Steps:

  • Mix together the vinegar, oil, garlic, basil and seasonings.
  • Place the mushroom (Smooth side down) in a baking dish.
  • Pour the dressing over the mushrooms.
  • Allow to marinate for 10 minutes, turning once.
  • Grill for 5-7 minutes, turning once.
  • Slice and serve on salads,sandwiches or pizzas.

I've used this recipe for years....unfortunately I've forgotten the original source. It's a great dish to offer at a barbecue instead of the same tired old veggie burger. The marinade is very tart and makes a lovely grilled portabella sandwich, but it would also be delicious sliced and placed on top of a nice leafy green salad. I'm posting the recipe as copied onto a piece of paper years ago, but you'll notice the dressing instructions are incomplete - sorry! I usually just grill or broil these and eat them on a bun with some red onion, lettuce, and Vegenaise (vegan mayo), if available.

1 cup balsamic vinegar
2 tablespoons olive oil
1 teaspoon dried basil
1/4 teaspoon kosher salt
1/4 teaspoon white pepper (I just use freshly ground black pepper)
2 garlic cloves, minced
6 portabella mushroom caps (about 1 1/2 lbs.)
cooking spray
1 tablespoon olive oil
1 1/2 cups sliced onions
1/4 cup mayonnaise
1 teaspoon bottled minced roasted garlic
6 whole wheat kaiser rolls or 6 hamburger buns
6 curly lettuce leaves
6 slices tomatoes

Steps:

  • Combine first 6 ingredients in a large zip-top plastic bag. Add caps to the marinade. Seal and marinate in fridge up to 24 hours.
  • Prepare grill or broiler.
  • Remove caps and discard marinade. Place caps on grill rack or broiler coated with spray. Cook 5 minutes or until tender.
  • Heat oil over medium-high heat. Add onion. Cover and cook ten minutes or until golden, stirring frequently. (at this point I assume you mix the onions and garlic into the mayo, but I've never actually used this step).
  • Assemble grilled portabella sandwiches with one cap per bun, plus any lettuce, mayo, tomato, onion, or other garnish that you like. Or slice the portabellas into strips and enjoy as a topping for a mixed green salad with onion, tomato, etc.

  • Remove stems of mushrooms and wipe them with a damp cloth.

3 1/2 pounds flank steak
4 large shallots
1/3 cup balsamic vinegar
1/4 cup sugar
1/4 cup soy sauce
Accompaniment: portabella and cremini mushrooms

Steps:

  • Pat steak dry and cut crosswise at a 45° angle into 4 equal pieces. Season steaks with salt and pepper and transfer to a large resealable heavy-duty plastic bag. Chop shallots and in a bowl stir together with vinegar, sugar, and soy sauce. Pour marinade into bag. Marinate steaks, covered and chilled, turning bag over at least once, at least 2 hours and up to 2 days.
  • Prepare grill.
  • Remove steaks from bag and discard marinade. Grill steaks on a lightly oiled rack set 5 to 6 inches over glowing coals 7 to 9 minutes on each side for medium-rare. (Alternatively, grill steaks in 2 batches in a hot lightly oiled well-seasoned ridged grill pan over moderately high heat.) Transfer steaks as cooked to a cutting board and let stand 10 minutes.
  • Cut steak at a 45° angle across grain into thin slices. Serve steak with sautéed mushrooms.

  • Using a large spoon or spatula divide/spread the stuffing mixture between the mushroom caps.
  • Arrange and spread out the tomato slices in a "spiral-like" fashion on top of the stuffing.
  • Carefully brush the tomatoes with olive oil then season with a pinch of salt and black pepper, then sprinkle with grated Parmesan cheese or mozza cheese.

3 cups cherry tomatoes (or grape tomatoes)
1/2 teaspoon salt, plus more for sprinkling

4 large portabella mushrooms, stems and gills removed
4 teaspoons balsamic vinegar
4 ounces smoked mozzarella cheese, thinly sliced (or regular mozzarella)
1 (10 ounce) bag Baby Spinach, steamed

Steps:

  • Set the oven to 425*F. Drizzle a roasting pan with 1 tbls. of olive oil and add tomatoes, 1/2 teaspoons salt, 1/2 teaspoons pepper, and basil. Toss to mix. Roast for 15-20 mins., or till tomatoes start to burst. Keep the oven hot.
  • Preheat the grill or broiler to medium heat. Place the mushrooms, gill side up, on cutting board(or work surface) and sprinkle with 2 tbls. olive oil, balsamic vinegar, a little salt, and remaining 1 teaspoons pepper. With remaining 1/2 tbls. oil, lightly coat the rounded side of the mushroom caps.
  • Place mushrooms, gill side down, on grill or broiler pan. Grill or broil for 6-8 minutes on each side, until soft and slightly charred.
  • Move the mushrooms to a roasting pan and fill with 10-15 tomatoes each. Top with the cheese. Place in a hot oven until the cheese bubbles. Place each mushroom on a mound of steamed spinach and serve up immediately. Enjoy!

4 large portabella mushrooms or 8 baby portabella mushrooms
1/4 cup balsamic vinegar
1/2 cup pineapple juice
2 tablespoons chopped fresh ginger, peeled
black pepper (optional)

Steps:

  • Clean mushrooms with a damp cloth and remove their stems. Place in a glass dish, stemless (gill) side up.
  • To prepare the marinade, in a small bowl whisk together the vinegar, pineapple juice and ginger. Drizzle the marinade over the mushrooms. Cover and let marinate in the refrigerator for about 1 hour, turning mushrooms once.
  • Prepare a hot fire in a charcoal grill or heat gas grill or broiler. Away from the heat source, lightly coat the grill rack or broiler pan with cooking spray. Position the cooking rack 4 to 6 inches form the heat source.

  • Cut stem level to mushroom and clean mushrooms.
  • Mix together olive oil, balsamic, soy, garlic, red pepper and sesame oil in a large ziplock bag or shallow marinating dish.
  • Place mushrooms in bag with marinade and coat thoroughly; allow to sit for 1-3 hours, turning occasionally.
  • Slice onions about 1/4-inch thick and set aside.
  • Prepare grill, remembering to oil grate.
  • Place mushrooms on grill (using extra marinade for a baste), and onion slices on mesh grate on grill.
  • Drizzle onions with a little bit of olive oil and season with salt and pepper.

4 medium portabella mushrooms, stemmed and gills scraped out with a small spoon and discarded
salt
pepper
1/2 cup hummus
4 ounces feta cheese, crumbled
olive oil, for brushing

Steps:

  • Prepare grill or grill pan for gilling. Heat to medium high heat.
  • Brush both sides of the mushrooms with olive oil and sprinkle with salt and pepper to taste.
  • Grill mushrooms until tender, about 4 min on each side.
  • Let cool, then cut each one into quarters and slice each quarter into 1/4-inch thick slices.
  • Top crackers with a heaping teaspoon of hummus and several slices of mushroom. Sprinkle with feta cheese and serve.

1/2 cup dry white wine
1 tablespoon unsalted butter, melted

4 basil sprigs

  • Score the mushroom caps and toss with olive oil and garlic then marinate for 30 minutes.
  • Heat a grill pan over med high heat for five minutes then add mushrooms top down. Cook 5 minutes then turn, sprinkle with wine, bursh with butter and coook five more minutes or until soft.
  • Sauce: heat oil in pot over medium heat. Add the garlic, chili, oregano and cook 1 minute then add the tomato and cook for five more.
  • Assembly:.
  • Preheat oven to 450. Place mushrooms top up in oiled roasting pan. Season with salt and pepper. Top with cheese. Bake for 10 minutes.

  • 1. Use heavy duty foil and layout enough to cover tray and tent a bit. 2. Clean mushrooms. Lay upside down on the foil, drizzle with the olive oil, then sprinkle with the seasoning, and salt and pepper to taste. 3. Grill for approximately 20 minutes. 4. Note: experiment and try different seasonings like cayenne pepper or add a little cheese on top during last few minutes on the grill.

1 yellow bell pepper
4 tomato slices
1/3 cup green onions
large resealable food storage bag
2 teaspoons roasted garlic
2 teaspoons Montreal steak seasoning
1/2 teaspoon liquid smoke flavoring
2 tablespoons soy sauce
2 tablespoons olive oil
4 portabella mushroom caps
4 French hamburger rolls
butter-flavored vegetable cooking spray
2 slices mozzarella cheese
4 bibb lettuce leaves

Steps:

  • Steps 1. Preheat grill. 2. Wash all vegetables. Remove mushroom stems, if needed. Slice pepper in half and remove seeds. Slice into 1/2-inch strips. 3. Slice off stem end of tomato. Cut tomato into 4 slices. Dice green onion into 1/4-inch pieces, including up to 1/2 of green section. 4. Place in food storage bag: garlic, steak seasoning, liquid smoke, soy sauce and olive oil; shake to mix. Add mushrooms, peppers and onions and shake to coat. Marinate for 5 minutes, turning occasionally. 5. Cut rolls in half. Spray grill with cooking spray and lay bread flat on grill. Close lid and grill for 1 minute. Remove rolls from grill and place on serving plates. 6. Place peppers on grill, close lid and grill for 2 minutes. While peppers are grilling, cut cheese in half. 7. Remove peppers from grill and place on rolls. Lay cheese slice on top of peppers. 8. Place mushrooms on grill, gill cap side up. Pour half marinade over mushrooms. Close lid and grill for 2 minutes. Turn mushrooms over and pour remaining marinade over mushrooms. Grill for additional 2 minutes. Remove mushrooms from grill and place on top of cheese. 9. Place one lettuce leaf on top of each sandwich. Top with other half of roll. Serve.
