Grilled peaches may be summer's greatest joy. Cook them over a medium to low gas grill or a dying charcoal fire, and serve them with ice cream, whipped cream or nothing at all.

4 to 6 peaches
Olive oil

Steps:

  • Heat a gas grill to medium. If you are cooking on a charcoal grill, wait until the fire has died down to medium to low heat.
  • Cut the peaches along their seams, all the way around, and twist their halves off their pits. Brush the cut sides of the peaches with olive oil and grill, cut side down, until the fruit has developed grill marks and started to soften, about 4 to 5 minutes.
  • Brush the tops with oil, turn over and move to the side of the grill to continue cooking over indirect heat, another 4 to 5 minutes. You can add flavor by brushing them with maple syrup and bourbon, or molasses and butter. But if they are perfect peaches, they shouldn't need anything at all.

1 tablespoon extra-light olive oil, or as needed
2 slices Italian bread
2 tablespoons mayonnaise
2 slices Cheddar cheese
3 slices deli ham, or more to taste
1 slice firm-ripe tomato
1 thin slice onion
cooking spray

Steps:

  • Drizzle olive oil on 1 side of each bread slice. Spread 1 tablespoon mayonnaise on the other side of each slice. Pile Cheddar cheese, ham, tomato, and onion on top. Top with other bread slice, mayonnaise side down.
  • Heat a grill pan over medium-high heat; spray lightly with cooking spray. Place sandwich on grill; weigh it down with a heavy pan. Cook until cheese is melted and grill marks appear, 3 to 5 minutes per side.

Here's what you need: ripe peaches, oil, greek yogurt, honey, granola, fresh mint leaf

4 ripe peaches
oil, for brushing
greek yogurt, for serving
honey, for serving
granola, for serving
fresh mint leaf, for garnish

Steps:

  • Preheat Griddler, fitted with the grill plates, to 425°F (220°C), and grease with nonstick spray.
  • Using a sharp knife, slice the peaches in half, cutting around the pit. Twist the two halves to separate and discard the pits.
  • Brush the cut sides of the peach halves with a bit of oil.
  • Place the peaches, cut side down, on the Griddler and close the press so that the top plate is touching all the peaches evenly.
  • Cook for 4 minutes, until the peaches have developed dark grill marks.
  • Transfer the peaches to a serving plate and top with Greek yogurt, a drizzle of honey, and a sprinkle of granola.
  • Garnish with mint leaves and serve.
  • Enjoy!
