¾ pound fresh green beans, trimmed and halved
½ pound red potatoes, quartered
1 large onion, sliced
1 pound smoked sausage, cut into 1 inch pieces
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon vegetable oil
1 teaspoon butter
⅓ cup water

Steps:

  • Preheat an outdoor grill for high heat.
  • On a large sheet of foil, place the green beans, red potatoes, onion, and sausage. Season with salt and pepper, sprinkle with oil, and top with butter. Tightly seal foil around the ingredients, leaving only a small opening. Pour water into the opening, and seal.
  • Place foil packet on the prepared grill. Cook 20 to 30 minutes, turning once, until sausage is browned and vegetables are tender.

1/2 small head savoy cabbage, cut in half and core removed
1 cup julienned carrots
1/2 cup thinly sliced red onion
1/4 cup oil
2 tablespoons white wine vinegar
1 teaspoon smoked or regular paprika
2 teaspoons Dijon mustard
1/2 teaspoon coriander
2 teaspoons kosher salt
1/2 serrano chile, finely chopped
4 sweet pork sausages
4 hero rolls, split

Steps:

  • 1. Cut the cabbage into thin strips and add to a bowl with the carrots, onion, oil, vinegar, paprika, mustard, coriander, cilantro, salt, and chile. Mix into a slaw and set aside to marinate. 2. Grill the sausages whole on a grill or in a grill pan for about 15 minutes, until cooked through. (Or grill the sausages whole for a few minutes and then cut them in half and finish grilling on the cut side.) Stuff the rolls with the cabbage slaw. Place the sausages on top, and follow with some more slaw. Serve immediately.

1 package (16.9 ounces) frozen potato and onion pierogi
1 package (14 ounces) smoked turkey sausage, cut in half lengthwise and sliced into 1/2-inch pieces
2 tablespoons butter, divided
2 tablespoons canola oil, divided
1 medium onion, sliced
1 package (14 ounces) coleslaw mix
1/2 teaspoon garlic powder
1/4 teaspoon celery salt
1/4 teaspoon pepper
1 bay leaf

Steps:

  • Cook pierogi according to package directions. Meanwhile, in a large skillet over medium heat,cook sausage in 1 tablespoon butter and 1 tablespoon oil; cook and stir for 2 minutes. Add the remaining ingredients; cook and stir for 1-2 minutes longer or until coleslaw is wilted. Remove from the heat; keep warm., In another large skillet, heat remaining butter and oil. Drain pierogi; add to skillet. Cook and stir until browned; add the sausage mixture and toss to coat. Discard bay leaf.
