Dry rubs are also a terrific way to season pork chops. Select chops of close to an inch in thickness - nothing flimsy - then grill them over steady medium heat. We opt for rib chops over the center-cut variety when cooking outdoors because their greater fat content helps keep them moist, and we always prefer bone-in chops for their juiciness. You might add a barbecue sauce on the side with these, but we relish their crispy surface unvarnished.

Pork Chop Willy's Grilling Rub
3 tablespoons sweet paprika, preferably Spanish
1 tablespoon freshly ground black pepper
1 tablespoon coarse salt, either kosher or sea salt
3/4 teaspoon sugar
3/4 teaspoon chili powder
3/4 teaspoon granulated garlic or garlic powder
3/4 teaspoon onion powder
1/4 to 1/2 teaspoon ground cayenne
Six to eight 10- to 11-ounce bone-in pork rib chops, 3/4 to 1 inch thick
Vegetable oil spray

Steps:

  • At least 1 and up to 8 hours before you plan to grill the pork chops, prepare the dry rub, combining the ingredients in a small bowl. Coat the chops with the spice mixture, place them in a large plastic bag, seal, and refrigerate.
  • Fire up the grill, bringing the heat to medium (4 to 5 seconds with the hand test).
  • Remove the chops from the refrigerator and let them sit covered at room temperature for about 20 minutes.
  • Spray the chops with oil and transfer them to the grill. Grill for 18 to 20 minutes total. Turn onto each side twice, rotating the chops a half turn each time to get criss-cross grill marks. The chops are done when just a hint of pink remains at the center. Serve hot.

1 tablespoon Dijon mustard
1 tablespoon ancho chile powder

Steps:

  • Combine all ingredients in a medium bowl.;
  • Combine all ingredients in a small bowl.;
  • Preheat grill to medium-high. Reserve 1/2 cup of the Maple-Horseradish Glaze and set aside. Brush pork chops on both sides with olive oil and season with salt. Rub 1 tablespoon of the rub onto 1 side of each pork chop. Grill, rub-side down until golden brown, about 4 to 5 minutes. Brush each chop with some of the Maple-Horseradish glaze and turn over. Continue grilling for 3 to 4 minutes for medium doneness, brushing with some of the glaze. Remove the chops to a platter and brush with the reserved glaze.
  • 2 sweet potatoes, cooked 3/4 of the way Spicy Maple Glaze
  • Slice the potatoes, crosswise, into 1-inch thick slices. Brush with maple glaze and grill for 2 to 3 minutes per side.

Steps:

  • In a large zip-top bag, combine coriander, brown sugar, cumin, and 1 teaspoon each salt and pepper. Add pork and 1 tablespoon oil and toss to coat. Refrigerate at least 8 hours (or up to 1 day).
  • Heat a grill or grill pan to medium-high; clean and lightly oil hot grill. Grill pork, covered, about 5 minutes per side for medium. Let rest, covered, 10 minutes.

4 pork bone-in rib chops, about 3/4-inch thick, trimmed
1 tablespoon chili powder
1 1/2 tablespoons light brown sugar, packed
3/4 teaspoon garlic powder

Pineapple Salsa*:
3 slices pineapple, cut crosswise about 1/2-inch thick, trimmed OR 3 slices canned pineapple, drained
1 jalapeno pepper, halved lengthwise, seeds and veins removed

Steps:

  • In a shallow bowl, combine chili powder, brown sugar, garlic powder, onion powder, and salt. Sprinkle both sides of pork with spice mixture.
  • Prepare a grill to medium-high heat and lightly oil the grate. Grill pork until internal temperature reaches 160 degrees F, 4 to 5 minutes per side. Grill pineapple (if using fresh) and jalapeno until lightly charred, 2 to 3 minutes per side. Remove chops from grill and let rest 5 minutes.
  • Meanwhile, dice pineapple and finely dice jalapeno. In a medium bowl, combine pineapple, jalapeno, and lime juice. Season to taste with salt.
  • Bell peppers or zucchini, cooked on the grill with the rest of the meal, would be an easy and flavorful side dish. Grill-warmed tortillas would be nice, too. You can also make the recipe using bone-in center rib chops or boneless chops. You can make the salsa with grilled peaches, nectarines or mangoes. If you like, add chopped onion or cilantro to the salsa. Likewise, feel free to play with the rub ingredients to make the mixture your own.

1 tablespoon coffee grounds
Fine sea salt
1 teaspoon garlic powder

Two 12-ounce pork tenderloins
2 tablespoons vegetable oil
Eight 6-inch flour tortillas
1 1/2 cups finely diced pineapple
1/2 English cucumber (peeled and seeds removed), finely diced

1/2 red onion, finely diced
1/4 cup chopped fresh cilantro leaves, plus more for serving

Steps:

  • For the pork tenderloin tacos: Preheat an outdoor grill to high heat on one side and medium-low heat on the other. Mix to combine the brown sugar, chili powder, coffee grounds, garlic powder, onion powder, paprika, 1 1/2 teaspoons salt and 1/2 teaspoon black pepper in a small bowl. Brush the pork tenderloins all over with the oil, then sprinkle over the dry rub on all sides.
  • Grill the pork on the high-heat side until it is nicely charred on all sides, 8 to 10 minutes. Move the pork to the medium-low heat side of the grill for indirect grilling. Cover the grill and continue grilling until an instant-read thermometer inserted into the center of the tenderloin registers 150 degrees F, 10 to 12 minutes longer. Remove from the grill and tent loosely with aluminum foil. Let the pork rest for 10 minutes. Thinly slice for tacos.
  • To warm the tortillas, heat the tortillas on the grill over low heat, turning once to brown them up a bit. Wrap them in foil to keep them warm until it's time to eat.
  • For the pineapple cucumber salsa: Stir to combine the pineapple, cucumber, jalapeno, lime juice, onion, cilantro, 1/2 teaspoon salt and 1/4 teaspoon black pepper in a large bowl.
  • For the assembly: To build each taco, place some pork onto a tortilla. Top with some shredded cabbage, pineapple cucumber salsa, sour cream and cilantro. Serve with lime wedges.

Steps:

  • Prepare grill for cooking over medium-hot charcoal (moderate heat for gas). If using a charcoal grill, open vents on bottom of grill, then light charcoal. 3 ancho chiles, seeded and hand-torn into pieces
1/4 cup chili powder
2 tablespoons ground coriander
1 tablespoon ground cumin
2 teaspoons sweet paprika

1 (5 to 7 pound) pork shoulder, skin on
Extra-virgin olive oil
Kosher salt
6 garlic cloves, minced
2 jalapenos, chopped
1/4 cup red wine vinegar
1 bunch fresh cilantro, finely chopped
2 limes, juiced
1 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • For the spice rub: Toast the ancho chile pieces over low heat in a dry skillet until fragrant, shaking the pan so they don't scorch. Put the chiles in spice grinder and pulse to a powder. Add the remaining ingredients and buzz again to combine. (Reserve some to sprinkle on the corn.)
  • For the pork: Rub the spice mix into the pork and set aside for 1 hour while you prepare the grill. (You can marinate the pork longer under refrigeration, just make sure to bring it to room temperature before cooking it.) Light the coals in a barbecue grill with a cover. When the coals are hot, push them to 1 side of the grill. Rub the pork with some olive oil and season it liberally with salt. Put the pork on the grill away from the coals and place a drip pan underneath the meat. Close the cover and cook, maintaining a medium low temperature, for about 4 to 6 hours, or until the meat shreds easily. Turn the meat occasionally and baste with the drippings.
  • For the drizzling sauce: Combine all ingredients in a blender and puree until smooth; taste and season with salt and pepper. Drizzle over the shredded pork.

  • Heat a gas or charcoal grill to medium (about 350°F to 450°F). If the tenderloins have been refrigerated, let them sit at room temperature for at least 30 minutes before grilling. 3

1 pork tenderloin, about 1 to 1-1/2 lbs
ESPRESSO GRILLING SAUCE:
1 cup brewed dark-roast coffee
1 cup ketchup
1/4 cup dark brown mustard
1/3 cup honey
2 Tbsp. orange or lemon juice
2 Tbsp. hot pepper sauce
2 tsp. ground black pepper
2 tsp. coarse salt

Steps:

  • For the Rub: Mix ingredients. Yield: 2 Tbsp. Rub over pork tenderloin. Cover and refrigerate meat or leave out at room temperature for up to 1 hour before grilling. For the sauce: Combine all ingredients in medium saucepan. Bring to a boil, lower heat and simmer until slightly thickened, about 5 minutes. Store in a tightly closed container for up to 1 month. Use it to baste or accompany beef, lamb, duck, wild game or pork. Yield: about 2-1/3 cups Grilling instructions: Leave rubbed tenderloin out at room temperature about 45 minutes before grilling. Heat gas grill to 425F with one burner turned off. (Turn on all burners and get grill very hot; then turn off one burner and adjust to 425F.) Oil grates using a wadded paper towel that's been dipped in vegetable oil. Place meat on oiled grates over a burner that's lit. Sear meat about 4-5 minutes per side, then transfer to a burner that's not lit to finish cooking. Baste meat with grilling sauce once when transferring to turn-off burner, and again in about 10 minutes. Cooking time will depend on thickness of meat. It's not necessary to turn the meat once it's on the turned-off burner. Check for doneness with a meat thermometer that's placed in the side of the fattest part of meat. Be sure thermometer only goes to the center part of the meat, and not all the way through. Baste, then remove meat when thermometer registers 155F. Cover and let rest 10-15 minutes before slicing. If desired, serve additional sauce with meat a serving time.

GRILLED FENNEL-RUBBED TRIPLE-CUT PORK CHOPS

1/4 cup coarsely ground black pepper
1/4 cup finely ground fennel seeds
2 (2 1/2-pounds) triple pork chops with 1/4-1/2" fat cap, chine bone removed (not frenched)
4 tablespoons extra-virgin olive oil, plus more for serving
Flaky sea salt
Fennel pollen or finely ground fennel seeds (for serving)

Steps:

  • Prepare grill for medium-high, indirect heat (for a charcoal grill, bank coals on one side of grill; for a gas grill, leave one or two burners off). Combine kosher salt, pepper, and ground fennel in a small bowl. Rub each pork chop all over with 2 tablespoons oil, followed by spice mixture, patting to adhere. (Save any extra rub to use on chicken, lamb, or more chops another time.) Grill chops over direct heat, turning often and moving to cooler side of grill as needed to control flare-ups, until deeply browned on all sides, 10-15 minutes total.

  • Transfer pork chops to a cutting board and let rest 5 minutes (temperature will rise about 5°). Cut loin on each chop from the bones in one piece. Slice between bones to separate and grill over direct heat, turning often, until crisped and well charred, about 5 minutes.
  • Grill loins over direct heat, cut side up, just to reheat slightly, about 2 minutes. Slice loins 1/2" thick and transfer to a platter. Drizzle with oil and sprinkle with sea salt and fennel pollen. Serve with bones alongside.

Rubbed and Grilled Pork Loin with Apple Bourbon Barbecue Sauce image

Above the shoulder of a pig from the neck to the hams lie the pork loins. Pigs are equipped with two meaty loins located on the top sides of the spine. Buying whole loins will not break your wallet or your waistline. A three-ounce serving contains about one hundred fifty calories with six grams of fat. These loins can be smoked whole, divided into smaller roasts (typically two to five pounds), or cut into pork chops. This cut should not be confused with the pork tenderloin, which is much smaller (three quarters of a pound to one and a half pounds) and is located in the loin area but underneath the rib cage of the pig. This recipe combines the charring effect of direct grilling and the slow heat of the indirect cooking process to create a tender roast that retains its moisture. I created this recipe for the National Pork Board a few years back. The Apple Bourbon Barbecue Sauce is a sweet complement to the spicy dry rub and smoked flavors. The dish is a nice change from pork chops, which is the traditional use for this cut of meat.

1 teaspoon olive oil
2 teaspoons granulated sugar
2 teaspoons paprika
1 1/2 teaspoons onion salt
1 1/2 teaspoons garlic salt

1/2 teaspoon ground cumin

Steps:

  • Prepare your grill for direct and indirect heat by building a fire (wood or a combination of charcoal and wood) on one side of the grill, leaving the other side void.
  • Place the pork loin on a cutting board or platter and brush all over with the oil. In a small bowl, stir together the dry rub seasonings. Apply the dry rub to the meat in an even coating, patting so the rub adheres.
  • When the cooker reaches 400°F, place the pork loin directly over the medium-hot coals. Cook for 10 minutes on each side to brown. Move the pork away from the heat, cover the grill, and cook for 70 to 90 minutes or until the pork's internal temperature reaches 150°F. Baste with the apple bourbon sauce during the last 10 minutes of cooking. Let the pork loin rest on a cutting board under tented foil for 10 minutes before slicing.
  • The internal temperature of most meats, including pork, will spike by at least five degrees after you remove it from the grill. Let it sit or "rest" undisturbed on your counter for 10 to 15 minutes. This rest allows the temperature to equalize and gives the meat fibers time to reabsorb the internal juices. If you can resist digging in, you'll appreciate and enjoy the extra moisture.

3 ripe peaches, pitted, diced (about 4 cups)
1 medium tomato, seeded, diced
3 green onions, white and pale green parts, thinly sliced
1 medium fresh jalapeno chile, stemmed, minced
2 tablespoons fresh lime juice
3/4 teaspoon sugar
Cilantro
For the Pork:
2 teaspoons chipotle chile powder (maybe a bit less)
2 teaspoons brown sugar
1/2 teaspoon salt
2 pork tenderloins (about 2 1/4 pounds total)

Steps:

  • FOR THE SALSA: Gently mix all ingredients in medium bowl. Season to taste with salt. Let stand at room temperature, stirring once or twice, while preparing pork. FOR THE PORK: Light a charcoal fire and let it burn down to medium-high or preheat a gas grill to medium-high. Position the rack about 6 inches above heat source. Stir chipotle powder, brown sugar, and 1/2 teaspoon salt in small bowl. Sprinkle chipotle mixture on all sides of pork tenderloins, patting firmly to adhere. When the grill is ready, lightly oil grilling rack. Lay tenderloins on rack. Cover and grill 5 minutes, rearranging pork on rack to create attractive markings. Turn and grill another 5 minutes, again rearranging tenderloins to create a crosshatch pattern. Continue to grill pork, turning it twice more, about 16 minutes total for medium doneness. Transfer pork to cutting board; let rest for 5 minutes. TO SERVE: Cut pork across the grain and at slight angle into thin slices. Arrange slices on plates. Spoon salsa generously atop pork slices and serve immediately.

4 scallions, sliced (white and green parts separated)
1 1-pound package frozen black-eyed peas (4 cups), thawed
2 cups frozen chopped collard greens (about 5 ounces), thawed and squeezed dry
3/4 cup bottled barbecue sauce
1/3 cup dijon mustard
1/4 cup plus 1 tablespoon dark brown sugar
Kosher salt and freshly ground pepper
1 tablespoon smoked paprika
1 teaspoon garlic powder
4 bone-in pork blade steaks or sirloin chops (1/2 inch thick; about 2 pounds)
Vegetable oil, for the grill

Steps:

  • Preheat a grill to medium high. Cook the bacon in a Dutch oven or large pot over medium-high heat, stirring occasionally, until slightly browned and crisp, 5 minutes. Add the scallion whites. Cook, stirring occasionally, until lightly browned and softened, about 2 minutes.
  • Stir in 2 cups water, the peas, collard greens, barbecue sauce, mustard and 1/4 cup brown sugar. Season with salt and pepper. Bring to a simmer, then reduce the heat to medium low. Cook, stirring occasionally, until thickened and the peas are tender, 20 minutes. Season with more salt and pepper; keep warm over low heat.
