4 medium tomatoes, thinly sliced
1/4 teaspoon salt
2 medium peaches, halved
Cooking spray
1 tablespoon cornmeal
1 tube (13-1/2 ounces) refrigerated pizza crust
4 ounces fresh mozzarella cheese, sliced
6 fresh basil leaves, thinly sliced
1/8 teaspoon coarsely ground pepper

Steps:

  • Sprinkle tomatoes with salt; let stand 15 minutes. Drain tomatoes on paper towels and pat dry., Grill peaches on an oiled grill rack, covered, over medium heat or broil 4 in. from heat until peaches have grill marks and are tender, 2-3 minutes on each side, turning once. Remove peaches; cool slightly. Cut into slices., Coat a 15x10x1-in. baking pan with cooking spray; sprinkle with cornmeal. Unroll crust into pan, pressing into a 12x10-in. rectangle. Spritz with cooking spray. Invert crust onto grill. Grill, covered, over medium heat until bottom is lightly browned, 2-3 minutes. Remove from grill, inverting onto baking pan., Layer grilled side of pizza with tomatoes, peaches and cheese. Return pizza to grill. Cook, covered, until crust is lightly browned and cheese is melted, 3-4 minutes, rotating halfway through cooking to ensure an evenly browned crust. Sprinkle with basil and pepper.

Charring juicy summer peaches on the grill for these addictive ice pops lends a smoky note. Peach preserves provide a second dose of peach, ginger syrup adds spice and smoked almonds add crunch.

One 6-inch piece fresh ginger, unpeeled, sliced into very thin rounds (about 1 cup)
1/3 cup sugar
1 pound ripe yellow peaches (about 3 peaches), peeled with a vegetable peeler, halved and pitted
1 tablespoon unsalted butter, melted
2 tablespoons peach preserves
1 cup plain unsweetened almond milk
1 tablespoon fresh lemon juice
Kosher salt
1/2 cup smoked almonds, finely chopped

Steps:

  • Prepare a grill or large grill pan for high heat. Bring the ginger, sugar and 1/4 cup water to a simmer in a small saucepan. Cook on medium-low for 10 minutes. Let cool completely at room temperature, at least 30 minutes.
  • Meanwhile, brush the peach halves all over with the butter. Place them cut-side down on the grill, and grill until very charred, about 5 minutes. Flip the peaches, and grill until the rounded side is charred in spots and the peaches are tender but not falling apart, about 5 minutes. Transfer to a plate to cool completely, about 20 minutes.
  • Put the cooled peaches, preserves, 1/2 cup of the almond milk, lemon juice and a small pinch of salt in a blender. Strain the cooled ginger syrup into the blender, pressing the ginger pieces in the strainer with the back of a spoon to extract as much flavor as possible; discard the ginger. Puree the peach mixture until completely smooth, scraping down the sides of the blender partway through if needed. Transfer the mixture to a large liquid measuring cup with a pouring spout.
  • Pour the mixture into the ice-pop molds, leaving 1/4 inch of space at the top (the mixture will expand). Insert the sticks. Freeze until solid, 5 hours to overnight.
  • When ready to serve, put the remaining 1/2 cup almond milk in one drinking glass and the almonds in another. Unmold the ice pops, and dip the top of each into the almond milk, then into the almonds. Serve immediately.

GRILLED STONE FRUIT WITH FARMER'S CHEESE AND SPICED HONEY ALMONDS



Grilled Stone Fruit with Farmer's Cheese and Spiced Honey Almonds image

Nonstick cooking spray
2 cups skin-on almonds
1/4 cup clover honey
2 tablespoons sugar
1/2 teaspoon ground allspice
Pinch freshly grated nutmeg
Fine sea salt
4 to 6 ripe yet firm stone fruits, such as peaches, nectarines and plums, halved and pitted
Canola oil, for brushing
Kosher salt and freshly ground black pepper
1 cup farmer's cheese

Steps:

  • For the spiced honey almonds: Preheat the oven to 325 degrees F. Lightly spray a baking sheet with nonstick spray.
  • Spread the almonds on the prepared baking sheet, then transfer to the oven and toast lightly, 8 minutes.
  • Combine the honey, sugar, allspice, nutmeg and a pinch of salt in a small saucepan over medium heat. Bring to a simmer and cook until the sugar melts.
  • Put the toasted almonds in a small bowl and toss with half of the honey mixture until evenly coated; reserve the remaining spiced syrup. Using a heat-proof spatula (the mixture will be hot), spread the coated almonds in an even layer on the baking sheet. Set aside until hardened, 15 minutes to 1 hour--the almonds will remain slightly sticky. Once hardened, coarsely chop or use whole.
  • For the grilled stone fruit: Heat a grill pan over medium-high heat until very hot. Brush the cut sides of the fruit with a bit of oil and sprinkle with salt and pepper. Grill the fruit, cut-side down, to mark and caramelize slightly, about 2 minutes. Brush the tops with a bit more oil, sprinkle lightly with salt and pepper and then flip and grill on the reverse side just to soften slightly, 1 to 2 minutes more.
  • Transfer the grilled fruit to a platter, cut-side up. Dollop the farmer's cheese around the fruit, drizzle some of the reserved spiced syrup over everything, and scatter the almonds on top. Serve immediately.

1/4 cup all-purpose flour
Salt and freshly ground pepper
1 large egg
1 tablespoon water
1/4 cup panko bread crumbs
2 tablespoons ground almonds
1 (8-ounce) slice manchego cheese, about 1-inch thick
2 tablespoons olive oil
Hot Garlic Vinaigrette, recipe follows
1/4 cup slivered almonds, lightly toasted
2 tablespoons coarsely chopped flat-leaf parsley
1/4 cup olive oil
3 cloves garlic, finely chopped
2 tablespoons aged sherry vinegar
Salt and freshly ground black pepper
Salt and freshly ground black pepper

Steps:

  • Set up 3 bowls: 1 with flour seasoned with salt and pepper, 1 with egg and 1 tablespoon of water and seasoned with salt and pepper, and 1 with the bread crumbs and ground almonds.
  • Preheat oven to 450 degrees F.
  • Cut cheese into 2 equal pieces. Dredge the cheese first in the flour, then in the egg wash, and finally in the bread crumbs. Place the cheese in a small cazuela, drizzle with olive oil, and season with salt and pepper. Bake in the oven for 5 to 7 minutes or until golden brown and the cheese is soft. Immediately drizzle with the Hot Garlic Vinaigrette and sprinkle with slivered almonds and parsley. Serve with warm crusty bread.
  • Heat oil over low heat in small saute pan. Add garlic and cook until light golden brown. Remove from heat and whisk in the vinegar. Season with salt and pepper.

  • Heat grill to high. Grill peach wedges, flipping, until caramelized, about 2 minutes per side.
