Hawaiian Chicken Foil Packets make a great summer meal the whole family will love. Just wrap up the ingredients and cook on the grill or in the oven.

1 cup soy sauce
1/2 cup brown sugar (packed)
1 cup pineapple juice
4 cloves garlic (minced)
1 tablespoon ginger (grated)
6 boneless skinless chicken thighs (trimmed)
2 pineapples (cut into rings or diced)
2 red bell peppers (cut into strips)
1 small onion (cut into strips)

Steps:

  • In a large bowl, combine all ingredients and stir until combined. Pour over chicken in a ziplock bag or other airtight container and marinate for at least two hours or overnight if possible.
  • Lay out one sheet of foil. Place one chicken thigh, two pineapple rings or a few pineapple chunks, and some pepper and onion strips. Drizzle some extra sauce over the top if desired.
  • Wrap foil up tightly so none of the juices leak out.
  • Grill over medium high heat for 20 minutes. Then, flip the packets and grill for about 10 more minutes, or until the internal temperature of the chicken in 165 degrees. Remove from packets and serve with rice. Top with soy sauce or teriyaki sauce if desired.

4 boneless skinless chicken breasts (cut into 1 ½ inch pieces)
1 red bell pepper (chopped)
1 green bell pepper (chopped)
1 small onion (chopped)
1 15-ounce can pineapple chunks
1 cup teriyaki sauce ((see note))
1 cup Asian toasted sesame dressing ((see note))

Steps:

  • Preheat the grill. Lay out 4 large (about 24 inches long) pieces of foi. In a bowl whisk together teriyaki sauce and sesame dressing.
  • Distribute chicken, peppers, onions, pineapple chunks, and sauce between the sheets of foil. Fold the the sides of the foil over the fillings and seal shut.
  • Grill packets for about 10-15 minutes, turning over once half way through. Carefully unfold foil packets and check chicken to make sure it is cooked through. Garnish with cilantro and sesame seeds if desired, serve immediately.

1/3 cup pineapple preserves
2 tablespoons packed brown sugar
1 tablespoon soy sauce
1/4 teaspoon crushed red pepper
4 boneless skinless chicken breasts, cut into 2-inch cubes (1 lb)
1 medium red bell pepper, cut into 1 1/2-inch cubes
1 medium green bell pepper, cut into 1 1/2-inch cubes
1 cup pineapple chunks
1/4 teaspoon salt

Steps:

  • Heat gas or charcoal grill. In small bowl, stir together pineapple preserves, brown sugar, soy sauce and crushed red pepper.
  • Cut 4 (24x12-inch) sheets of heavy-duty foil. Divide chicken, bell peppers, pineapple chunks and pineapple preserves mixture among foil sheets. Sprinkle with salt. Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packets on grill over medium heat. Cover grill; cook 6 minutes. Using tongs, carefully turn packets over, taking care not to puncture foil. Cook 10 to 12 minutes longer or until chicken is no longer pink in center and vegetables are crisp-tender.

1 (15.25 ounce) can pineapple slices (in 100% juice)
1 cup barbecue sauce
1 teaspoon minced garlic
1 Tablespoon soy sauce
6 boneless skinless chicken breasts
1 red bell pepper (cut into bite-sized pieces)
1 green bell pepper (cut into bite-sized pieces)
4 green onions (diced)
Salt and pepper, to taste

Steps:

  • Preheat grill to high heat.
  • Drain juice from pineapple slices into a small mixing bowl.
  • Whisk in barbecue sauce, minced garlic, and soy sauce; set aside.
  • Place 6 pieces of foil (approx. 12"x18") on a clean working surface and spray with nonstick cooking spray.
  • Place a chicken breast in the center of each piece of foil.
  • Divide pineapple slices, peppers and green onions evenly on top of each chicken breast.
  • Season with salt and pepper, to taste.
  • Reserve 1/2 cup barbecue pineapple sauce; set aside.
  • Drizzle remaining barbecue sauce evenly over foil packs.

4 boneless skinless chicken breasts (about 1 1/4 lb)
1/2 cup sweet-and-sour sauce
1 can (8 oz) pineapple chunks, drained
1 medium bell pepper, cut into strips
1/4 small onion, cut into small wedges
1/2 cup chow mein noodles, if desired

Steps:

  • Heat gas or charcoal grill. Cut four 18x12-inch pieces of heavy-duty foil; spray with cooking spray.
  • On one side of each foil piece, place 1 chicken breast. Top each with 1 tablespoon sweet-and-sour sauce and one-fourth of the pineapple, bell pepper and onion. Top with remaining sauce.
  • Fold foil over chicken and vegetables so edges meet. Seal edges, making tight 1/2-inch fold; fold again. Allow space on sides for heat expansion.
  • When grill is heated, place packets on gas grill over medium heat or on charcoal grill over medium coals; cover grill. Cook 15 to 20 minutes, rotating packets 1/2 turn after 10 minutes, until juice of chicken is clear when center of thickest part is cut (165°F). Place packets on plates. Cut large X across top of each packet; fold back foil. Top with chow mein noodles.
