These Grilled Chicken Sandwiches are perfect for a hot summer day, served with a fresh salad or grilled veggies!

Number Of Ingredients 10

1 ½ pounds chicken breasts (4 small)
4 sesame seed buns
¼ cup honey mustard sauce* (or mayonnaise)
lettuce, tomatoes, onions (optional)
3 tablespoons vegetable oil
2 tablespoons cider vinegar
1 tablespoon dijon mustard
1 teaspoon garlic powder
1 tablespoon brown sugar
½ teaspoon salt & pepper (each )

Steps:

  • Pound chicken breasts to ½" thickness.
  • Combine all marinade ingredients in a bowl or freezer bag. Add chicken and toss well to combine. Marinade for 30 minutes (or up to 4 hours).
  • Preheat grill to medium-high heat.
  • Place chicken on the grill for 5-6 minutes per side until no pink remains and chicken reaches 165°F.
  • While chicken is grilling, brush buns with olive oil and place face down on the grill. Lightly toast.
  • Spread each bun with honey mustard and add lettuce, tomatoes and onions if desired. Top with chicken and serve.

1/4 teaspoon ground ginger
1/4 teaspoon ground mustard
Dash salt
1-1/2 cups diced cooked chicken
1/3 cup diced apple
1/3 cup sunflower kernels
2 green onions, finely chopped
1/3 cup mandarin oranges
4 croissants, split
Lettuce leaves, optional

  • In a small bowl, mix mayonnaise, ginger, mustard and salt. Stir in chicken, apple, sunflower kernels and green onions. Gently fold in mandarin oranges. Serve on croissants with lettuce if desired.

2 skinless, boneless chicken breast halves
¼ cup olive oil
2 tablespoons white wine vinegar
1 lemon, juiced
1 tablespoon garlic and herb seasoning blend (such as Mrs. Dash®)
1 teaspoon ground black pepper
4 sprigs fresh dill, chopped
2 tablespoons butter
2 tablespoons olive oil
⅛ teaspoon garlic powder
⅛ teaspoon salt
8 thick slices French bread
2 tablespoons mayonnaise, or to taste
4 slices tomato
4 lettuce leaves

Steps:

  • Preheat grill to medium-high heat.
  • Prick chicken breasts all over with a fork. Place chicken breasts, 1/4 cup olive oil, white wine vinegar, lemon juice, garlic and herb seasoning, ground black pepper, and chopped fresh dill in a bowl. Stir to coat chicken breasts completely. Let stand for 10 minutes.
  • Remove chicken breasts from marinade, discard marinade, and grill chicken for 10 to 15 minutes on each side, or until juices run clear and an instant-read meat thermometer inserted into the thickest part of a breast reads at least 160 degrees F (70 degrees C). Remove from grill; let stand for 5 minutes. Cut chicken breasts in half.
  • Melt butter and 2 tablespoons olive oil in a skillet over medium-high heat. Sprinkle garlic powder and salt over butter and oil. Add French bread slices to the pan and toast until golden brown on one side, about 3 minutes; remove from pan.
  • For sandwich assembly, place one slice of French bread with toasted side down onto a serving plate. Spread mayonnaise on bread; top with a slice of tomato, salt and ground black pepper to taste, half a grilled chicken breast, and lettuce. Spread untoasted side of another slice of bread with mayonnaise and place on top to make a sandwich.

Summer may be all about lighter recipes, but that doesn't have to mean light on flavor! I made this recipe at my first job and fell in love with the combination of the buttery flakiness of a toasted croissant with a creamy filling that makes it a perfect comfort food for the warmer seasons. I love the way the two textures combine with summer ripe Roma tomatoes, hot cherry pepper relish and a balsamic glaze to create serious #sandwichgoals.

Kosher salt and freshly ground black pepper
Four 6- to 8-ounce boneless, skinless chicken breasts
2 ribs celery, diced
2 scallions, white and pale green parts only, sliced thin
1/4 cup dried cherries
1 teaspoon Dijon mustard
1 teaspoon granulated sugar
1 cup mayonnaise
1/2 cup walnuts, toasted
Romaine lettuce leaves, for serving
4 fresh croissants, sliced and lightly toasted, cut-side up, in the broiler
Sliced Roma tomatoes, for serving
Hot cherry pepper relish or giardiniera, for serving
Balsamic glaze, for drizzling

Steps:

  • In a large Dutch oven or pot, stir 1 tablespoon salt into 6 cups cold water. Add the chicken and heat over medium heat until the water hits a temperature of 170 degrees F. Take the pot off the heat, cover, and let the chicken sit in the warm water until its internal temperature hits 165 degrees F, 15 to 20 minutes. Transfer the chicken to paper towels to dry. Once cool enough to handle, pull the chicken apart with your hands or forks until shredded but still chunky.
  • Meanwhile, in a large bowl, mix the celery, scallions, cherries, mustard, sugar and salt and pepper to taste. Let this mixture sit for at least 10 minutes or up to 1 hour to extract all that flavor. Add the mayo and mix until incorporated. Adjust the seasoning if necessary.
  • Add the shredded chicken and walnuts to the mayo mixture. Adjust the seasonings. Let it sit in the fridge for at least 1 hour before serving, overnight preferred.
  • Place a piece of lettuce on the bottom half of a croissant followed by a scoop of chicken salad, one or two tomato slices, a spoonful of hot cherry pepper relish or giardiniera and a little drizzle of balsamic glaze. Close the top of the croissant. Assemble 3 more sandwiches. Cut the sandwiches in half and eat!

4 (12 1/2 ounce) cans chicken
1 large green apple
1 lb grapes
1 1/2 cups mayonnaise
10 croissants

Steps:

  • Drain chicken and dump contents in bowl.
  • I use a potato peeler and peal my apple. Sometimes I just scrape the whole apple and chop the scrapings. Or you could just finely chop the whole apple.
  • I usually cut the grapes in half with a knife. or I take a grape between my thumb and index finger and smash it and it break into 2 pieces. I do this to over half the bag. That works 2!
  • Add the mayo and stir all together.
  • Cut croissants in half and spoon mixture on.
  • This looks very pretty and elegant!
