GRILLED NECTARINES WITH HONEY-BALSAMIC GLAZE

Steps:
- Whisk 1/2 cup honey, vinegar, and vanilla in small bowl. Whisk crème fraîche and remaining 2 tablespoons honey in medium bowl to blend. (Glaze and crème fraîche mixture can be made 1 day ahead. Cover separately. Refrigerate crème fraîche mixture. Rewhisk both before using.)
- Prepare barbecue (medium-high heat). Brush nectarines generously with half of glaze. Grill until heated through, turning occasionally, about 4 minutes. Arrange 2 nectarine halves, cut side up, on each plate. Drizzle with remaining glaze. Spoon some crème fraîche mixture into center of each nectarine half and serve.
GRILLED NECTARINES WITH BLUEBERRIES

- In a medium bowl, toss together nectarines with sugar; set aside to macerate, about 15 minutes.
- Heat grill to medium. Stack two pieces of 10-by-12-inch heavy-duty aluminum foil; place on grill. With a slotted spoon, transfer nectarines to foil; reserve any juice that has accumulated in bowl. Cover grill, and cook until nectarines are charred and softened, turning occasionally, 10 to 15 minutes.
- Return nectarines to bowl; add blueberries, and toss to combine. Divide fruit evenly among four serving bowls; drizzle reserved juice over the top. Serve with a scoop of vanilla ice cream, if desired.

- Preheat the oven to 425 degrees F.
- Roll out the puff pastry on a lightly floured surface to a 1/4-inch-thick square.
- Transfer to a 9-inch cast-iron skillet, gently pressing it into the skillet and allowing the extra to hang over the edges.
- Place the blueberries, nectarines, sugar, cornstarch and lemon juice in a bowl. Toss to combine and add the mixture to the prepared skillet.
- Mix the egg with 1 tablespoon water in a bowl and brush the visible pastry with the egg wash.
- Bake until the pastry is golden and the fruit is bubbling, 40 to 45 minutes.
- Serve warm with a big scoop of vanilla ice cream.

- Heat a grill pan over medium-high heat. Spritz cut sides of nectarines with cooking spray. Place cut sides down on pan. Grill until just tender, 4-5 minutes. Meanwhile, drain Burrata; cut into 6 slices. , Arrange nectarine halves, cut side up, on a serving platter. Top with Burrata, honey and mint; sprinkle with salt.
