6 oz 1" to 1-1/2" thick ahi tuna steak
1/2 cup sesame seeds (white & black mixed)
1/4 cup soy sauce
1 Tablespoon sake
1 Tablespoon honey
2 Tablespoons sesame oil
1 Tablespoon rice wine vinegar

Steps:

  • Mix all ingredients for marinade in small bowl.
  • Place tuna steak in small resealable zippered bag and add marinade. Turn to coat. Let stand for 10-20 minutes, turning several times.
  • Place black and white sesame seeds on a plate. Remove tuna steak from marinade and dip into sesame seed mixture, patting into steak until all sides are coated.
  • Preheat grill on high. Place tuna steaks directly on grill and quickly sear, about 1-1/2 to 2 minutes per side. Medium rare has an internal temperature of 125 degrees.

Four 1-inch-thick fresh tuna steaks (about 4 pounds)
Olive oil
Kosher salt and freshly ground black pepper

Steps:

  • To grill the tuna, get a charcoal or stove-top cast-iron grill very hot. Brush the fish with olive oil, and sprinkle with salt and pepper. Grill each side for only 2 to 2 1/2 minutes. The center should be raw, like sushi, or the tuna will be tough and dry. Allow to rest for 5 to 10 minutes and serve.

¼ cup sesame oil
2 tablespoons mirin (Japanese sweet wine)
2 tablespoons honey
2 tablespoons rice wine vinegar

2 green onions, thinly sliced, divided
2 cloves garlic, minced, or more to taste
4 (6 ounce) tuna steaks
2 tablespoons sesame seeds, or to taste

Steps:

  • Whisk tamari, sesame oil, mirin, honey, vinegar, ginger, green onions, and garlic together in a bowl until marinade is evenly mixed. Place tuna steaks in the marinade and refrigerate for at least 1 hour.
  • Spread sesame seeds onto a plate. Remove tuna from marinade and discard marinade. Press tuna into sesame seeds until evenly coated.
  • Heat olive oil in a cast iron skillet over high heat until very hot; cook tuna in the hot oil until cooked to desired doneness, 30 seconds to 5 minutes per side.

4 6oz Ahi- Tuna Steaks (about 1 ½ inch thick)
¾ cup teriyaki marinade
¼ cup roasted black or white (or mixed) sesame seeds
12 oz fresh spinach leaves
2 tablespoons olive oil (split in half, 1 for the steaks and 1 for the spinach)
1 tablespoon fresh lemon juice
Ginger Salsa:
3 tablespoons rice wine vinegar
1 tablespoon wasabi powder
1/4 cup English hot house cucumber sliced thin and quartered
3 tablespoons chopped sushi ginger
2 tablespoons small diced red onion
2 tablespoons chopped roasted red bell pepper from jar
Salt and pepper

Steps:

  • In a zip lock baggie, marinate tuna steaks for ½ hour. In a small bowl whisk the rice wine vinegar and wasabi powder together. Add the ginger, cucumber, onion and roasted pepper. Add a touch of salt and pepper, toss and set aside at room temperature. Heat gas grill to a medium high heat or charcoals should be medium ash in color. Brush each steak with olive oil so it will not stick to the grill, and then roll the sides of steaks only, in sesame seeds. Grill steaks to your desired taste, for medium rare, 4 minutes per side. Meanwhile in a 10 inch skillet heat to a medium high heat and add one tablespoon of olive oil. Add the spinach leaves and lemon juice and toss for 2 minutes until spinach is limp. Do not over cook. Divide the spinach on to four plates, top with ahi-tuna steak and then ginger salsa.

3 tablespoons salted butter
2 tablespoons jarred capers, drained
1/4 cup fresh Italian flat-leaf parsley, finely minced
1 whole garlic clove, peeled and smashed
1/2 teaspoon Dijon mustard
1 pinch kosher salt
4 steaks (1 pound) high quality ahi tuna (sashimi grade recommended; wild caught if you can find it*)
1 tablespoon neutral oil
1 1/2 teaspoons kosher salt
Fresh ground black pepper

Steps:

  • Allow the tuna steak to come to room temperature by letting it stand for at least 20 minutes. (Use this time to prep the ingredients for the sauce!)
  • Pat the tuna dry. Sprinkle it liberally with kosher salt and fresh ground black pepper on both sides to get a nice even coating.
  • Heat the oil in a medium skillet over medium high heat. Add the tuna steaks and cook 1 to 2 minutes per side, until lightly browned on the outside but still rare the inside. The tuna will continue cooking while sitting. For a medium-rare tuna steak, the internal temperature should be 130 degrees Fahrenheit when measured with a food thermometer at the thickest point.
  • Allow the tuna to cool for 3 minutes while you make the sauce.
  • Melt the butter in a small saucepan or skillet over low heat. Once melted, add the capers (whole or chopped for a smoother sauce), finely minced parsley, the smashed garlic clove, Dijon mustard, and salt and cook until fragrant, about 3 minutes. Remove from heat and remove garlic clove.
  • Slice the tuna against the grain into ½-inch slices and serve immediately with a few drizzles of the sauce.

1 clove garlic, minced
2 tablespoons sesame oil
1/4 cup hoisin sauce

3 tablespoons toasted sesame seeds
2 tablespoons chopped cilantro
4 tuna steaks, about 6 ounces each
1 tablespoon olive oil

Steps:

  • Make the sauce. Stir-fry the scallions, ginger and garlic in the sesame oil for one to two minutes. Add the remaining ingredients and pour the sauce into a small bowl. Set aside.
  • Meanwhile, preheat the grill. Sprinkle the tuna fish with olive oil on both sides and season with salt and liberal grindings of pepper. Grill the fish for two to three minutes on each side for rare, longer if you wish it more well-done. Serve with the sauce on the side.

This recipe is dedicated to the other side of the sushi bar menu, where after you work your way through the nigiri and sushi rolls, you discover things like tuna tataki and cold, Japanese-style spinach salad. While I can't promise authenticity, I can promise this is fast and simple to make--and I think, extremely delicious.

½ pound baby spinach leaves
3 tablespoons white sesame seeds
1 tablespoon white sugar
1 tablespoon soy sauce, or to taste
½ teaspoon mirin
¼ cup mayonnaise
2 teaspoons white miso paste
1 tablespoon seasoned rice vinegar
2 (5 ounce) sushi-grade ahi tuna steaks
salt to taste
2 tablespoons black sesame seeds
2 teaspoons vegetable oil
1 tablespoon prepared ponzu sauce

Steps:

  • Place spinach in a dry pot set over medium-high heat and cook, stirring, until it just begins to wilt, 1 to 2 minutes. Transfer into a strainer to cool.
  • While spinach cools, toast white sesame seeds in a dry pan over medium heat until light golden brown. Transfer into a mortar and pestle and crush into a very coarse paste, leaving some seeds whole. Add white sugar, soy sauce, and mirin. Stir with a wooden spoon to combine and reserve.
  • Transfer cooled spinach to a towel and squeeze out any excess liquid. Chop roughly and add to a mixing bowl. Add the dressing and mix well. Cover and chill thoroughly before serving.
  • Mix mayonnaise, miso paste, and rice vinegar together for miso mayo sauce. Place in the refrigerator until needed.
  • Lightly salt tuna steaks, and then coat all sides well with as many sesame seeds as you like, pressing them lightly as you do.
  • Brush a nonstick pan with oil and place over medium heat. Sear tuna steaks in the hot pan for 30 to 45 seconds on each side, as well as each edges.
  • Slice and place tuna over the miso sauce. Brush tuna with ponzu and serve with spinach salad on the side.

¼ cup light soy sauce
1 ½ tablespoons honey
1 tablespoon grated fresh ginger
1 clove garlic, minced
1 pound salmon fillets
1 teaspoon sesame oil
2 teaspoons sesame seeds

Steps:

  • Whisk soy sauce, honey, ginger, and garlic together in a bowl until marinade is evenly mixed. Set aside 1/4 of the marinade.
  • Place salmon fillets in shallow dish; pour the remaining marinade over the salmon. Cover dish with plastic wrap and refrigerate for 5 minutes.
