GRILLED RIBEYE WITH COWBOY BUTTER
This grilled ribeye recipe is grilled to perfection and topped with flavorful cowboy butter!

- First, remove rib-eye steak from the fridge and let rest on the counter for about 1 hour before grilling.
- Once the steaks are at room temperature, preheat the grill to medium high, or about 500 degrees F. For most gas grills, it will take about 10 minutes to fully come up to temperature.
- Lightly brush both sides of the steaks with a little olive oil.
- Season steaks with coarse salt and freshly ground black pepper.
- Place the steaks on the grill. If you like, you can add a dash of Worcestershire sauce (optional).
- Then add 1 tablespoon of Cowboy Butter (or other compound butter).
- Sear the outside of the steak for about 90 seconds, then flip and repeat on the other side.
- Now, turn the grill down to medium heat.
- Cook to your desired temperature (see below for times and temps).
- Remove from the grill and add another thick pad of butter to the top.
- Use foil to tent the steaks and allow them to rest for at least 3 minutes, up to 10 minutes.

I love my Garlic,and I love the perfect grilled steak. This steak is tender and flavorful. Why go out? You can make a perfect steak at home. This is how I make my Garlic Rib eye. My family loves it! Serve with my Cheesy Garlic Truffle Potato Wedges for an absolutely delicious meal.

- 1. Place steaks on platter and bring to room temperature. This should take about a half hour. While steaks are getting to room temperature. Make the Garlic butter.
- 2. In a sauce pan combine the butter and olive oil. Melt the butter with oil on medium low heat.Stir while melting butter.
- 3. When butter is melted add the Garlic,1/2 tsp salt and 1/4 tsp pepper, and basil. Cook on medium high. Cook stirring constantly for about 3-5 minutes until it boils, and Garlic is soft. Remove from heat and set aside to cool some.
- 4. Dry steaks with paper towel. Salt and pepper both sides of Steak generously. They are thick steaks. 5-6 turns on salt grinder is fine. Coat the steak evenly with salt and fresh ground black pepper. Press the salt and pepper in to the steak. Drizzle some butter oil on each side of steak. Rub the oil evenly over the steak. Reserving the pieces of Garlic. Save the rest of the oil and garlic for later.
- 5. Heat grill to high heat. 500-600 degree's. The higher the better. ( you may also use a cast iron grill pan and broil them.) Place steaks on grill and sear the meat. Close cover on grill. If you get a flare up. Move steaks to higher level, if your grill has another shelf. Cook about 15 minutes for medium. Meat should reach about 135 degree's for medium. lower for medium rare etc. brush steaks with half the remaining garlic butter while cooking.
- 6. Move to a sheet pan and let the meat rest for about 15 minutes.Add fresh parsley to the remaining butter. Drizzle more of the butter garlic mixture evenly over the steaks while resting,and serve.

- Let steaks stand at room temperature 15 to 20 minutes. Rub steaks evenly with steak seasoning (I use McCormick Grill Mates Montreal Steak Seasoning).
- Grill, covered with grill lid, over medium heat (300 to 350) for 2 1/2 minutes. Using tongs, turn each steak at a 60-degree angle, and grill 2 1/2 minutes more. Flip steaks, and grill 2 1/2 minutes. Turn steaks at a 60-degree angle, and grill 2 1/2 more minutes (medium-rare) or to desired degree of doneness.
- Remove steaks from grill, and brush evenly with butter. Let stand 5 minutes.
- (If you want rare steaks, adjust the time to 2 minutes in the above directions; for medium doneness, grill 4 minutes each turn; and for medium-well, allow about 5 minutes each turn).

- For the Parsley-Garlic Butter, mix together in small bowl, then cover and chill first five ingredients.
- Prepare barbecue (medium-high heat). Rub steaks with generous amounts of salt and pepper.
- Grill steaks to desired doneness, about 6 minutes per side for medium-rare. Cut each steak in half, top with spoonful of chilled butter, and serve.
