BEER-BRAISED BRATWURST



Beer-Braised Bratwurst image

1 onion, sliced
1 clove garlic, smashed
1 bay leaf
Kosher salt and freshly ground pepper
1 tablespoon unsalted butter, cut into pieces
4 links fully cooked bratwurst (about 1 pound)
1/4 cup lager
Sub rolls, sauerkraut and mustard, for serving

Steps:

  • Preheat a grill to medium high. Tear off a 20-inch-long piece of heavy-duty foil. Put the onion, garlic and bay leaf on the foil, piling them on one side; season with 1/4 teaspoon salt and a few grinds of pepper. Dot with the butter and place the bratwurst on top. Fold the foil over the onions and bratwurst, then fold in the edges on two sides to seal, leaving one side open. Carefully pour the beer into the open side, then fold in the edge to seal.
  • Place the foil packet on the grill onion-side down; cook 10 minutes, then carefully flip and continue grilling until the onion is softened and the bratwurst is warmed through, 10 more minutes. Meanwhile, grill the rolls until toasted.
  • Carefully open the packet. Remove the bratwurst and grill, turning, until lightly charred all over, 3 to 5 minutes. Return to the packet to toss with the onion. Serve with the rolls, sauerkraut and mustard.

¾ cup brown mustard seeds
¼ cup yellow mustard seeds
1 cup dark beer, or as needed
2 cloves garlic, minced
½ cup apple cider vinegar
2 tablespoons brown sugar
1 teaspoon salt
½ teaspoon ground black pepper
3 half pint canning jars with lids and rings

Steps:

  • Soak brown and yellow mustard seeds with dark beer in a large bowl set in the refrigerator for 24 hours. If the seeds soak up the beer too quickly, add more beer.
  • Transfer the soaked mustard seeds to a food processor along with garlic, apple cider vinegar, brown sugar, salt, and black pepper. Pulse until desired consistency is reached.
  • Sterilize the jars and lids in boiling water for at least 5 minutes.
  • Pack the mustard into the hot, sterilized jars, filling the jars to within 1/4 inch of the top.
  • Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles.
  • Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Refrigerate the jars of mustard for 2 weeks before using.

1 large onion, diced
10 bratwurst
2 teaspoons red pepper flakes
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat an outdoor grill for medium-high heat. When hot, lightly oil grate.
  • Combine the beer and onions in a large pot; bring to a boil. Submerge the bratwurst in the beer; add the red pepper flakes, garlic powder, salt, and pepper. Reduce heat to medium and cook another 10 to 12 minutes. Remove the bratwurst from the beer mixture; reduce heat to low, and continue cooking the onions.
  • Cook the bratwurst on the preheated grill, turning once, 5 to 10 minutes. Serve with the beer mixture as a topping or side.

10 bratwursts
2 (12 ounce) cans beer
1 large onion, chopped
10 bratwurst buns

Steps:

  • Put 2 beers in a pot.
  • Throw in a chopped onion and the brats. If you need more liquid to cover the brats, add water.
  • Bring the beer to a simmer (Don't let it boil - ever! When steam begins to rise from the top of the liquid, it's just right. Boiling will cause the brats to burst).
  • Simmer the brats for 20 minutes.
  • Throw out the beer/onion mixture.
  • Place brats on the grill 7-9 inches above the coals.
  • Use tongs to turn the brats often until golden brown on all sides, about 10-15 minutes if you have pre-simmered them.
  • Cover grill between turns.

I make these on my outdoor BBQ, they are very good and the beer/mustard sauce makes these brats special! The complete recipe may be doubled if desired. Cooking time is for grilling time. Fully-cooked brats only for this recipe to keep cooking time to a minimum, uncooked will need a longer cooking time.

6 fully cooked bratwursts
1/2 cup beer
1/4 cup brown sugar, packed
1/4 cup spicy brown mustard
1/8 teaspoon black pepper (or use cayenne)
6 large hot dog buns, split (use a small soft sub bun for this or large hot dog buns)
1/2 cup soft butter
1 teaspoon garlic powder
1/4 teaspoon salt
pickle relish
chopped onion
ketchup
mustard

Steps:

  • Cut 4 (1/4-inch deep) slices in each bratwurst (the slits will allow them to soak up the sauce as it cooks and also gives them a nicer appearance).
  • In a saucepan combine beer, brown sugar, mustard and black pepper; cook over medium heat until the mixture comes to a boil.
  • Add in bratwurst, then reduce heat to low; cook for 5 minutes.
  • Remove from the beer mixture (RESERVE the beer mixture).
  • Place the brats on the grill; brush generously with the remaining beer/mustard mixture until the brats are browned (about 5-6 minutes).
  • Mix softened butter with garlic powder and salt then spread onto each side of the bun; place on the grill and toast until lightly browned.
  • Place 1 brat onto each bun and top with one or all of the condiments.
  • Delicious!
