2 minutes.
  • Toss the pasta with the salsa, arrange the shrimp on top, and serve.

72 large peeled and deveined raw shrimp
One pound of your favorite fresh or boxed pasta
one large eggplant
36 grape tomatoes
one cup olive oil plus a few tablespoons, divided
four cloves of garlic, crushed

Steps:

  • 1. Place shrimp in glass bowl with 1/2 cup of olive oil and garlic cloves, toss to coat. Marinate for approximately 30 minutes. 2. Peel eggplant and slice into 3/4 inch circles. Brush generously with remaining 1/2 cup olive oil and set aside. 3. Place six shrimp ( on 12 skewers) and six tomatoes(on six skewers)on each prepared bamboo skewer. 4. Over hot grill, place eggplant evenly and turn after 4-5 minutes. Total grilling time should be approximately 10 minutes. Grill tomatoes during the same time, turning frequently. 5. During the last four minutes of vegetable grilling, place skewered shrimp in metal seafood grilling basket (for easy turning) turn once after one or two minutes, total of two to four minutes(until shrimp are pink and firm). 6. Prepare pasta according to package directions, but test early for doneness to achieve al dente texture. Toss in a few Tablespoons of olive oil. 7. Divide pasta evenly over six plates, place slices of eggplant on side, and place one skewer of tomatoes between two skewers of shrimp on each plate.
