PORK WITH STRAWBERRY-PORT SAUCE

- In a large skillet, heat butter over medium-high heat. Add onions, 3/4 teaspoon salt and 1/4 teaspoon pepper; cook and stir until tender. Stir in spreadable fruit, wine, vinegar and mustard. Bring to a boil; cook and stir 3-4 minutes or until slightly thickened. Add tomatoes; cook 2-3 minutes or until softened. Stir in basil and lime juice., Sprinkle chops with remaining salt and pepper; place on greased grill rack. Grill, covered, over medium heat or broil 4 in. from heat 4-6 minutes on each side or until a thermometer reads 145°. Let stand 5 minutes before serving. Serve with sauce.

- In a medium sauce pan over medium heat, combine all ingredients for the bbq sauce. Bring to a boil, reduce to low and simmer for 5 minutes, stirring throughout. Reduce from heat and set aside.
- Preheat grill to medium and oil the grates.
- Season pork chops generously with salt and pepper on both sides.
- Place pork chops on the grill, cook for 2-3 minutes, then turn over and brush bbq sauce all over the tops and sides of the pork chops. Cook another 5-7 minutes, then turn and brush bbq sauce all over the tops and sides again.
- Cook 5-7 minutes longer until internal temperature reaches 140 degrees F or there is no longer any pink in the center. Allow to rest on a plate or cutting board - covered - for at least 5 minutes before serving - this is KEY to keeping the pork chops nice and juicy.
- Serve with remaining bbq sauce. Enjoy!

GRILLED RIBEYE (RIB) PORK CHOPS WITH EASY SPICY BBQ SAUCE

- Preheat grill over medium-high heat and brush with olive oil. Season chops with salt and pepper on both sides. Place pork on grill for 8-9 min., turning once halfway through, until internal temperature is 145°F as measured by a meat thermometer. Remove pork from grill, tent with foil and rest for 3 min.
- Spicy BBQ Sauce: Heat oil in pot over medium heat. Sauté onion until soft; add ketchup, brown sugar, Worcestershire sauce, vinegar and cayenne. Simmer for 15 min. until sauce thickens; turn off heat. Once cooled, puree sauce in blender. Serve chops with spoonful of sauce.

- Toss strawberries with 1 Tbsp. dressing. Pour 3 Tbsp. of the remaining dressing over chops in shallow dish; turn to evenly coat both sides of chops. Refrigerate strawberries and chops 1 hour.
- Heat grill to medium-high heat. Thread strawberries onto skewers. Grill 1 to 2 min. or until softened and slightly charred, turning frequently. Place strawberries in medium bowl; mash until smooth. Add barbecue sauce and remaining dressing; mix well. Reserve half the barbecue sauce mixture to serve with the grilled chops.
- Remove chops from dressing; discard dressing. Grill chops 5 min.; turn. Brush with half the remaining barbecue sauce mixture; grill 5 to 6 min. or until chops are done (145°F), brushing with remaining barbecue sauce mixture for the last few minutes. Remove chops from grill. Let stand 3 min.
- Serve chops with reserved barbecue sauce mixture.

GRILLED PORK CHOPS WITH CLASSIC BARBECUE SAUCE
Steps:
- Make the barbecue sause:
- heat the oil in a frying pan and sauté the onion and garlic until soft and lightly browned, 4-5 minutes. Grate the zest from the lemon and squeeze the juice. Add the lemon zest, half the lemon juice, the sugar, vinegar, ketchup, Worcestershire sauce, Tabasco sauce and chili powder to the onion and simmer gently, 5 minutes. Taste, adjust the seasoning and let cool.
- Light the grill. Season the pork chops with salt and pepper and brush with the cooled barbecue sauce. Grill them, basting often, 5-7 minutes. Turn over and continue grilling and basting until the chops are done, 5-7 minutes longer.
