- Pour 1/2 cup chicken stock, vinegar, orange juice, and honey into a saucepan. Bring to a boil over high heat, then reduce heat to medium. Dissolve cornstarch in 1/4 cup of chicken stock, and stir into the simmering sauce. Cook and stir until the sauce thickens and turns clear, 1 to 2 minutes. Stir in the blueberries and chives, and keep warm over low heat.
- Preheat grill or broiler to medium high-heat.
- Brush salmon with oil, and season to taste with salt and pepper. Grill or broil until the fish flakes easily with a fork, about 3 to 4 minutes per side. Serve with blueberry sauce.

I use a riesling wine for this but you can use any white wine.

- 1. In a medium saucepan over low heat, simmer together shallots, wine, vinegar and thyme for 15 to 20 minutes or until most of the liquid is gone.
- 2. Add the blueberries, butter and honey. Cook until the berries soften about 2 to 4 minutes.
- 3. Meanwhile, spray the salmon with cooking spray. Salt and pepper to taste.
- 4. Place salmon on the rack of an uncovered grill directly over medium coals.
- 5. Grill for 2 to 3 minutes minutes per side or until fish flakes easily when tested with a fork.
- 6. Spoon the blueberry sauce over the salmon to serve
- 7. NOTE: You will need to adjust the cooking times if your fillets are thinner or thicker than 1/2 inch.

- Soak grilling planks in water for at least 1 hour. , In a food processor, combine the blackberries, wine, brown sugar, honey, hot pepper sauce, 1/8 teaspoon salt and 1/8 teaspoon pepper; cover and process until blended. Strain and discard seeds. Stir shallots and garlic into the sauce; set aside., Place planks on grill over medium-high heat. Cover and heat until planks create a light to medium smoke and begin to crackle, about 3 minutes (this indicates planks are ready). Turn planks over. , Sprinkle salmon with remaining salt and pepper. - Thaw fish, if frozen, and blueberries. For sauce: In a small saucepan, cook and stir onion and garlic in hot oil about 3 minutes or until softened. Add blueberries, vinegar, brown sugar, ginger, and lemon peel. Bring to boiling; reduce heat. Simmer, uncovered, about 15 minutes or until sauce has thickened and reduced to 1 cup.

SALMON WITH AGRODOLCE BLUEBERRIES
Here, I paired fillets with a seasonal treat: fresh local blueberries. The berries would have been cloying with the fish by themselves, so I simmered them with white wine and vinegar, creating a sweet-and-sour sauce inspired by Italian agrodolce. The bracing blueberry agrodolce would have worked wonderfully on other fish, especially oily ones like mackerel and swordfish. I could also see spooning it over boneless chicken thighs before roasting, or pairing it with meaty pork tenderloin or chops that have just come off the grill in all their smoky glory.

- Run your fingers over the salmon flesh and pull out any pinbones. Season fish generously with salt and let rest at room temperature while you prepare the sauce.
