- In a large shallow dish, combine the first 9 ingredients. Add catfish, 1 fillet at a time, and turn to coat., Place a large cast-iron skillet on a grill rack over medium-high heat. Melt butter in the skillet; add catfish in batches, if necessary. Grill, covered, until fish just begins to flake easily with a fork, 5-10 minutes on each side.

- 1. Wash and dry catfish filets. Salt and pepper. Sprinkle your choice of seasonings on both sides of fish. Let stand for a few minutes. We use a cajun, no salt mixture of seasonings. This is made up of curry powder, onion powder,garlic powder, and other ingredients on the label. Actually, we do not put a lot of salt on the fish when we are seasoning it.
- 2. After the fish is seasoned, place it on the grill. Keep turning it until there are no more juices running from it. When using the George Forman grill we just follow the directions of usage for the grill. This is also good on the regular grill!

- Place fillets in a large resealable plastic bag; add salad dressing.
- Seal bag; refrigerate for 1 hour, turning occasionally.
- Drain and discard marinade.
- Combine remaining ingredients; mix well.
- Grill fillets, covered, over medium-hot coals for 3 minutes on each side.
- Brush with sauce.
- Continue grilling for 6-8 minutes or until fish flakes easily with a fork, turning once and basting several times.
SIMPLE GRILLED CATFISH
Steps:
- Gather the ingredients. Preheat the grill to medium heat. Brush and oil the grates so that you have a clean grilling surface for the fish.
- Brush the catfish fillets with the Worcestershire sauce and sprinkle with the ground pepper.
- Place the fish on the preheated grill. If using a charcoal grill, place the fillets about 4 to 6 inches from the heat. Grill for 4 to 5 minutes.
- Brush again and turn. Grill about 5 minutes longer, or until the fish flakes easily with a fork. Sprinkle with salt, if desired.

- Pour the juice of 5 lemons into a glass bowl; whisk in the sea salt and garlic. Add the catfish fillets, cover, and marinate in the refrigerator 1 to 4 hours.
- Preheat the oven's broiler for 400 degrees F (205 degrees C) and set the oven rack to the lowest position.
- Remove the catfish fillets from the marinade, and shake off excess; discard the remaining marinade. Place the fillets on a broiling pan; sprinkle with the lemon pepper seasoning, garlic and herb seasoning, and Creole seasoning. Arrange the lemon slices over the fillets.
- Broil in the preheated oven until the fish flakes easily with a fork, 12 to 15 minutes. You may wish to turn the broiler on fully for the last few minutes if you like the edges of the fish blackened. Sprinkle the fillets with shredded carrot and parsley to garnish. Serve with lemon wedges on the side.

CAJUN BLACKENED CATFISH
This is a recipe that I obtained from a very good Cajun friend who is a native of Lafayette, Louisiana. His family adopted me (friendly) many years ago and we have swapped Cajun and Creole recipes through the years.

- In a shallow bowl, mix together the black pepper, garlic powder, onion powder, paprika, parsley, cayenne pepper, kosher salt, oregano, and thyme until thoroughly combined. Press the catfish fillets into the spice mixture to thoroughly coat.
- Arrange a portable heat source outdoors, such as a butane burner or side burner of a gas grill. Melt butter in a glass or metal bowl. Light the burner, and place a large cast-iron skillet onto the burner over high heat. Pour about 1/4 cup of melted butter into the skillet; set remaining 1/2 cup of butter aside.
- When the butter in the skillet is smoking hot, lay the catfish fillets into the skillet. Cook until the spices are burned onto the fillets and the catfish is opaque and flaky inside, about 3 minutes per side. Don't breathe smoke from burning spices. To serve, pour remaining 1/2 cup of butter over the catfish.

We love fish! We had to find a way to cook fish...had to give up fried foods. I ate this at the Cracker Barrel and went home and gave it a try! Quick and easy! I usually serve it with Long Grain and Wild Rice....

- 1. In a 12" skillet, heat olive oil.
- 2. Season fillets with blackened seasoning on both sides of fish. Cook in hot oil for a couple minutes on each side. Blackened seasoning will smoke, so reduce heat to prevent fire alarm from going off. Cook until fish is tender and easily flakes. Remove from heat and place on warmed dinner plate to serve.
- 3. Serve with lemon slices.
