Number Of Ingredients 11

1/2 cup ketchup
1/2 cup quick-cooking oats
1/4 cup chopped green pepper
1 egg
1 teaspoon dried parsley flakes
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
1/2 teaspoon dried basil
1/4 teaspoon pepper
2 pounds lean ground beef
Additional ketchup, optional

Steps:

  • In a large bowl, combine the first nine ingredients. Crumble beef over mixture and mix well. Shape into two loaves. Place a sheet of heavy-duty foil in center of grill. Place meat loaves on foil (do not seal foil)., Prepare grill for indirect heat; grill meat, covered, over indirect medium heat for 50 minutes or until meat is no longer pink and a thermometer reads 160°. Brush tops with additional ketchup if desired. Let stand for 10 minutes before slicing.

Number Of Ingredients 13

2 cups sliced fresh mushrooms
1 medium onion, thinly sliced
1 tablespoon butter
1 large egg, lightly beaten
1/3 cup whole milk
1/2 cup old-fashioned oats
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds ground beef
SAUCE:
1/2 cup ketchup
2 tablespoons brown sugar
2 teaspoons prepared mustard

Steps:

  • In a large skillet, saute mushrooms and onion in butter until tender; set aside., In a large bowl, combine the egg, milk, oats, salt and pepper. Crumble beef over mixture and mix well. On a large piece of heavy-duty foil, pat beef mixture into a 12x8-in. rectangle; spoon mushroom mixture to within 1 in. of edges. Roll up jelly-roll style, starting with a short side and peeling foil away while rolling. Seal seam and ends. Discard foil., Prepare grill for indirect heat, using a drip pan. Form a double thickness of heavy-duty foil (about 14 in. square); cut three slits in foil. Place meat loaf on foil; place on the grill rack over drip pan., Grill, covered, over indirect medium heat for 35 minutes. Combine sauce ingredients; brush over loaf. Grill, covered, 15-20 minutes longer or until meat is no longer pink and a thermometer reads 160°. Let stand for 15 minutes before slicing.

How to make Cast Iron Pan Grilled Meat Loaf

Number Of Ingredients 19

I tried something new; cooking a meatloaf in a cast iron pan
on my gas grill. Couple of tips; preheat the grill to 400F then
cook the meatloaf over indirect heat. Invest in an instant read
thermometer to gauge when the meatloaf is cooked and that
would be 160F in the thickest part of the meat. A great way to
have that favoritete meatloaf even on the hottest of summer days.
Serves 6
1 medium Yukon Gold potato, scrubbed
1 medium zucchini, ends trimmed
1 pound ground chuck
1 small onion, minced
1 clove garlic minced
1 egg
1 tablespoon Filippo Berio olive oil
2 tablespoons minced fresh parsley
1/3 cup grated Pecorino, Parmesan or cheddar cheese
1 teaspoon salt or more to your liking
¼ teaspoon coarse ground pepper
1/3 cup ketchup

Steps:

  • Preheat the grill to 400F
  • Microwave the potato until cooked; cool , peel and chop into small pieces.
  • Grate the zucchini on a cheese grater
  • Place the meat in a bowl and add the potato, zucchini, onion, garlic, egg, olive oil, parsley, salt cheese and pepper. Mix to just combine the ingredients.
  • Lightly oil 10 ½ inch cast iron pan. With your hands form the meat loaf into an 7 x 4 x1 inch thick rectangle and place it in the center of the cast iron pan.
  • Place the pan in the center of the grill; close the lid and cook until an internal temperature of 160F is reached. 5 minutes before meat is cooked, brush the top with the ketchup.
  • Remove the pan from the grill using oven mitts. Cover the pan loosely with aluminum foil and allow the meatloaf to rest for 10 minutes. Slice into thick slices to serve!
  • The meatloaf can also be baked in a loaf pan in the oven; it will take about 45 minutes to an hour or until an instant read thermometer registers an internal temperature of 160F.
