The pork is moist and full of flavor, and because it rests right up against all those veggies that rich juicy meat imparts it's flavor into the whole kabob.All those colors make these kabobs look just as good as they taste!

1 Tbsp olive oil
¼ cup fresh lemon juice
2 Tbsp finely chopped fresh rosemary
2 Tbsp finely chopped fresh parsley
4 cloves garlic (chopped)
¼ tsp sea salt ((or Himalayan salt))
12 oz raw lean boneless pork loin (cut into 12 1-inch cubes)
1 large sweet potato (peeled, cut into 12 1-inch cubes)
1 medium onion (cut into 12 1-inch cubes)
1 medium red bell pepper (cut into 12 1-inch cubes)
1 medium green bell pepper (cut into 12 1-inch cubes)

Steps:

  • Combine oil, lemon juice, rosemary, parsley, garlic, and salt in a large resealable bag.
  • Add pork; marinate, refrigerated, for 30 minutes (to 4 hours).
  • Preheat grill or broiler on high.
  • Boil water in steamer or large saucepan over high heat. Reduce heat to medium-high. Place sweet potato pieces in steamer basket; cook for 3 to 4 minutes, or until tender-crisp. Place in ice water bath to stop cooking process. Set aside.
  • Place a piece of pork, sweet potato, onion, red bell pepper, and green bell pepper onto a skewer. Repeat, so the skewer has two pieces of each ingredient. Repeat with five remaining skewers. Discard marinade that contained pork.
  • Grill (or broil) skewers for 8 to 10 minutes, turning every 2 minutes, or until sweet potato is softened and pork is no longer pink in the middle.

2 1/2 lb pork tenderloin (trimmed and cut into 1 1/2" pieces)
1 Tbsp Italian seasoning
1 1/2 tsp sea salt
1/2 tsp garlic powder
1/2 tsp black pepper
2 Tbsp olive oil
1 large red onion (cut into 1" pieces)
1 Tbsp fresh parsley to garnish (optional)

Steps:

  • In a large mixing bowl (or ziploc bag), combine chopped pork, 1 Tbsp Italian seasoning, 1 1/2 tsp salt, 1/2 tsp garlic powder, 1/2 tsp black pepper and stir until well combined. Separate onion pieces and add them to the bowl. Add 2 Tbsp olive oil and toss to combine. Cover and marinate in the refrigerator for at least 4 hours and preferably overnight.
  • Thread the kabobs onto metal skewers*, alternating between meat and onion. For even browning, the meat and onions should be just touching on the skewers and not crowded together. Let your skewers stay at room temperature for 30 minutes before placing on the grill.
  • Preheat your grill to Medium/high heat (400˚F). Add skewers in a single layer and grill for 8-10 minutes total. Meat skewers turn like a triangle so we cook about 3 minutes per side on all 3 sides. Grill until cooked through and meat reaches at least 145˚F internal temperature. Rest skewers 3 minutes before serving.

2 tablespoons extra-virgin olive oil, plus more for brushing
3 medium sweet potatoes
Kosher salt and freshly ground pepper
2 Persian cucumbers, chopped
1 cup chopped pineapple
1 scallion, sliced
1/4 cup fresh cilantro, roughly chopped
1 tablespoon white wine vinegar
1 tablespoon packed light brown sugar
1 tablespoon ancho chile powder
2 teaspoons ground cumin
2 small pork tenderloins (about 12 ounces each), trimmed

Steps:

  • Preheat a grill to medium high and brush the grates with olive oil. Pierce the sweet potatoes all over with a fork and microwave until just cooked through, 5 to 7 minutes; let cool slightly, then slice into 1/2-inch-thick rounds. Transfer the sweet potatoes to a medium bowl and gently toss with 1 tablespoon olive oil, 1/4 teaspoon salt and a few grinds of pepper.
  • Meanwhile, toss the cucumbers, pineapple, scallion, cilantro and vinegar in a medium bowl; season with salt and pepper. Set aside. Mix the brown sugar, chile powder, cumin, 3/4 teaspoon salt and a few grinds of pepper in a separate bowl. Rub the pork all over with the remaining 1 tablespoon olive oil and the spice mixture.
  • Grill the pork, covered, turning occasionally, until a thermometer inserted into the center registers 145 degrees F, about 15 minutes. Remove to a cutting board and let rest 5 minutes. Grill the sweet potatoes, turning once, until marked, about 3 minutes. Slice the pork and top with the cucumber-pineapple salsa. Serve with the sweet potatoes.

1/3 cup orange marmalade
1 teaspoon finely chopped fresh rosemary leaves
1/4 teaspoon salt
1/2 lb dark-orange sweet potatoes, peeled, cut into 8 pieces
2 tablespoons water
1/2 lb pork tenderloin, cut into 1-inch pieces
1 small zucchini, cut into 8 slices

Steps:

  • Heat gas or charcoal grill. In 1-quart saucepan, heat marmalade, rosemary and salt to boiling, stirring frequently. Remove from heat; set aside.
  • In 1-quart microwavable bowl, place sweet potato pieces and water. Cover loosely with microwavable paper towel. Microwave on High 2 to 3 minutes, stirring once, just until potatoes are tender (do not overcook). Drain sweet potatoes; rinse with cold water.
  • On each of four 10- to 12-inch metal skewers, carefully thread pork, sweet potatoes and zucchini (with cut side facing out) alternately, leaving 1/4-inch space between each piece.

1/4 c soy sauce
1 c minced fresh onion
2 clove garlic, crushed
1/4 c lemon juice
2 Tbsp brown sugar
2 Tbsp coriander
1/2 tsp crushed red pepper flakes
1/4 c oil
2 lb pork tenderloin, cut in large chunks

Steps:

  • 1. Combine all ingredients for marinade in a large bowl.
  • 2. Add pork. Marinate for at least 2 hours, overnight is best.

½ cup reduced-sodium soy sauce
2 tablespoons rice vinegar
2 tablespoons brown sugar
2 tablespoons sesame oil
1 tablespoon lime juice
1 teaspoon Sriracha sauce
1 teaspoon ground ginger
1 teaspoon minced garlic
10 bamboo skewers
2 teaspoons vegetable oil, or as needed
3 cups cubed fresh pineapple
2 red bell peppers, cut into cubes
3 green onions, thinly sliced
1 teaspoon sesame seeds

Steps:

  • Combine pork, soy sauce, rice vinegar, brown sugar, sesame oil, lime juice, Sriracha, ginger, and garlic in a large resealable bag. Seal and shake up to combine well. Refrigerate for 1 hour, turning occasionally.
  • While the pork is marinating, soak skewers in water for about 20 minutes prior to using them. That will help the skewers to not burn up when exposed to the flame.
  • Preheat an outdoor grill or indoor grill pan to medium-high heat and lightly grease the grates with a small amount of vegetable oil.
  • Thread the skewers with marinated pork, pineapple, and red pepper, alternating back and forth; discard the marinade.
  • Cook skewers on the preheated grill until they obtain grill marks and the pork is no longer pink, about 2 minutes per side. Garnish with green onions and sesame seeds.
