5 large garlic cloves
1 teaspoon salt
1/4 cup dry red wine
1/4 cup balsamic vinegar
1 tablespoon soy sauce
1 teaspoon honey
1 1/2 pounds top-round London broil

Steps:

  • Mince the garlic to a paste with salt and in a blender blend with the salt, red wine, balsamic vinegar, soy sauce and honey.
  • In a heavy-duty sealable plastic bag, combine London broil with marinade. Seal bag, pressing out excess air, and put in a shallow baking dish. Marinate steak, chilled, turning occasionally, at least 4 hours and up to 24.
  • Bring steak to room temperature before grilling. Remove steak from marinade, letting excess drip off, and grill on an oiled rack set 5 to 6 inches over glowing coals, 7 to 9 minutes on each side for medium-rare. Transfer steak to a cutting board and let stand 10 minutes.
  • Holding a knife at a 45-degree angle, cut steak across grain into thin slices and serve with tomatoes.

1 teaspoon dried basil, crumbled

2/3 cup olive oil
a 2-to-2 1/2 pound London broil

Steps:

  • Make marinade:
  • In a bowl whisk together marinade ingredients until combined well.
  • Put London broil in a large resealable plastic bag and pour marinade over it. Seal bag, pressing out excess air, and set in a shallow dish. Marinate meat, chilled, turning bag once or twice, overnight.
  • Grill meat, marinade discarded, on an oiled rack set about 4 inches over glowing coals, turning each once, 9 to 10 minutes on each side, or until it registers 135°F. to 140°F., on a meat thermometer for medium-rare meat. (Alternatively, meat may be broiled.) Transfer meat to a cutting board and let stand 10 minutes. Cut meat diagonally across the grain into thin slices.

2 medium shallots, minced
1 tablespoon dried thyme leaves
3 tablespoons (packed) dark brown sugar
1/4 cup soy sauce
3 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar
1/3 cup vegetable oil
1 1/2 pounds London broil (top round)
1/4 cup water
2 tablespoons butter

Steps:

  • Combine the shallots, thyme, brown sugar, soy sauce, Worcestershire sauce, vinegar, and oil in a freezer-type zip-top plastic bag. Add the steaks. Squeeze out as much air as possible and seal the bag. Place the bag in a medium bowl in the refrigerator to marinate overnight, turning bag several times for even coating.
  • Heat a grill.
  • Drain the steaks, reserving the marinade. There will not be much. Pour the marinade into a small saucepan. Rinse the bag with 1/4 cup water and add to marinade. Simmer 4 to 5 minutes and stir in the butter.
  • Grill steaks to medium-rare, about 2 minutes each side.
  • Let stand 4 to 5 minutes before slicing. Thinly slice at an angle across the grain, which runs up and down the short side of the steak. Bring the marinade-butter mixture back to a boil, pour over the meat, and serve immediately.

3 small red onions (3/4 lb total)

Steps:

  • Marinate steak and prepare onions:
  • Stir together garlic, 3 tablespoons vinegar, 1 1/2 tablespoons oil, 1 1/2 teaspoons salt, and 1/2 teaspoon black pepper and pour into a 1-quart sealable plastic bag.
  • Add steak to marinade, turning to coat, and marinate, chilled, turning bag occasionally, at least 4 hours.
  • Bring to room temperature, then remove steak from marinade and discard marinade.
  • Trim root ends of onions slightly, leaving them intact, then halve lengthwise and cut halves lengthwise into 3/4-inch-thick wedges. Insert 1 wooden pick horizontally through each wedge (to keep it intact while grilling). Whisk together remaining tablespoon vinegar and 1 1/2 tablespoons oil and salt and pepper to taste in a bowl and add onions, tossing gently to coat.
  • To cook steak using a charcoal grill:
  • Open vents on bottom of grill. Light a large chimney starter of charcoal (80 to 100 briquettes) and pour lit charcoal onto bottom rack, leaving about one quarter of bottom rack free of charcoal and banking remaining coals across rest of bottom rack so that coals are about 3 times higher on opposite side. Charcoal fire is medium-hot when you can hold your hand 5 inches above thickest layer of coals for 3 to 4 seconds. 3Sear steak on lightly oiled grill rack over thickest layer of coals, uncovered, 1 minute on each side, then move steak to area over fewer coals and grill, uncovered, turning occasionally and moving to coolest area of grill if browning too quickly, until thermometer inserted horizontally 2 inches into meat registers 120°F, 10 to 12 minutes. Transfer to a plate and let stand 10 minutes (steak will continue to cook, reaching medium-rare).
  • To cook steak using a gas grill:
  • Preheat all burners on high, covered, 10 minutes.
  • Sear steak on lightly oiled grill rack, uncovered, 1 minute on each side, then reduce heat to moderate. Grill steak, covered, turning occasionally, until thermometer inserted horizontally 2 inches into meat registers 120°F, 10 to 12 minutes. Transfer to a plate and let stand 10 minutes (steak will continue to cook, reaching medium-rare).
  • To grill onions by either method:
  • While steak is standing, grill onions (covered only if using a gas grill) over moderate heat, turning over once, until tender, about 6 minutes.
  • Serve onions with steak; cut steak crosswise into thin slices, holding knife at a 45-degree angle.

2 tablespoons chili powder
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
One 2- to 3-pound London broil
Olive oil, for drizzling
2 pints cherry tomatoes, halved
1/2 cup fresh Italian parsley leaves, gently chopped
2 fennel bulbs, sliced thin on a mandoline, fronds chopped
1 clove garlic, grated on a rasp grater
2 tablespoons agave nectar
2 tablespoons red wine vinegar
2 tablespoons olive oil
Kosher salt and freshly ground black pepper

Steps:

  • For the steak: In a small bowl, mix together the chili powder, salt and pepper. Sprinkle it all over the London broil and rub. Wrap tightly with plastic wrap and rest for 2 hours.
  • For the salad: In a large bowl, add the tomatoes, parsley, fennel bulb and fronds and garlic. In a small bowl, whisk together the agave nectar, red wine vinegar, olive oil, a pinch of salt and a few grinds of black pepper. Pour this mixture over the vegetables and toss. Rest at room temperature, tossing halfway through, for about 2 hours.
  • Preheat a grill to high heat and leave one side of the grill off for indirect heat. Unwrap the steak and drizzle it with olive oil. Place the steak over the direct heat of the grill and cook for 5 to 6 minutes. Flip the steak, moving it to the indirect heat side, close the grill and cook until the internal temperature registers 130 degrees F for medium rare. Remove from the grill, cover gently with aluminum foil and rest for 10 minutes.
  • Slice the meat against the grain, top with the tomato salad and serve.

1/4 cup olive oil
1 pound wild mushroom blend, roughly chopped
Kosher salt and freshly ground black pepper
6 cloves garlic, grated on a rasp
4 inches fresh ginger, grated on a rasp
2 tablespoons red chile flakes
2 teaspoons fish sauce
Zest of 1 lemon plus 2 tablespoons lemon juice
One 2-pound London broil
Kosher salt and freshly ground black pepper
4 portobello mushroom caps, gills scraped out with a spoon
1 stick salted butter
Zest and juice of 1 lemon
1/4 cup chopped fresh cilantro
Olive oil, for drizzling

Steps:

  • For the flavor base: Add 2 tablespoons oil and the chopped mushrooms to a large pan with straight sides over medium heat. Cook, stirring, until the mushrooms deepen in color and reduce, releasing most of their moisture, 10 to 12 minutes. Remove from the pan with a slotted spoon to a paper towel-lined plate, then season with salt and pepper. Lower the heat to medium-low and add the remaining 2 tablespoons oil along with the garlic, ginger and red chile flakes. Cook, moving around the pan, until a waft of aroma from the pan smells like red chile flakes. Remove from the heat and add the fish sauce, lemon zest and juice, a pinch of salt and several grinds of black pepper. Let cool completely.
  • For the London broil: Sprinkle the meat with salt and pepper. Rub half of the flavor base all over the meat. Wrap tightly in plastic wrap and refrigerate 4 hours; refrigerate the remaining flavor base.
  • Bring the meat to room temperature 2 hours before grilling. Add the remaining flavor base and the mushroom caps to a small food processor. Pulse until pulverized, then add the butter and lemon zest. Pulse again to combine, then add the cilantro and pulse again. Transfer to a small saucepan.
  • Preheat a grill for direct and indirect cooking on medium-high heat. Remove the wrapping from the meat and place the saucepan on the direct-heat portion of the grill to heat. Drizzle the mushrooms with olive oil and sprinkle with salt and pepper. Place the mushrooms and the meat over the direct heat of the grill and sear both for about 6 minutes, then flip. Continue to cook the steak about another 6 minutes for medium-rare; meanwhile, move the mushrooms to the indirect side of the grill to finish cooking. Remove the mushrooms and sauce when the steak comes off the grill.
  • Rest the meat for about 5 minutes, then slice 1/4- to 1/2-inch thick. Cut the caps into quarters and toss in a bowl with a bit of the melted compound butter and another squeeze of lemon juice. Serve warm with compound butter alongside.

1/2 c balsamic vinegar
1/4 c water
1/4 c soy sauce
1 1/2 tsp brown sugar
1/2 tsp dried thyme
1/4 tsp fresh cracked pepper

  • 1. Place London Broil in a glass dish. Pierce with fork (both sides). Rub both sides with olive oil.
  • 2. Combine remaining ingredients in a bowl. Pour over London Broil. Cover and refrigerate 6 or more hours. Turning every 1-2 hours. Let sit at room temperature 30 minutes before grilling.
  • 3. While it is resting bring the extra marinade to a boil for 2 minutes. While grilling baste the meat with the marinade. *(see personal notes for extra marinade ideas)
  • 4. Grill (Charcoal) over medium heat for 7 to 9 minutes per side. Grill until the internal temperature reads at least 145 degrees Fahrenheit. Let the meat rest for about 10 minutes before slicing

I love this because I am a huge fan of grilled steak and kind of made this up as I went along. Serve with seasoned potato wedges, a simple salad and a green veggie. Don't forget the garlic bread as well. YUM!

1 -1 1/2 lb top sirloin steak (London Broil)
1 teaspoon hot sauce (I prefer Tabasco)
2 heads garlic, minced fine (save six little cloves)
1/2 cup red wine vinegar
1 small Spanish onion, chopped fine
2 sprigs green onions, sliced on the bias finely
1 (12 ounce) bottle A.1. Original Sauce
1 teaspoon pepper
1/2 teaspoon salt

Steps:

  • Get the freshest, leanest piece of top sirloin you can find (Black Angus is most recommended). Make sure it is deep red in color.
  • Place your sirloin in a deep rectangular pan.
  • LIGHTLY score the meat with a very sharp knife on both sides to make sure marinade gets into meat.
  • Start by sprinkling both sides of meat with the salt and pepper.
  • Stuff a few cloves garlic all over meat by cutting little slits.
  • Pour in red wine vinegar, A1 sauce, Tabasco sauce; add the chopped spanish onions. (Reserve the green onions for later as a garnish).
  • Stir and flip the meat to coat evenly on both sides.
  • Cover pan with foil or plastic and let sit in refrigerator for at least three hours.
  • Preheat charcoal or gas grill for 20 minutes on high setting.
  • Place your marinated steak on the hot grill and place a small weight on top.
  • Grill for about 1 1/2 minutes, then flip it over and do the same for the other side.
  • Reduce heat on grill to a low medium setting, and turn every minute or so, taking care to grill so that you get charcoaled score lines in a criss-cross pattern on the steak.
  • Do NOT over cook!
  • The steak should be pink inside-not brown!

Steps:

  • Needle the London broil with a fork, stabbing it all over. Make a wet rub by mixing the oil, Worcestershire, soy sauce, and Creole Seasoning together. Give the steak a good rubdown. For best results, do this step in the morning for cooking at night, but you can get by with just 4 hours of marinating if you have to.
  • Make up a batch of sauce. Heat the oil in a saucepan. Fry up the peppers and onions til soft, seasoning them with a pinch of salt and pepper. Throw in the garlic and cook another minute to soften it up a bit. Blend in the remaining 1 teaspoon pepper, the Mutha Sauce, Worcestershire, horseradish, cumin, and molasses. Warm the sauce up just before serving.
  • Build a medium coal bed in the grill, or set the gas dial to medium. Dry off the steak and throw it on the grill. Turn it over every once in a while til it's a beautiful medium-rare (130° to 135°-see page 34), 20 to 25 minutes.
  • Slice the steak thin across the grain, saving all those tasty beef juices to stir into the warmed-up sauce. Spoon the sauce over the sliced meat and it's ready to serve.

2/3 cups extra virgin olive oil
1/2 cup chopped red onion
1/4 cup balsamic vinegar
2 tablespoons worchestershire sauce
1 tablespoon dijon mustard
1 tablespoon brown sugar
3 garlic cloves minced
2 tablespoons fresh or 1 1/2 tablespoons dried rosemary chopped
3/4 teaspoon ground pepper
1/2 teaspoon salt
1 London broil/top round about 2 1/4 pounds

Steps:

  • Stir all marinade ingredients together until blended. Pour into a large ziplock bag add meat turn to coat, seal bag. Refrigerate for 3 to 4 hours, turning occasionally. Remove bag from refrigerator and allow meat to reach room temperature in the marinade. For medium rare, grill the steak over moderate to high direct heat for 6 to 8 minutes per side, allow steak to rest for 10 minutes before cutting.

1 1/2 lbs top-round london broil beef (about 1 1/4 inches thick)
5 cloves garlic
1 teaspoon salt
1/4 cup dry red wine
1/4 cup balsamic vinegar
1 tablespoon soy sauce
1 teaspoon honey

Steps:

  • Make marinade: Mince and mash garlic to a paste with salt and in a blender blend with remaining marinade ingredients.
  • In a heavy-duty sealable plastic bag combine London broil with marinade.
  • Seal bag, pressing out excess air, and put in a shallow baking dish.
  • Marinate steak, chilled, turning occasionally, at least 4 hours and up to 24.
  • Prepare grill.
  • Bring steak to room temperature (which should take about 1 hour) before grilling.
  • Remove steak from marinade, letting excess drip off, and grill on an oiled rack set 5 to 6 inches over glowing coals 7 to 9 minutes on each side for medium-rare.
  • Transfer steak to a cutting board and let stand 10 minutes.
  • Holding a knife at 45 degrees angle, cut steak across grain into thin slices and serve with tomatoes.

This is a very easy recipe and anyone can make it to prefection. Just follow these simple instructions. I think a lot of people forget London Broil is an option for larger familys. Full of flavor and doesn't break the bank. We have it a couple times a month. My family just loves it.

2 lb london broil 1 1/4 inch thick cut
MARINADE
italian salad dressing
1 med. onion chopped in lg. pieces
2 tsp garlic salt, (california blend w/ parsley)
1 Tbsp black pepper
1 Tbsp chile powder

Steps:

  • 1. rinse meat under cold water and place in plastic ziploc bag.
  • 2. Put salad dressing, onion, and spices in bag with meat and seal the bag. Toss back and forth to mix ingredients. Place in fridge for at least one hour. (I like to leave mine overnight or 24 hours for fuller flavor)
  • 3. Heat grill to about 350 to 400 deg. Cooking serface should be 6 to 8 inches from heat sorce. Remove meat from bag and place on grill, close lid. Let grill 5 min. Turn meat 1/4 turn, leave for 5 more min. Turn meat over, grill 5 min. turn 1/4 turn grill 5 more min. Remove from grill and place on plate. Cover plate with foil and let stand 5 min. London broil should be pink in middle by placeing on plate and covering with foil, the jucies that run out will return to meat and finish heating center of meat.
  • 4. Slice on an angle and serve.

Cooked through until completely brown, these steaks toughen and dry up. Warning to well-done steak lovers: You might want to buy a different hunk of beef.

4 tablespoons minced chipotle in adobo sauce
2 tablespoons honey
6 garlic cloves, finely chopped
4 tablespoons extra-virgin olive oil
1 London broil, top round or flank steak 2 1/2 pounds, about 1-inch thick
2 teaspoons kosher salt
Chopped cilantro
Lime wedges

Steps:

  • In a bowl, whisk together the chipotle, honey and garlic. Whisk in the oil.
  • Season the steak all over with the salt. Pat the meat evenly with the chipotle mixture and let rest for at least an hour at room temperature, or as long as overnight in the refrigerator. If you've chilled it, let the steak come to room temperature before grilling.
  • Light the charcoal or preheat the grill. Brush off any bits of garlic or chile from the meat and grill, covered, until the meat is charred on the outside and done to taste inside, 4 to 5 minutes per side for medium-rare. Let the meat rest 5 minutes before thinly slicing. Sprinkle with cilantro and serve with lime wedges.

  • 2. Cook on a hot grill to your degree of doneness.
