GRILLED TURKEY BURGERS WITH SWEET PICKLES & SPICY COLE SLAW

Steps:
- Prepare a hot fire in a charcoal or gas grill. (Or just before you're ready to cook the burgers, heat a grill pan or cast-iron skillet over medium-high heat until hot.).
- Combine the turkey, bread crumbs, mayonnaise, chives, Worcestershire sauce, hot sauce, scallions, basil, salt, and pepper in a large bowl and work the mixture with your hands just to mix. (Do not overmix or the burgers will be tough.)
- Form the meat mixture into four 1-inch-thick patties.
- Season both sides of the patties with salt and pepper and grill them for 5 to 6 minutes per side, or until they're just done.
- Remove the patties to a platter, cover them loosely with foil to keep warm, and set them aside to rest for about 5 minutes.
- To assemble the burgers, lay a few pickle slices and one tomato slice on the bottom of each bun and place the burgers on top.
- Serve with mustard mayonnaise & the Spicy Cole Slaw, on the side.
- SPICY COLE SLAW.
- Combine the cabbage, arugula, and basil in a large bowl, and refrigerate.
- Whisk mayonnaise, vinegar, mustard, sugar, and red pepper flakes together in a small bowl.
- Just before serving, pour the dressing over cabbage, season to taste with salt and pepper, and toss gently to coat.

GRILLED PICKLES WITH DILL MUSTARD DIPPING SAUCE

Steps:
- Prepare a grill for medium-high heat.
- For the pickles: Slice the pickles in half lengthwise and pat until completely dry. Toss the pickles with the olive oil, place on the grill and cook until they are marked, about 4 minutes per side.
- For the dipping sauce: Stir together the sour cream, mayonnaise, dill, mustard powder and garlic in a small bowl.
- Let the pickles cool to room temperature before serving with the dipping sauce.

Steps:
- 1. Cut roll.
- 2. Spread mustard on top of roll.
- 3. Place two slices of cheese onto each side of roll.
- 4. Stack cheese, pork, turkey, and pickle onto bottom of roll.
- 5. Close sandwich.
- 6. Melt a tablespoon of butter in pan.
- 7. Press down on sandwich and grill over moderate heat for approximately 3-4 minutes on both sides, pressing down firmly from time to time.
GRILLED TURKEY & ARUGULA BURGERS WITH APRICOT DIJON AND HOMEMADE PICKLES
Steps:
- 1. Make Pickle: Mix vinegar (1 cup) & Kosher Salt (1/2 cup). Stir until salt is dissolved. Slice cucumbers and let soak in vinegar solution for about 1 hour. 2. Make Apricot Dijon: Apricot Jam (8 oz) Grey Poupon (8 oz). Best if done in blender but not necessary. 3. Make Burgers: mix Ground Turkey (1 lb) Arugula (4 cups chopped) Garlic (4 cloves Minced) Olive Oil (2 Tbls) Montreal Steak Seasoning (dash). Form into 5-6 patties. 4. Grill or bake burgers until fully cooked, melt Cheese on burger. 5. Serve on hamburger rolls, top with homemade pickle and apricot dijon
GRILLED PICKLES
Steps:
- Drain a 24-ounce jar of pickle halves, reserving the brine. Pat the pickles dry; toss with 1 onion (cut into wedges) and some olive oil. Grill, turning, until marked, 3 to 4 minutes. Let cool, then pack into a jar and add the brine. Refrigerate until cold or up to 5 days.
LEAN AND MEAN OSTRICH BURGERS WITH GRILLED BREAD AND BUTTER PICKLES
Steps:
- Prepare a charcoal grill by lighting charcoal and letting it burn until it glows bright orange, ashes over, and is very hot. Brush the grill grate generously with oil.
- Meanwhile, put the ostrich meat in a mixing bowl, sprinkle generously with salt and pepper, and form into 4 equal-size patties about 3/4-inch thick. Grill the burgers, turning once, until medium-rare, about 3 minutes per side. Remove from the grill and let stand for 5 minutes.
- Spread 1 tablespoon of the yogurt on each of 4 muffin halves, and 1 tablespoon mustard on each of the remaining muffin halves. Place the burgers on the mustard-coated muffins; top each with a slice of tomato, lettuce, and a generous pile of pickles. Top with the yogurt-coated muffins and serve immediately.
- Prepare a hot fire in a charcoal grill or preheat a gas grill to high.
- Put the cucumbers, cut-side down, on the hot grill and cook, without turning, until grill marks appear and the cucumbers have softened slightly, 2 to 3 minutes.
- Meanwhile, whisk together the honey, vinegar, 1/3 cup water, the pickling spices, turmeric, chili flakes and garlic in a small bowl, glass jar or pie plate. Transfer the hot cucumbers to the pickling liquid, being sure they are completely submerged. Let stand for at least 15 minutes before draining and slicing crosswise. Pickles can be served immediately, or sliced and stored in the pickling liquid in the refrigerator for up to 1 week.
